Tips for success
For the best texture, let the cookies sit at room temperature for a few minutes after chilling before serving.
This allows the pistachio center to soften slightly, making the contrast between the crunchy exterior and creamy filling even more pronounced. Use a sharp knife to cut them cleanly for a beautiful presentation.
If you want a more intense chocolate flavor, use dark chocolate instead of milk. You can also add a pinch of sea salt to the chocolate drizzle for a sweet-salty twist.
For a festive look, sprinkle crushed pistachios or edible gold leaf on top before the chocolate sets.
Variations
- Dark Chocolate Orange: Use dark chocolate in the ganache and add 1 teaspoon of orange zest to the biscuit mixture. Replace the pistachio cream with a chocolate-orange ganache (melted dark chocolate with a splash of orange liqueur or orange juice).
- Peanut Butter Swirl: Substitute the pistachio cream with creamy peanut butter. For the topping, drizzle melted dark chocolate and a little extra peanut butter in a swirl pattern. Use salted peanuts instead of hazelnuts for extra crunch.
- Salted Caramel: Fill the centers with thick salted caramel sauce instead of pistachio cream. Add a pinch of flaky sea salt to the chocolate drizzle. Use a combination of milk and dark chocolate in the ganache.
- Berry Bliss: Use white chocolate in the ganache and add 1/2 cup of freeze-dried raspberries, crushed, to the biscuit mixture. Fill with a raspberry jam or a white chocolate-raspberry ganache. Drizzle with melted white chocolate and sprinkle with crushed pistachios.

Decadent No-Bake Pistachio Biscuit Cookies

Ingredients
- 1/2 cup heavy cream
- 90 g milk chocolate, chopped
- 1 packet Petit Beurre tea biscuits
- 1/2 cup chopped roasted hazelnuts
- 1 tbsp cocoa powder
- pistachio cream (or melted chocolate), for filling, to taste
- melted chocolate, for drizzling, to taste
Instructions
- Pour the heavy cream into a small saucepan and place over medium heat. Heat until the cream is simmering, with small bubbles around the edges, then remove from the heat immediately. Add the chopped milk chocolate and let it sit for 1 minute to soften. Stir gently with a spatula until the chocolate is completely melted and the mixture is smooth and glossy.
- Place the Petit Beurre biscuits in a sturdy zip-top bag and crush them with a rolling pin until you have coarse crumbs with some larger pieces for texture. Alternatively, pulse them in a food processor for a few seconds. Transfer the crumbs to a large mixing bowl.
- Add the chopped roasted hazelnuts and cocoa powder to the crushed biscuits. Stir with a spatula or your hands until the cocoa powder and hazelnuts are evenly distributed throughout the biscuit crumbs.
- Pour the warm chocolate ganache over the dry biscuit mixture. Stir with a spatula until everything is well combined and forms a thick, moldable fudge dough. The mixture should hold together when pressed between your fingers.
- Use a cookie scoop or a tablespoon to portion out the fudge dough. Roll each portion between your palms into a smooth, round ball about 1 1/2 inches in diameter. Place the balls on a baking sheet lined with parchment paper.
- Press your thumb into the center of each ball to create a deep well. The indentation should be large enough to hold a spoonful of filling but leave a sturdy base and walls about 1/4 inch thick.
- Spoon the pistachio cream into a piping bag fitted with a small round tip (or use a zip-top bag with a corner snipped). Pipe the filling into each well, filling it to the top. Smooth the tops with a small offset spatula if needed.
- Melt the extra chocolate in a heatproof bowl set over a pan of simmering water or in the microwave in 20-second bursts. Drizzle the melted chocolate over the tops of the filled cookies in a zigzag pattern, covering the pistachio cream completely.
- Place the baking sheet with the cookies in the refrigerator and chill for 15 minutes, or until the chocolate topping is firm and the cookies are set. The cookies should be firm to the touch but still have a slightly soft interior.
- Remove the cookies from the refrigerator just before serving. For the best texture contrast, let them sit at room temperature for 5 minutes so the centers soften slightly. Break one open to reveal the gooey pistachio center and crunchy biscuit fudge.
