Tips for success
For the cleanest slices, use a warm, sharp serrated knife. Dip the knife in hot water and wipe it dry between each cut to ensure the cream cheese swirl does not smear. This technique is particularly useful if you have frosted the top of the cake, as it helps create professional-looking slices without dragging the frosting or crumbs across the surface of the cake.
If you prefer a more intense red color, you can add a small amount of red food coloring to the batter before folding in the cocoa. However, the natural reaction between the cocoa and buttermilk will provide a deep, authentic crimson hue.
Always store the cake in an airtight container to maintain its moisture, as the buttermilk base is sensitive to air and can dry out if left uncovered.
Variations
- Chocolate Chip Swirl: Fold 1/2 cup of mini semi-sweet chocolate chips into the red velvet batter before pouring it into the loaf pan for an extra burst of cocoa flavor.
- Walnut Crunch: Add 1/3 cup of finely chopped toasted walnuts to the top of the frosting for a satisfying crunch that contrasts with the soft crumb.
Storage and make-ahead
- Fridge
- Keep refrigerated in an airtight container for up to 5 days.
- Freezer
- Wrap the unfrosted loaf tightly in plastic wrap and foil; freeze for up to 1 month. Thaw in the refrigerator before frosting and serving.
- Reheat
- Bring to room temperature before serving. Avoid reheating in the microwave to prevent the cream cheese swirl from melting.
Store the loaf cake in an airtight container at room temperature for up to two days, or in the refrigerator for up to five days.
Because the cake contains a cream cheese filling and frosting, it is best kept refrigerated to maintain the integrity of the dairy components. Ensure the container is sealed tightly to prevent the cake from absorbing other odors from the refrigerator.
This cake is excellent when made a day in advance, as the flavors have time to meld and the crumb becomes even more moist. Simply bake and cool the cake as directed, then wrap it tightly in plastic wrap before frosting. Keep it in a cool place or the refrigerator. Apply the frosting just before you are ready to serve to ensure the best texture and appearance.
Serving ideas
Serve this loaf at room temperature for the best flavor and texture. If the cake has been refrigerated, take it out about 30 minutes before serving to allow the butter in the cake to soften slightly, which enhances the velvety mouthfeel.
It pairs beautifully with a hot cup of coffee, black tea, or a glass of cold milk, making it a versatile dessert for any time of day.
For a more elegant presentation, serve each slice on a small dessert plate with a side of fresh berries, such as raspberries or strawberries. The tartness of the berries complements the tangy cream cheese swirl perfectly.
You can also lightly dust the top of the frosted cake with a pinch of cocoa powder or finely crushed red velvet cake crumbs for an extra touch of visual flair.

Moist Red Velvet Cream Cheese Swirl Loaf Cake

Ingredients
- 120 g unsalted butter, softened
- 1 batch buttermilk cocoa red velvet batter
- 2 large eggs
- 250 g sweetened cream cheese
- 1 large egg yolk
- 1/2 cup vanilla cream cheese frosting
Instructions
- Using an electric mixer, whisk the softened butter with the buttermilk cocoa red velvet batter mixture. Incorporate the two large eggs one at a time until the batter is smooth and well-combined. In a separate small bowl, beat the sweetened cream cheese with the egg yolk until completely smooth and creamy to create the filling.
- Pour about half of the red velvet batter into a buttered loaf pan. Spoon the sweetened cream cheese mixture over the center, then top with the remaining red velvet batter. Use a knife or skewer to gently swirl the mixtures together for a marbled effect. Bake in a preheated oven at 350°F (175°C) for 50 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the loaf from the oven and let it cool completely in the pan on a wire rack for at least 20 minutes. Carefully remove the cake from the pan. Spread the thick vanilla cream cheese frosting evenly over the top of the cooled loaf. Slice into thick portions and serve immediately.
