Tips for success

For the best crust, use a baking stone or steel if you have one; it retains heat and helps create a crisp bottom. If using a regular baking sheet, preheat it in the oven before placing the rolls on it.

The steam is crucial—do not skip it. You can also brush the rolls with water halfway through baking to enhance crust development.

To achieve a more open crumb, handle the dough gently during shaping and avoid deflating it too much. The wetter the dough, the airier the result. If the dough is too sticky to handle, wet your hands slightly instead of adding more flour. This helps keep the dough light and airy.

Variations

  • Seeded Crust: After shaping, brush the rolls with water and sprinkle with sesame seeds, poppy seeds, or flaky sea salt before baking. The seeds add texture and flavor to the crust.
  • Herb and Garlic: Add 1 teaspoon of dried rosemary, thyme, or oregano to the dough along with the salt. For a garlic twist, mix in 1/2 teaspoon of garlic powder. These rolls pair well with Italian dishes.
  • Whole Wheat: Replace half of the bread flour with whole wheat flour. The rolls will be denser but still have a crackly crust. Increase the water by 2 tablespoons to compensate for the extra fiber.
  • Cheese-Stuffed: After dividing the dough, flatten each portion and place a small cube of cheese (such as cheddar or mozzarella) in the center. Fold the dough around the cheese and shape into a ball. The cheese melts inside, creating a gooey center.

Storage and make-ahead

Fridge
Store leftover rolls in a paper bag at room temperature for up to 2 days. For longer storage, freeze them in a zip-top bag for up to 3 months.
Freezer
Freeze the baked rolls in a zip-top bag for up to 3 months. Thaw at room temperature, then reheat in a 350°F (175°C) oven for 5-8 minutes to restore the crust.
Reheat
Reheat rolls in a 350°F (175°C) oven for 5-8 minutes until warm and crisp. For a softer crust, wrap in foil before reheating.

Store the rolls in a paper bag at room temperature for up to 2 days. The crust will soften over time; to re-crisp, place the rolls in a 350°F (175°C) oven for 5 minutes. Avoid storing in plastic, as it traps moisture and makes the crust chewy.

The dough can be prepared up to the shaping step, then covered and refrigerated overnight. The cold proof develops more flavor.

The next day, let the dough come to room temperature for about 30 minutes before shaping and baking. Alternatively, shape the rolls and freeze them before proofing; thaw and proof before baking.

Serving ideas

Serve these crusty rolls warm, straight from the oven, with butter and a sprinkle of sea salt. They are perfect alongside soups, stews, or salads.

The crackling crust and soft interior make them ideal for tearing and sharing at the table. For a heartier meal, use them for sandwiches filled with roasted vegetables, meats, or cheeses.

These rolls also shine as a side for pasta dishes, grilled meats, or as a base for bruschetta. For breakfast, split and toast them, then top with eggs or avocado.

The neutral flavor pairs well with both sweet and savory accompaniments. Leftover rolls can be turned into breadcrumbs or croutons.

Frequently asked questions

Why are the rolls not crackly after baking?
The crust may not have formed properly if the oven wasn't hot enough or if steam was insufficient. Ensure the oven is fully preheated to 425°F (220°C) and that you add steam immediately when the rolls go in. Also, avoid opening the oven door during the first 15 minutes of baking.
Can the dough be made ahead and refrigerated?
Yes, the dough can be prepared up to the shaping step, then covered and refrigerated overnight. The cold proof develops more flavor. Let the dough come to room temperature for about 30 minutes before shaping and baking, or shape and then proof in the refrigerator.
What is the best way to reheat leftover rolls?
To restore the crust, reheat the rolls in a 350°F (175°C) oven for 5-8 minutes. For a softer crust, wrap them in foil before reheating. Avoid using a microwave, as it makes the rolls tough and chewy.
Can these rolls be frozen?
Yes, baked rolls freeze well. Cool completely, then place in a zip-top bag and freeze for up to 3 months. Thaw at room temperature and reheat in the oven to crisp the crust.
Why is the dough so sticky?
A high-hydration dough is intentionally sticky to create a light, open crumb. Avoid adding too much flour, as that will make the rolls dense. Use a heavily floured board and wet hands when handling the dough.

Fresh Homemade Crusty Rolls with Shattering Crust

Fresh homemade crusty rolls with a deeply crackled, blistered crust, torn open to show a pillowy honeycomb crumb.

Ingredients

  • 2 cups warm water (450 ml)
  • 1 packet active dry yeast (10 g / 1 tbsp)
  • 1 tbsp granulated sugar
  • 4 1/2 cups bread flour (550 g)
  • 1 1/2 tsp fine sea salt
  • 1 tbsp olive oil
  • all-purpose flour, for dusting, to taste

Instructions

  1. In a large glass bowl, combine the warm water, active dry yeast, and granulated sugar. Whisk gently until the yeast and sugar dissolve. Let the mixture sit for 5 to 10 minutes until it becomes frothy and bubbly on top, indicating the yeast is active.
  2. Add the bread flour, fine sea salt, and olive oil to the yeast mixture. Stir with a wooden spatula until a shaggy, wet, sticky dough forms. Continue stirring for 1 to 2 minutes to ensure all the flour is hydrated and no dry patches remain.
  3. Cover the bowl tightly with plastic wrap. Let the dough proof at room temperature for 45 minutes, or until it has doubled in size and is puffy and airy.
  4. Turn the dough out onto a heavily floured board. Dust the top with more flour. Divide the dough into 8 equal portions. Gently shape each portion into a plump round roll by folding the edges toward the center and pinching the bottom to seal.
  5. Place the shaped rolls onto a baking sheet lined with parchment paper, leaving space between them. Dust the tops lightly with flour. Cover loosely with plastic wrap and let them proof for another 20 to 30 minutes, until slightly puffy.
  6. Preheat the oven to 425°F (220°C). Place a shallow metal pan or a cast-iron skillet on the bottom rack of the oven to preheat as well; this will be used to create steam.
  7. Using a baker's razor or a sharp knife, slash a deep cut across the center of each roll. The cut should be about 1/2 inch deep, allowing the dough to expand during baking.
  8. Place the baking sheet in the preheated oven. Immediately pour about 1 cup of hot water into the preheated pan on the bottom rack to create steam. Close the oven door quickly. Bake for 22 minutes, until the rolls are deep golden brown and the crust is hard and crackly.
  9. Remove the baking sheet from the oven. Transfer the rolls to a wire rack to cool for at least 10 minutes. The crust will continue to crisp as they cool.
