Tips for success
To get the best char on the chicken, make sure the skillet is truly smoking before adding the meat. Do not move the chicken for the first few minutes to allow a crust to form.
If the glaze starts to stick and burn, add a splash of water or soy sauce to deglaze the pan and scrape up the browned bits.
For an even more dramatic cheese pull, use a low-moisture mozzarella and shred it yourself.
Serve the dish immediately from the skillet, as the cheese will stiffen as it cools. If you like extra heat, sprinkle a few more gochugaru flakes over the top before serving.
Variations
- Less spicy version: Reduce gochugaru to 1 tablespoon and replace 1 tablespoon of gochujang with 1 tablespoon of tomato paste. The sauce will be milder but still savory and glossy.
- Add vegetables: Stir in sliced bell peppers, onions, or zucchini with the chicken during the last 2 minutes of cooking. They will soften and pick up the spicy glaze.
- Rice cake version: Add 1 cup of soaked Korean rice cakes (tteok) to the skillet with the chicken. They absorb the sauce and become chewy and addictive.
- Baked version: After searing the chicken, transfer to a baking dish, top with cheese, and bake at 400°F (200°C) for 10 minutes, then broil for 1–2 minutes until bubbly.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of water to loosen the sauce.
- Freezer
- Freeze cooked chicken (without cheese) in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat, covered, for 5–7 minutes, or until hot and bubbly. For a crispy top, finish under the broiler for 1–2 minutes.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through, adding a splash of water if the sauce has thickened too much.
The sauce can be made up to 2 days ahead and stored in the refrigerator. Cut the chicken and toss with the sauce up to 8 hours ahead, keeping it chilled. Cook and add the cheese just before serving for the best texture.
Serving ideas
Serve the Korean Cheesy Fire Chicken directly from the skillet, family-style, with steamed rice and a side of pickled radish or kimchi to balance the heat.
The cheese pull is the star, so bring the skillet to the table and let everyone dig in with chopsticks or forks.
For a complete meal, pair with a simple cucumber salad or a bowl of cold noodles. The cool, refreshing sides help soothe the spice and round out the rich, cheesy chicken.
This dish is also excellent as a filling for lettuce wraps, with a spoonful of rice and a piece of chicken wrapped in crisp leaves.

Korean Cheesy Fire Chicken with Gochujang Glaze

Ingredients
- 1 1/4 lb boneless, skinless chicken thighs, cut into bite-size pieces
- 3 tbsp gochujang (Korean chili paste)
- 2 tbsp gochugaru (Korean chili flakes)
- 2 tbsp soy sauce
- 1 1/2 tbsp honey
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp toasted sesame oil
- 2 cups shredded mozzarella cheese
- 2 tbsp sliced scallions (optional, for garnish)
Instructions
- In a medium bowl, whisk together gochujang, gochugaru, soy sauce, honey, garlic, ginger, and sesame oil until the mixture is thick, deep red, and glossy. Add the chicken pieces and toss to coat evenly. Cover and refrigerate while preparing the skillet, or up to 30 minutes.
- Heat a large cast iron skillet over high heat until smoking. Add the chicken in a single layer, discarding any excess marinade. Cook without moving for 3 minutes, then stir-fry for 4 minutes more, until the edges are charred and the glaze caramelizes into a sticky coating.
- Reduce the heat to low. Sprinkle the shredded mozzarella evenly over the entire surface of the chicken. Cover the skillet with a lid or a baking sheet and let the cheese melt for 2 to 3 minutes, until completely melted and starting to bubble.
- Remove the lid. Using a kitchen torch, pass the flame over the melted cheese in quick, sweeping motions until the top is bubbly and charred in spots. Alternatively, broil for 1 to 2 minutes, watching closely to avoid burning.
- Sprinkle the sliced scallions over the top. Serve immediately, using chopsticks or a fork to pull the cheese into long, satisfying strands with each bite of chicken.
