Tips for success
For the best texture, serve the kadayıf warm but not piping hot — let it rest for about 10 minutes after pouring the syrup so the strands can absorb the syrup without becoming soggy.
The ice cream should be straight from the freezer; if it's too hard to slice, let it sit at room temperature for 2–3 minutes. Use a serrated knife to cut the pastry cleanly, and wipe the knife between cuts to avoid sticking.
If you want to prepare this dessert for a crowd, you can double the recipe and use a larger pan. Just adjust the baking time slightly, checking for doneness.
The kadayıf can be made ahead and kept at room temperature for a day, but the ice cream should be added just before serving. For an extra touch, drizzle a little warm honey or rose syrup over the top, though this is optional and not part of the classic recipe.
Variations
- Add Rose Water: Add 1 tablespoon of rose water to the syrup for a floral note that pairs beautifully with pistachios and goat milk ice cream.
- Use Walnuts: Replace the pistachios with coarsely chopped walnuts for a different nutty flavor that still complements the syrup.
- Spiced Syrup: Infuse the syrup with a cinnamon stick and a few cloves while simmering, then remove before pouring over the pastry.
- Chocolate Drizzle: Melt dark chocolate and drizzle over the top before adding the ice cream for a decadent twist.
Storage and make-ahead
- Fridge
- Store leftover kadayıf in an airtight container at room temperature for up to 2 days; do not refrigerate as it will harden.
- Freezer
- Freeze the baked, syrup-soaked kadayıf (without ice cream) for up to 1 month. Thaw at room temperature and reheat in a 350°F (175°C) oven for 5-7 minutes.
- Reheat
- Reheat individual squares in a toaster oven or regular oven at 350°F (175°C) for 3-5 minutes until warm and crisp.
Store leftover kadayıf (without ice cream) in an airtight container at room temperature for up to 2 days. The pastry will lose some of its crispness but will still be delicious. To re-crisp, place in a 350°F (175°C) oven for 5 minutes. The ice cream should be stored in the freezer separately.
The kadayıf can be baked and soaked with syrup up to 1 day ahead. Keep it covered at room temperature. Add the ice cream and pistachio dusting just before serving. The syrup can also be made up to a week ahead and refrigerated in a sealed container.
Serving ideas
Serve the kadayıf warm, with the ice cream slice placed on top so it starts to melt slightly into the pastry. The contrast of temperatures is key — the pastry should be warm but not hot, and the ice cream cold and firm.
A fork and knife are the traditional utensils, as the stretchy ice cream holds its shape and the pastry is meant to be cut into bite-sized pieces.
This dessert is best enjoyed immediately, as the ice cream will slowly melt. For a more elegant presentation, you can plate each square individually, dust with extra ground pistachios, and add a few whole pistachios for garnish.
Some people like to drizzle a bit of the syrup from the pan over the ice cream, but this is optional. Pair with strong Turkish coffee or tea to balance the sweetness.

Crispy Pistachio Kadayıf with Stretchy Ice Cream

Ingredients
- 300 g shredded fresh kadayıf pastry
- 150 g clarified butter, melted
- 150 g coarsely chopped Antep pistachios
- 250 g sugar
- 200 ml water
- 1 tsp lemon juice
- 2 slices thick authentic Maraş stretchy goat milk ice cream (dövme dondurma)
- Ground pistachios, for dusting, to taste
Instructions
- In a medium saucepan, combine the sugar, water, and lemon juice. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 5 minutes. Remove from heat and let the syrup cool to room temperature. Place the shredded kadayıf in a large bowl, pour the melted clarified butter over it, and toss thoroughly with your hands to coat every strand evenly.
- Preheat the oven to 375°F (190°C). Press half of the buttered kadayıf evenly into the bottom of a round baking pan, using your palms to compact it firmly. The layer should be about 1/2 inch thick and cover the entire base without gaps.
- Scatter the chopped pistachios in a thick, even carpet over the pressed kadayıf, leaving a small border at the edges. Press the nuts gently into the pastry so they stay in place during baking.
- Top the pistachios with the remaining buttered kadayıf, pressing it down gently to seal the filling. Make sure the top layer covers the nuts completely and is relatively level.
- Place the pan in the preheated oven and bake for 30 minutes, until the top is deep golden brown and crisp. The pastry should feel firm to the touch and the edges may be slightly darker.
- Remove the pan from the oven and immediately pour the room-temperature syrup evenly over the hot kadayıf. You will hear a loud sizzle as the syrup hits the hot surface. Let the pastry absorb the syrup for at least 15 minutes before cutting.
- Using a sharp knife, cut the kadayıf into 6 squares or rectangles while still warm. Work gently to keep the layers intact.
- Place a thick slice of Maraş ice cream on each warm kadayıf square, dust with ground pistachios, and serve immediately with a fork and knife.
