Tips for success
For the crispiest crust, roll the dough as thin as you can without tearing, about 1/4 inch thick. Thicker dough will be doughier and less crunchy.
Also, make sure the baking sheet is not overcrowded—leave at least an inch between pockets so the hot air circulates and crisps all sides evenly.
If you have leftover garlic butter, brush it on the pockets immediately after baking for an extra glossy, flavorful finish.
You can also add a pinch of flaky sea salt on top after baking for a nice contrast. These pockets are best eaten fresh, but you can reheat them in a 350°F oven for 5 minutes to restore crispness.
Variations
- Chicken Filling: Swap the ground beef for ground chicken or turkey. Cook until no longer pink and reaches 165°F. Add a little olive oil if the pan looks dry, and consider adding a pinch of oregano for extra flavor.
- Spicy Chorizo Version: Use fresh chorizo instead of ground beef. Omit the salt, as chorizo is already salty. Cook the chorizo with the onion and peppers, and skip the cumin and paprika to let the chorizo's spices shine.
- Veggie Pockets: Replace the beef with a mix of sautéed mushrooms, zucchini, and black beans. Season with the same spices, and add a little olive oil to help the vegetables brown. Ensure the filling is thick and not watery.
- Cheese Lover's: Add an extra 1/2 cup of shredded mozzarella to the filling, or mix in some crumbled feta or goat cheese for a tangy twist. Sprinkle extra cheese on top during the last 2 minutes of baking for a crispy cheese crust.
Storage and make-ahead
- Fridge
- Store baked pockets in an airtight container in the fridge for up to 4 days. Reheat in a 350°F oven for 5-8 minutes to crisp up.
- Freezer
- Freeze unbaked pockets on a baking sheet until solid, then transfer to a zip-top bag. Bake from frozen at 380°F for 22-25 minutes.
- Reheat
- Reheat baked pockets in a 350°F oven for 5-8 minutes. For frozen, bake directly from frozen at 380°F for 22-25 minutes.
Store leftover pockets in an airtight container in the refrigerator for up to 4 days. To reheat, place them on a baking sheet in a 350°F oven for 5-8 minutes, or until hot and crispy. Avoid microwaving, as it will make the crust soggy.
The beef filling can be made up to 3 days in advance and kept refrigerated. You can also assemble the pockets completely, place them on a baking sheet, and refrigerate for up to 24 hours before baking. Add 2-3 minutes to the baking time if baking straight from the fridge.
Serving ideas
Serve these beef pockets hot from the oven, with the cheese pulling in long strands. They are satisfying on their own, but you can add a side of marinara sauce for dipping or a simple green salad with a tangy vinaigrette to cut through the richness.
For a game-day spread, serve them alongside other finger foods like wings or sliders.
These pockets also work well for packed lunches—they hold up well at room temperature for a few hours, though they are best enjoyed warm.
If you have leftover garlic butter, drizzle it over the top just before serving for an extra hit of flavor. The pockets are hearty enough to be a full meal, but you can also cut them into smaller pieces for appetizers.

Golden Beef and Cheese Pockets with Garlic Butter

Ingredients
- 1 lb ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup diced bell pepper
- 1 serrano chili, minced
- 3 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 1/2 cups shredded mozzarella cheese
- 1 lb pizza dough, store-bought or homemade
- 3 tbsp unsalted butter, melted
- 2 tbsp chopped fresh parsley
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5 minutes. Add the diced onion, minced garlic, bell pepper, and serrano chili. Cook until the vegetables are soft, about 3 minutes. Stir in the tomato paste, cumin, smoked paprika, salt, and pepper. Cook for 2 more minutes until the mixture is thick and fragrant. Remove from heat and let cool slightly.
- Transfer the beef mixture to a bowl and let it cool for 10 minutes. This prevents the cheese from melting too quickly and makes the filling easier to handle.
- Preheat the oven to 380°F (190°C). On a lightly floured surface, roll out the pizza dough into a 12-inch circle. Cut the dough into 6 equal wedges or use a round cutter to make 6 circles.
- Spoon about 1/4 cup of the beef filling onto one half of each dough round. Top with a generous sprinkle of shredded mozzarella. Fold the other half over the filling and press the edges with a fork to seal tightly.
- In a small bowl, mix the melted butter with the chopped parsley. Brush the tops of the pockets generously with the garlic parsley butter.
- Place the pockets on a baking sheet lined with parchment paper. Bake for 18 minutes, until golden brown and puffed. For extra cheesy tops, sprinkle a little extra mozzarella on the pockets during the last 2 minutes of baking.
- Remove the pockets from the oven and let them rest on the baking sheet for 3 minutes. This allows the cheese to set slightly so it doesn't all ooze out when bitten. Serve warm, with extra garlic butter for brushing if desired.
