Tips for success

For a more intense strawberry flavor, you can sprinkle a tiny pinch of salt over the strawberries. This helps to draw out the juices even more effectively and balances the natural sweetness of the berries. If you prefer a more decorative finish, you can reserve a few whole strawberries to place on top of the whipped cream just before serving, which adds a beautiful visual appeal to the finished sheet cake.

If you find the whipped cream is softening too quickly in a warm kitchen, you can stabilize it by adding a small amount of powdered sugar. This is entirely optional but can be helpful if you plan to serve the cake outdoors or in a warm environment. Remember to keep the cake refrigerated until the very last minute to ensure the whipped cream stays light, airy, and perfectly set for your guests.

Variations

  • Mixed Berry Version: Replace half of the strawberries with fresh raspberries and blueberries for a colorful mixed berry cake. The process remains exactly the same, but the mix provides a delightful variety of tart and sweet flavors in every bite.
  • Citrus Infused Cream: Add one teaspoon of freshly grated lemon zest to the whipped cream while beating. The bright citrus notes cut through the richness of the cream and highlight the natural sweetness of the strawberries perfectly.

Storage and make-ahead

Fridge
Store in the refrigerator for up to 24 hours in an airtight container. Keep away from strong-smelling foods.

Keep the cake covered tightly with plastic wrap or in an airtight container to prevent the whipped cream from absorbing odors from the refrigerator. It is best consumed within 24 hours of assembly to maintain the best texture for both the sponge and the whipped cream.

If you have leftovers, ensure they are placed in the refrigerator promptly, as the dairy-based topping is perishable and should not be left out at room temperature for more than two hours.

You can prepare the macerated strawberries up to four hours in advance and store them in the refrigerator. The sponge cake can be baked a day ahead, provided it is stored in an airtight container at room temperature.

For the best results, assemble the cake with the whipped cream no more than two hours before serving. This ensures the cake remains moist without becoming soggy and the whipped cream retains its light, airy texture and professional appearance.

Serving ideas

Serve the cake chilled directly from the refrigerator for the best experience. Use a sharp, thin-bladed knife to cut the cake into even squares, wiping the blade clean between each cut to ensure sharp, clean edges that show off the layers of cake, strawberries, and cream.

You can lift each piece carefully using a wide metal spatula to ensure the integrity of the layers remains intact while transferring the slice from the baking pan to individual serving plates.

Consider serving each slice with an extra spoonful of the strawberry syrup that may have collected in the bottom of the pan. This adds a beautiful touch of color to the plate and ensures that the final bite is just as flavorful as the first.

If you want to add a bit of texture, a small garnish of fresh mint leaves can provide a refreshing contrast, though the cake is delicious and complete exactly as it is without any additional accompaniments.

Frequently asked questions

Can this cake be made ahead of time?
It is best to assemble the cake shortly before serving. You can prepare the strawberries and bake the cake in advance, but the whipped cream should be added within two hours of serving to ensure it stays fresh and firm.
Why is the whipped cream melting?
Melting usually happens if the cake was still warm when the cream was added, or if the environment is too warm. Always ensure the cake is completely cool and keep the dessert refrigerated until serving to maintain the structure.
Is it possible to use frozen strawberries?
Fresh strawberries are highly recommended for this recipe. Frozen berries tend to release too much water when thawed, which will make the sponge cake soggy and dilute the flavor of the cream significantly.

Ingredients

  • 1 layer sponge cake, baked or store-bought
  • 2 lbs fresh strawberries, hulled and sliced
  • 2 cups heavy whipping cream, cold

Instructions

  1. Place the sliced strawberries in a medium bowl. Let the mixture sit for at least 30 minutes to allow the natural juices to release and create a syrup.
  2. Pour the cold heavy whipping cream into a chilled mixing bowl. Using an electric mixer on medium-high speed, beat the cream until stiff peaks form. Be careful not to over-beat, or the cream will turn into butter.
  3. Place the sponge cake layer inside the baking pan. Ensure the sponge cake is fully cooked to an internal temperature of 160°F (71°C). Spread the macerated strawberries and their juices over the surface of the cake. Top with the whipped cream, spreading it out to the edges with a spatula. Chill for 1 hour before serving.
Contains: gluten, eggs, milk
Food safety: This recipe includes eggs in the sponge cake base. Use pasteurized eggs for pregnant women, young children, older adults, and anyone with a weakened immune system.
