Tips for success
For the crispiest results, use clarified butter (ghee) rather than regular butter.
Clarified butter has a higher smoke point and lower water content, which helps the filo crisp up faster and more evenly. If using regular butter, melt it slowly and skim off any foam before brushing.
To achieve a vibrant green color, use high-quality pistachios that are already shelled and preferably from Antep (Turkey) or Sicily.
Grind them finely but not to a paste—you want a sandy texture. You can also add a tiny pinch of salt to the pistachio-sugar mixture to enhance the flavor.
Variations
- Chocolate Pistachio Katmer: Add 2 tablespoons of finely chopped dark chocolate to the pistachio-sugar mixture before sprinkling over the cream. The chocolate melts during baking for a rich, gooey contrast.
- Orange Blossom Katmer: Stir 1 teaspoon of orange blossom water into the clotted cream before assembling. The floral note complements the pistachios beautifully.
- Savory Katmer: Omit the sugar and use a savory filling of crumbled feta, fresh herbs, and a sprinkle of za'atar. Bake as directed and serve warm as an appetizer.
- Honey Drizzle Katmer: After baking, drizzle the warm katmer with a spoonful of honey and a pinch of sea salt for a sweet-savory finish.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 2 days, but note that the pastry will soften. Reheat in a toaster oven or oven to restore crispness.
- Freezer
- Baked katmer can be frozen for up to 1 month. Wrap tightly in foil and freeze. Reheat frozen katmer in a 350°F (175°C) oven for 10 minutes.
- Reheat
- Reheat leftover katmer in a 350°F (175°C) oven for 5-7 minutes until hot and crisp. Avoid microwaving, as it will make the pastry soggy.
Store any leftover katmer in an airtight container at room temperature for up to 1 day. The pastry will lose some of its crispness, so reheat in a 350°F (175°C) oven for 5 minutes to restore the crunch. Do not refrigerate, as the moisture will soften the filo.
The katmer is best baked fresh, but you can prepare the pistachio-sugar mixture and have the clarified butter melted ahead of time. Assemble the katmer just before baking.
If you need to prepare in advance, assemble the pastry, cover, and refrigerate for up to 2 hours, then bake directly from the fridge, adding 1-2 minutes to the baking time.
Serving ideas
Serve the katmer warm, straight from the oven, as the contrast between the hot, crisp pastry and the cool, creamy filling is at its peak.
It pairs beautifully with Turkish tea or strong coffee. For a more indulgent presentation, dust with confectioners' sugar and a few extra crushed pistachios.
Katmer can be served as a dessert, a sweet breakfast, or an afternoon treat. It is also wonderful alongside a scoop of vanilla ice cream or a dollop of clotted cream. The recipe makes four generous servings, but it is so delicious that you may want to double it.

Crispy Pistachio Katmer: Quick Turkish Filo Pastry

Ingredients
- 4 sheets paper-thin Turkish baklava yufka (or phyllo dough)
- 150 g clotted cream (kaymak or mascarpone)
- 100 g finely ground vibrant green Antep pistachios
- 50 g granulated sugar
- 40 g clarified butter, melted
- Crushed pistachios for garnish, to taste
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. In a small bowl, mix the finely ground pistachios with the granulated sugar until evenly combined. Set aside. Gently unfold the filo sheets on a clean work surface and cover with a slightly damp towel to prevent drying.
- Place one sheet of filo on the prepared baking sheet. Brush the entire surface with melted clarified butter. Repeat with the remaining three sheets, brushing each layer generously. Make sure the edges are well coated so they crisp up evenly.
- Spoon the clotted cream (kaymak or mascarpone) into the center of the buttered filo, forming a rough square about 4 inches wide. Leave a border of at least 2 inches on all sides so the pastry can be folded over the filling.
- Evenly shower the pistachio-sugar mixture over the clotted cream, covering it completely. Press lightly so the nuts adhere to the cream. Reserve a small amount of the mixture for garnishing the finished pastry.
- Fold the four edges of the filo over the filling, one at a time, to form a neat square envelope. Tuck in the corners gently to seal. Brush the top and sides of the folded pastry with more melted clarified butter.
- Place the baking sheet in the preheated oven and bake for 8 minutes, until the pastry is puffed, deeply golden, and blistering in spots. Rotate the sheet halfway through for even browning. The filling should be hot and the pastry shatteringly crisp.
- Remove the katmer from the oven and immediately dust the top heavily with the reserved crushed pistachios. Allow it to cool for 2 minutes, then slice into four triangles using a pizza wheel or a sharp knife. The filling will be molten and the pastry will crackle as you cut.
- Serve the katmer warm, while the clotted cream is still melting and the pastry is at its crispiest. Enjoy the contrast of hot, creamy filling and crunchy, buttery layers with the fragrant pistachios in every bite.
