Before you start

Before starting, take the pizza dough out of the refrigerator and let it come to room temperature for about 20 minutes. This makes it easier to roll and shape. Preheat the oven to 380°F (190°C) and line a baking sheet with parchment paper.

Have all your ingredients prepped: dice the onion and bell pepper, mince the garlic and serrano, and measure out the spices. The beef should be at room temperature before cooking, but never leave it out for more than 30 minutes.

Ingredients at a glance (14)
  • 1 lb ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup diced bell pepper
  • 1 serrano chili, minced
  • 3 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 1/2 cups shredded mozzarella cheese
  • 1 lb pizza dough, store-bought or homemade
  • 3 tbsp unsalted butter, melted
  • 2 tbsp chopped fresh parsley
  • Salt, to taste
  • Black pepper, to taste

Instructions

Phase 1: Prepare the Filling

  1. Make the Spiced Beef Filling
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5 minutes. Add the diced onion, minced garlic, bell pepper, and serrano chili. Cook until the vegetables are soft, about 3 minutes. Stir in the tomato paste, cumin, smoked paprika, salt, and pepper. Cook for 2 more minutes until the mixture is thick and fragrant. Remove from heat and let cool slightly.
Look for The beef is browned and the mixture is thick with no excess liquid.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip For extra flavor, use a cast-iron skillet to get a good sear on the beef.
  2. Cool the Filling
Transfer the beef mixture to a bowl and let it cool for 10 minutes. This prevents the cheese from melting too quickly and makes the filling easier to handle.
Look for The filling is warm but not hot to the touch.
Tip If the filling is too hot, it can make the dough soggy.

The beef is browned and the vegetables are soft. The mixture is thick and fragrant, with the tomato paste and spices fully incorporated. The filling has been transferred to a bowl and is cooling slightly, so it's still warm but not piping hot. This makes it safe to handle and prevents the dough from becoming soggy.

Phase 2: Assemble and Bake

  1. Preheat the Oven and Prepare the Dough
Preheat the oven to 380°F (190°C). On a lightly floured surface, roll out the pizza dough into a 12-inch circle. Cut the dough into 6 equal wedges or use a round cutter to make 6 circles.
Look for The dough is even in thickness, about 1/4 inch.
Tip Keep the dough covered with a damp towel while working to prevent drying.
  2. Fill and Seal the Pockets
Spoon about 1/4 cup of the beef filling onto one half of each dough round. Top with a generous sprinkle of shredded mozzarella. Fold the other half over the filling and press the edges with a fork to seal tightly.
Look for The edges are sealed and no filling is leaking out.
Tip Moisten the edges with a little water if the dough is dry to help seal.
  3. Brush with Garlic Butter
In a small bowl, mix the melted butter with the chopped parsley. Brush the tops of the pockets generously with the garlic parsley butter.
Look for The tops are evenly coated with a glossy butter sheen.
Tip Reserve some butter to brush on after baking for extra shine.
  4. Bake the Pockets
Place the pockets on a baking sheet lined with parchment paper. Bake for 18 minutes, until golden brown and puffed. For extra cheesy tops, sprinkle a little extra mozzarella on the pockets during the last 2 minutes of baking.
Look for The pockets are deep golden brown and crisp to the touch.
Tip Rotate the baking sheet halfway through for even browning.

The dough is rolled and cut into rounds. Each round is filled with a portion of beef and a generous sprinkle of mozzarella, then folded and sealed.

The tops are brushed with garlic parsley butter, and the pockets are arranged on the baking sheet. They look neat and golden, with no filling visible. The oven is preheated and ready.

Phase 3: Finish and Serve

  1. Let Cool and Serve
Remove the pockets from the oven and let them rest on the baking sheet for 3 minutes. This allows the cheese to set slightly so it doesn't all ooze out when bitten. Serve warm, with extra garlic butter for brushing if desired.
Look for The pockets are crisp and the cheese is molten but not runny.
Tip Serve with a side of marinara for dipping, if you like.

The pockets come out of the oven deeply golden and puffed. The garlic butter gives them a glossy sheen, and the edges are crisp. After a 3-minute rest, they are warm enough to handle but still hot inside. The cheese is molten and stretches when torn, and the crust crackles with every bite.

Common mistakes

One common mistake is overfilling the pockets, which makes them difficult to seal and causes leaks during baking. Stick to about 1/4 cup of filling per pocket. Another is not sealing the edges well—use a fork to press firmly, and if the dough is dry, moisten the edges with water.

Skipping the cooling step for the filling can lead to soggy dough and melted cheese escaping. Finally, don't overbake; 18 minutes is usually perfect, but ovens vary, so check at 16 minutes.

How to tell it’s done

The pockets are done when they are deep golden brown and puffed, with a crisp exterior that crackles when tapped. The filling should be bubbling hot, and the cheese fully melted.

If you have an instant-read thermometer, insert it into the center of a pocket; the beef should read at least 160°F (71°C). Let them rest for 3 minutes before serving to allow the cheese to set slightly.

  • Ground meat: 160°F (71°C) in the thickest part
