Tips for success
For the most tender ribs, cook them on LOW, not high. Low and slow is the key to breaking down the collagen. If you're in a hurry, you can cook on high for 3 hours, but the texture won't be as perfect.
Also, don't skip the broiling step—it's the final touch that gives the ribs their signature caramelized crust.
If you have time, make the dry rub from scratch using brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. This allows you to adjust the sweetness and heat to your liking.
For a spicier kick, add a pinch of cayenne to the rub or use a chipotle BBQ sauce. You can also substitute root beer for the Coca-Cola for a different flavor twist.
Variations
- Spicy Chipotle Ribs: Swap the hickory BBQ sauce for a chipotle or smoky chipotle sauce, and add 1-2 minced chipotle peppers in adobo to the slow cooker. The heat will balance the sweetness of the cola.
- Root Beer Ribs: Use root beer instead of Coca-Cola for a deeper, more molasses-like sweetness. The root beer pairs well with a bourbon BBQ sauce.
- Honey Garlic Ribs: Replace the hickory BBQ sauce with a mixture of 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 2 tbsp ketchup. Reduce the cola to 1/2 cup.
- Smoky Maple Ribs: Add 2 tbsp maple syrup to the BBQ sauce, and use a dry rub that includes a bit of smoked salt. The maple adds a rich, woodsy sweetness.
Storage and make-ahead
- Fridge

- Freezer
- Freeze cooked ribs in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat

Leftover ribs can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place them on a baking sheet and warm in a 350°F (175°C) oven for 10-15 minutes, until heated through. The glaze will re-crisp slightly.
The ribs can be fully cooked and broiled up to 2 days ahead. Let them cool completely, then store in the refrigerator.
Reheat in the oven as directed. You can also prepare the dry rub and sauce in advance, but wait to coat the ribs until just before cooking.
Serving ideas
Serve the ribs hot, sliced between the bones, with extra BBQ sauce on the side. Classic sides like potato salad, baked beans, coleslaw, or cornbread are perfect.
The sweet and smoky flavor pairs well with tangy, creamy sides that balance the richness.
For a backyard feast, pile the ribs on a large platter and let everyone dig in. Provide plenty of napkins and a stack of wet wipes. These ribs are messy but worth it. Pair with a cold beer or iced tea for the ultimate summer meal.

Crockpot Coca-Cola Baby Back Ribs

Ingredients
- 2 racks baby back ribs (about 2 lb each)
- 3 tbsp smoky BBQ dry rub
- 1 cup Coca-Cola
- 1 1/2 cups sweet hickory BBQ sauce
Instructions
- Remove the membrane from the back of each rack of ribs if present. Pat the ribs dry with paper towels. Rub the smoky BBQ dry rub all over both sides of the racks, pressing it into the meat. Coil each rack inside the slow cooker, fitting them snugly. Pour the Coca-Cola down the sides of the cooker, being careful not to wash off the rub. Slather the sweet hickory BBQ sauce evenly over the tops of the ribs.
- Cover the slow cooker and cook on LOW for 6 hours, until the meat is tender and nearly falling off the bone. Avoid opening the lid during cooking to keep the heat steady. After 6 hours, carefully transfer the ribs to a cutting board using tongs. The bones should slide out easily when pulled. Let it rest for 3 minutes before slicing.
- Preheat the broiler to high. Place the ribs on a broiler pan or baking sheet lined with foil. Spoon some of the syrupy Coca-Cola barbecue reduction from the slow cooker over the ribs. Broil 3 minutes, until the glaze is caramelized and bubbling. Watch closely to prevent burning. Let it rest for 3 minutes before slicing.
- Remove the ribs from the broiler and let them rest for at least 3 minutes. Slice between the bones and serve hot with classic potato salad and baked beans.
