Tips for success
For the best flavor, sear the chuck roast in a hot skillet with a little oil until browned on all sides before adding it to the slow cooker.
This adds a rich crust and deepens the overall taste. If you're short on time, skip the searing — the slow cooker will still produce a delicious meal.
When shredding the beef, use two forks to pull it apart into bite-sized pieces. Remove any large pieces of fat or gristle as you go. If you have leftovers, store them with the gravy to keep the meat moist. The flavors continue to develop overnight, making it even better the next day.
Variations
- Mushroom and Guinness: Add 8 oz sliced cremini mushrooms along with the onions. The mushrooms soak up the Guinness and add an earthy depth. Sauté them briefly before adding to the slow cooker for extra flavor.
- Spicy Stout Roast: Add 1-2 chopped chipotle peppers in adobo sauce and a teaspoon of smoked paprika to the gravy. The smoky heat balances the malty stout and adds a kick.
- Herb and Garlic: Add 4 cloves of smashed garlic and a few sprigs of fresh thyme or rosemary to the slow cooker. The herbs infuse the gravy with aromatic notes that complement the beef.
- Onion Soup Mix: Replace the brown gravy with 1 packet of onion soup mix and 2 cups of beef broth. This adds a savory, salty flavor and thickens the sauce as it cooks.

Serving ideas
Serve the shredded beef piled onto toasted brioche slider buns for a fun, handheld meal. The soft buns soak up the rich gravy, while the tender beef and sweet pearl onions are a perfect match. Add a side of crispy fries or a simple green salad to round out the meal.
For a more traditional presentation, serve the beef and gravy over mashed potatoes or egg noodles. The creamy starch soaks up the flavorful gravy, making every bite comforting.
Garnish with fresh parsley if desired, though the dish is delicious on its own. Extra gravy on the table is always welcome.

- 1 cup pearl onions, peeled
- 12 fl oz Guinness stout
- 2 cups rich brown gravy
- 4 tbsp unsalted butter
- 8 brioche slider buns, toasted
Instructions

- Once the roast is tender, remove it to a cutting board. Let it rest for at least 3 minutes. Then shred the beef with two forks, discarding any large fat pieces.
- Skim excess fat from the surface of the gravy in the slow cooker. Taste the gravy and adjust seasoning with salt and pepper if needed.
- Toast the brioche slider buns in a toaster or under the broiler until golden and crisp.
- Pile the shredded beef onto the bottom halves of the toasted buns. Spoon a generous amount of the Guinness onion gravy over the beef, then top with the other half of each bun.
