Before you start

Before starting, ensure all ingredients are at room temperature. Wash and chop the spinach, then pat it very dry. Crumble the feta and shred the kaşar cheese. Dice the onion. If using frozen phyllo, thaw it completely.

Have a large skillet, a mixing bowl, a pastry brush, and a round 9-inch baking pan ready. Preheat the oven to 375°F (190°C) when you begin rolling the börek. Keep a clean, damp kitchen towel nearby to cover the yufka sheets while working.

Ingredients at a glance (10)
  • 500 g fresh yufka or phyllo dough sheets
  • 400 g fresh spinach, washed and chopped
  • 200 g Turkish beyaz peynir (feta), crumbled
  • 100 g Turkish kaşar cheese, shredded
  • 1 onion, diced
  • 2 eggs
  • 100 ml milk
  • 80 ml olive oil
  • 1 egg yolk, for brushing
  • Nigella seeds (çörek otu), for sprinkling, to taste

Instructions

Filling and Wash

  1. Prepare the Filling
Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the diced onion and sauté until soft and translucent, about 4 minutes. Add the chopped spinach and cook, stirring, until wilted and any liquid has evaporated, about 3 minutes. Remove from heat and let cool slightly. In a large bowl, combine the cooled spinach mixture with crumbled feta and shredded kaşar cheese. Mix well.
Look for Spinach is wilted and the mixture is well combined.
Tip Squeeze excess moisture from the spinach after cooking to avoid a soggy börek.
  2. Make the Egg Wash
In a small bowl, whisk together the 2 eggs, milk, and remaining olive oil until smooth. This mixture will be used to brush the yufka sheets before rolling.
Look for The wash is a uniform, pale yellow liquid.
Tip Use a fork or whisk to ensure the egg is fully incorporated.

The onion is soft and translucent, and the spinach is wilted with no standing liquid. The feta and kaşar are mixed in, creating a cohesive filling. The egg-milk-oil wash is smooth and ready. The kitchen smells of sautéed onion and fresh greens. Check that the spinach mixture is cool enough to handle before assembling.

Rolling and Coiling

  1. Roll the Filo Cylinders
Lay one sheet of yufka on a clean work surface. Brush generously with the egg-milk-oil wash. Spoon a line of the spinach-cheese filling along one long edge. Roll the yufka tightly into a long cylinder, tucking in the ends as you go. Repeat with the remaining sheets and filling.
Look for Each cylinder is tightly rolled and sealed.
Tip Keep unused yufka covered with a damp towel to prevent drying.
  2. Coil into a Spiral
Lightly grease a round 9-inch baking pan with olive oil. Starting at the center, coil one filled cylinder into a spiral. Continue with the remaining cylinders, attaching them end-to-end to form a continuous spiral that fills the pan.
Look for The spiral fills the pan evenly.
Tip Press the spiral gently to ensure it stays in place.
  3. Brush and Sprinkle
Brush the top of the spiral with the beaten egg yolk. Sprinkle generously with nigella seeds.
Look for The top is glossy and dotted with seeds.
Tip Use a pastry brush for an even, thin layer of egg yolk.

Each yufka sheet is brushed evenly and rolled into a tight cylinder without tears. The cylinders are coiled into a neat spiral that fills the pan. The top is glossy with egg yolk and dotted with nigella seeds. The raw börek looks neat and well-formed, with no gaps in the spiral. The pastry is pliable and not dried out.

Baking and Finishing

  1. Bake Until Golden
Preheat the oven to 375°F (190°C). Bake the börek for 35 minutes, until the top is deep golden brown and the pastry is crisp. Let cool for 5 minutes before slicing.
Look for The top is deeply golden and the pastry sounds crisp when tapped.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the top browns too quickly, loosely cover with foil.

The börek emerges from the oven deep golden brown, with visible crisp layers and a fragrant aroma of toasted pastry and melted cheese. The top is shiny and the edges are slightly darker.

Tapping the surface produces a hollow, crisp sound. The filling is set and the cheese is melted. Let it rest before slicing to reveal clean, defined spiral layers.

Common mistakes

A common mistake is undercooking the spinach, leaving excess water that makes the filling soggy. Always cook the spinach until all liquid evaporates. Another issue is overfilling the yufka, which can cause the rolls to burst during baking. Use a modest amount of filling and roll tightly.

Skipping the egg wash on the top can result in a pale, less appetizing crust. Brushing the top with egg yolk is essential for that deep golden finish. Finally, don't rush the baking—35 minutes is needed to achieve crispness throughout.

How to tell it’s done

The börek is done when the top is deep golden brown and the pastry feels crisp and firm to the touch. To be certain, insert an instant-read thermometer into the center of the spiral; it should read at least 160°F (71°C) because the filling contains eggs.

Let the börek rest for 5 minutes before slicing—this allows the layers to set slightly and makes cutting cleaner. The internal temperature ensures the eggs are fully cooked and safe to eat.
