Tips for success

For the crispiest result, use fresh kadayıf and handle it gently. Overworking the strands can make them brittle. Also, make sure the butter is evenly distributed—any dry spots will bake unevenly.

If you prefer a less sweet dessert, reduce the sugar in the syrup slightly, but keep the lemon juice for balance.

When cutting, use a sharp, serrated knife and wipe it clean between cuts to get neat squares. For a more professional look, cut into diamond shapes.

Serve at room temperature so the cream is soft and the pastry retains its crunch. If you have leftovers, store them in an airtight container to maintain freshness.

Variations

  • Walnut Kadayıf: Replace pistachios with finely chopped walnuts for a more traditional Turkish flavor. Toast the walnuts lightly before using to enhance their nuttiness. The syrup can be flavored with a splash of orange blossom water.
  • Chocolate Swirl: Add a layer of melted dark chocolate over the clotted cream before adding the top pastry. Use a high-quality chocolate with at least 70% cocoa for a rich contrast. Drizzle extra chocolate over the finished baklava.
  • Rose-Scented: Add 1 teaspoon of rose water to the syrup along with the lemon juice. Sprinkle dried rose petals over the top before serving. This gives a fragrant, floral twist that pairs well with the pistachios.
  • Mini Bites: Instead of one large tray, use a mini muffin tin to make individual kadayıf bites. Press the pastry into each cup, add the filling, and top with more pastry. Adjust baking time to 20-25 minutes.

Storage and make-ahead

Fridge
Refrigerate leftover baklava in an airtight container for up to 1 week. Let it come to room temperature before serving to restore crispness.
Freezer
Freeze unbaked assembled baklava for up to 3 months. Bake from frozen, adding 10-15 minutes to the baking time.
Reheat
To reheat, place in a 350°F (175°C) oven for 5-10 minutes until warm and crisp. Avoid microwaving, as it will make the pastry soggy.

Store leftover baklava in an airtight container at room temperature for up to 3 days. The pastry may lose some crispness over time, but it will still be delicious.

For longer storage, refrigerate for up to a week, but bring to room temperature before serving to restore some crunch.

You can assemble the baklava up to a day in advance and keep it covered in the refrigerator. Bake it just before serving, then pour the syrup over. The syrup can also be made ahead and stored in the fridge for up to a week—just bring it to room temperature before pouring.

Serving ideas

Serve this kadayıf baklava as a stunning dessert at dinner parties, holidays, or any special occasion. It pairs beautifully with Turkish coffee or strong black tea.

The sweetness is balanced by the cream and nuts, making it a satisfying end to a meal. Cut into small squares for easy serving.

For an extra touch, sprinkle a few crushed pistachios on top just before serving. You can also add a dollop of clotted cream on the side for those who want extra richness. This dessert is best enjoyed the same day, but it will still be delicious the next day.

Frequently asked questions

Can this kadayıf baklava be made ahead of time?
Yes, you can assemble the baklava up to a day in advance and store it covered in the refrigerator. Bake it just before serving, then pour the cooled syrup over the hot pastry. The syrup can also be made ahead and stored in the fridge for up to a week. Bring it to room temperature before using.
What is the best way to reheat kadayıf baklava?
To reheat, place the baklava in a preheated 350°F (175°C) oven for 5-10 minutes until warm and crisp. Avoid using a microwave, as it will make the pastry soggy and chewy. If reheating from frozen, let it thaw in the refrigerator overnight first.
Can you use regular butter instead of clarified butter?
Yes, you can use regular unsalted butter, but clarify it yourself by melting it and skimming off the milk solids. This prevents the milk solids from burning during baking and gives a cleaner flavor. Ghee is also a good substitute.
Why is your kadayıf baklava soggy?
Sogginess usually occurs if the syrup is poured over the pastry while it's still warm, or if the syrup is too thin. Make sure the syrup is completely cool before pouring over the hot pastry. Also, ensure the pastry is baked until deeply golden and crisp before adding the syrup.
Can this recipe be made without nuts?
Yes, you can omit the pistachios or replace them with toasted sesame seeds for a nut-free version. Keep in mind that the flavor will change, but the creamy texture and crispy pastry will still shine. If you have a nut allergy, check all ingredients carefully.

Crispy Turkish Kadayıf Baklava with Clotted Cream & Pistachios

Golden kadayıf baklava with clotted cream and pistachios, drizzled with syrup on a copper tray.

Ingredients

  • 400 g fresh shredded kadayıf pastry dough
  • 200 g clarified butter (sade yağ), melted
  • 200 g Turkish clotted cream (kaymak)
  • 1 cup shelled pistachios, finely crushed
  • 2 cups granulated sugar
  • 1 cup water
  • 1 tbsp fresh lemon juice

Instructions

  1. In a small saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Remove from heat, stir in the lemon juice, and let the syrup cool completely. Meanwhile, place the shredded kadayıf pastry in a large bowl. Use your hands to fluff and separate the strands gently, breaking up any clumps.
  2. Pour the melted clarified butter over the fluffed kadayıf. Use your hands to toss and rub the butter through the strands until every piece is evenly coated and glistening. Make sure there are no dry spots.
  3. Transfer half of the buttered kadayıf into a round copper baking tray. Press it down firmly and evenly using the bottom of a heavy pot, creating a compact base layer about 1/2-inch thick.
  4. Spread the Turkish clotted cream evenly over the pressed kadayıf layer. Sprinkle the crushed pistachios over the cream, covering it completely.
  5. Spread the remaining buttered kadayıf over the filling, covering it completely. Press down gently with your hands or the bottom of the pot to compact the top layer slightly.
  6. Preheat the oven to 375°F (190°C). Place the tray in the oven and bake for 35 minutes, or until the top is deeply golden brown and the edges are crisp. The pastry should sound crackly when lightly tapped.
  7. Remove the hot baklava from the oven. Immediately pour the cooled syrup evenly over the hot pastry, making sure to cover the entire surface. Listen for the sizzle as the syrup is absorbed.
  8. Let the baklava rest at room temperature for at least 30 minutes, allowing the syrup to fully absorb and the pastry to set. Do not cover it while it rests.
  9. Using a sharp knife, cut the baklava into squares or diamonds. Serve at room temperature, with extra crushed pistachios on top if desired.
