Tips for success
For the crispiest result, serve the börek warm, within 30 minutes of baking. The exterior is at its shatteringly crisp peak right after it rests. If you need to hold it, keep it in a warm oven (200°F) for up to 30 minutes, but note that the crispness will diminish over time.
When rolling the yufka, brush each sheet evenly but not too generously—excess wash can make the pastry soggy.
Use a light hand and cover unused sheets with a damp towel to prevent them from drying out. If the dough tears, simply press it back together; the layers will hide minor imperfections after baking.
Variations
- Spicy Beef Filling: Add 200g cooked ground beef or lamb to the spinach mixture, seasoned with red pepper flakes and black pepper. Reduce the feta to 100g to balance the richness. This makes a heartier main course.
- Herb & Cheese: Add a handful of chopped fresh dill, mint, and parsley to the spinach filling. Use only feta (300g) and omit the kaşar for a lighter, more traditional flavor. Sprinkle with sesame seeds instead of nigella.
- Mushroom & Leek: Sauté 200g sliced mushrooms and 1 leek (white part only) with the onion. Add a pinch of dried thyme. Replace the spinach with this mixture, and use the same cheeses. The earthy mushrooms pair beautifully with the cheeses.
- Sweet Potato & Kale: Roast 1 cup cubed sweet potato until tender, and swap spinach for kale (blanched and squeezed). Mix with feta and kaşar. This adds a subtle sweetness and extra color to the filling.

Store leftover börek in an airtight container in the refrigerator for up to 3 days. To reheat, place slices on a baking sheet and warm in a 350°F (175°C) oven for 5-7 minutes until crisp again. Avoid microwaving, as it will make the pastry soft.
The börek can be assembled up to 24 hours in advance. Prepare the filling, roll the cylinders, coil them in the pan, and brush with egg yolk. Cover tightly with plastic wrap and refrigerate.
When ready to bake, let it sit at room temperature for 30 minutes, then bake as directed, adding 5-10 minutes to the baking time if starting from cold.
Serving ideas
Serve the börek warm, cut into wedges, as a main course with a simple tomato and cucumber salad.
It also pairs beautifully with a bowl of Turkish lentil soup or a dollop of thick yogurt on the side. For a brunch spread, offer it alongside olives, fresh bread, and hard-boiled eggs.
For a lighter meal, serve smaller slices as an appetizer or meze. The börek is also delicious at room temperature, making it a great picnic or lunchbox option.
Garnish with fresh herbs like dill or parsley for a pop of color, if desired, though the nigella seeds already add visual appeal.

Crispy Turkish Spinach & Cheese Filo Roll (Ispanaklı Börek)

Ingredients
- 500 g fresh yufka or phyllo dough sheets
- 400 g fresh spinach, washed and chopped
- 200 g Turkish beyaz peynir (feta), crumbled
- 100 g Turkish kaşar cheese, shredded
- 1 onion, diced
- 2 eggs
- 100 ml milk
- 80 ml olive oil
- 1 egg yolk, for brushing
- Nigella seeds (çörek otu), for sprinkling, to taste
Instructions
- Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the diced onion and sauté until soft and translucent, about 4 minutes. Add the chopped spinach and cook, stirring, until wilted and any liquid has evaporated, about 3 minutes. Remove from heat and let cool slightly. In a large bowl, combine the cooled spinach mixture with crumbled feta and shredded kaşar cheese. Mix well.
- In a small bowl, whisk together the 2 eggs, milk, and remaining olive oil until smooth. This mixture will be used to brush the yufka sheets before rolling.
- Lay one sheet of yufka on a clean work surface. Brush generously with the egg-milk-oil wash. Spoon a line of the spinach-cheese filling along one long edge. Roll the yufka tightly into a long cylinder, tucking in the ends as you go. Repeat with the remaining sheets and filling.
- Lightly grease a round 9-inch baking pan with olive oil. Starting at the center, coil one filled cylinder into a spiral. Continue with the remaining cylinders, attaching them end-to-end to form a continuous spiral that fills the pan.
- Brush the top of the spiral with the beaten egg yolk. Sprinkle generously with nigella seeds.
- Preheat the oven to 375°F (190°C). Bake the börek for 35 minutes, until the top is deep golden brown and the pastry is crisp. Let cool for 5 minutes before slicing.
