Tips for success
Shred the mozzarella from a block for the smoothest melt; pre-shredded bags carry anti-caking starch that can make the top slightly chalky. If time is short, the bagged kind still bakes well, just watch for browning a few minutes earlier.
Reserve a cup of pasta water before draining, even though the recipe needs only half a cup; a splash revives the sauce if it tightens while the pasta sits.
For the cleanest slices, use a sharp knife in one downward press rather than a sawing motion, and wipe the blade between cuts. A thin metal spatula lifted at a slight angle produces the long cheese pull.
Warm plates keep the pasta from stiffening at the table, and a final minute under the broiler adds extra blistered spots for anyone who loves the browned top most.
Variations
- Sausage version: Replace the ground beef with bulk Italian sausage, browning it the same way. The fennel and spice deepen the sauce, and the creamy layer balances the heat. Cook the sausage through to 160°F before the marinara goes in.
- Spicy arrabbiata: Stir a teaspoon of crushed red pepper flakes into the sauce with the Italian seasoning and finish the baked dish with a pinch of chili over the cheese for anyone who wants extra fire.
- Vegetable-loaded: Soften a diced zucchini and a cup of chopped mushrooms with the onion, then build the recipe as written. The vegetables shrink into the sauce and add body without changing the layering or the bake time.
- Three-cheese top: Combine the mozzarella with a half cup each of shredded provolone and grated Parmesan for the top layer. The mix browns faster, so start checking for doneness five minutes early.
Storage and make-ahead
- Fridge
- Cover and refrigerate within 2 hours; keeps 4 days. Reheat squares covered at 350°F until hot.
- Freezer
- Freeze baked squares or the whole unbaked dish, wrapped well, up to 2 months. Thaw overnight in the refrigerator before reheating or baking.
- Reheat
- Cover with foil and bake at 350°F for 15 to 20 minutes, or microwave a single square 90 seconds. Uncover for the last minutes to re-crisp the top.
Cool the dish at room temperature no longer than 2 hours, then cover leftovers tightly and refrigerate for up to 4 days. Cut squares stack well in airtight containers with a small square of parchment between pieces so they separate cleanly.
Assemble the entire dish through the cheese layer, wrap it well, and refrigerate up to 24 hours before baking. Add 10 to 15 minutes to the bake time since it starts cold, and keep it covered with foil for the first half if the cheese browns too quickly.
Serving ideas
Cut the rested bake into eight generous squares, or twelve smaller ones for a crowd with sides. A wide metal spatula lifts each piece intact and sets up the stretchy cheese pull that makes the dish so fun at the table.
Serve it straight from the baking dish for a casual family dinner, or transfer the squares to warm plates if guests are watching.
Simple sides keep the plate balanced without competing: a crisp green salad with a sharp vinaigrette, garlic bread for the sauce left on the plate, or blistered green beans.
A sprinkle of chopped parsley or extra grated Parmesan at the table adds a fresh note. Pour something red and easygoing, and let the pan do the entertaining.

Million Dollar Cheesy Beef Spaghetti (One-Pan Baked)

Ingredients
- 1 lb spaghetti
- 1 lb ground beef
- 1 yellow onion, finely diced
- 3 garlic cloves, minced
- 24 oz jarred marinara sauce
- 2 tbsp tomato paste
- 2 tsp Italian seasoning
- 1 tsp kosher salt, plus more for the pasta water
- 1/2 tsp black pepper
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1/2 cup grated Parmesan
- 2 tbsp butter
- 3 cups shredded mozzarella
Instructions
- Bring a large pot of well-salted water to a rolling boil and add the spaghetti. Cook one minute less than the package directions so the strands stay firm, then scoop out about a cup of pasta water before draining. Toss the drained spaghetti with the butter so the strands do not stick.
- Heat the skillet over medium-high and add the ground beef with the diced onion. Break the meat into small crumbles and cook until no pink remains, 6 to 8 minutes, until the beef reaches 160°F (71°C) internally. Tip in the garlic and cook one minute more.
- Stir the tomato paste into the beef and let it darken for a minute, then pour in the marinara. Add the Italian seasoning, salt, pepper, and half a cup of the reserved pasta water. Simmer gently 8 to 10 minutes until slightly thickened, then taste and adjust the salt.
- While the sauce simmers, stir the softened cream cheese, sour cream, and grated Parmesan together in a mixing bowl until completely smooth. Work the mixture until no streaks remain and it spreads like thick frosting. If the cream cheese resists, let it sit a few minutes longer at room temperature.
- Preheat the oven to 375°F (190°C) and butter the baking dish. Spread half of the cooked spaghetti evenly across the bottom, then ladle about a third of the meat sauce over it. Keep the layer thin and even so the slices later hold their shape instead of sliding apart.
- Drop spoonfuls of the creamy mixture over the first pasta layer and spread it gently to the edges with a spatula or the back of a spoon. Work from the center outward so the cream settles between the strands, keeping the layer even so every serving gets some.
- Add the remaining spaghetti in an even layer, then spoon the rest of the meat sauce over the top and spread it edge to edge. Shower the whole dish with the shredded mozzarella, covering the sauce completely. Give the dish a gentle shake to settle the layers before it goes into the oven.
- Bake the dish uncovered on the center rack for 25 to 30 minutes, until the cheese is melted and golden in spots and the sauce bubbles visibly at the edges. If the top colors too fast, lay a sheet of foil loosely over the dish for the final minutes.
- Set the dish on a rack and let it rest for 10 minutes so the layers set and slice cleanly. Cut into squares with a sharp knife or scoop generous portions with a metal spatula, letting the cheese stretch as you lift. Plate and serve while the cheese is still pulling.
