Before you start

Before starting, ensure the kadayıf is completely thawed if frozen, and the clarified butter is melted and slightly warm. Prepare the syrup and let it cool to room temperature — it should be fully cooled before pouring over the hot pastry. Preheat the oven to 375°F (190°C) and have your round baking pan ready.

Chop the pistachios coarsely and measure all ingredients. The ice cream should be kept in the freezer until just before serving; if using store-bought ice cream, you may want to let it soften for a few minutes to achieve a stretchy texture, but traditional Maraş ice cream is ready to slice directly from the freezer.

Ingredients at a glance (8)
  • 300 g shredded fresh kadayıf pastry
  • 150 g clarified butter, melted
  • 150 g coarsely chopped Antep pistachios
  • 250 g sugar
  • 200 ml water
  • 1 tsp lemon juice
  • 2 slices thick authentic Maraş stretchy goat milk ice cream (dövme dondurma)
  • Ground pistachios, for dusting, to taste

Instructions

Prepare and Assemble

  1. Prepare the Syrup and Pastry
In a medium saucepan, combine the sugar, water, and lemon juice. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 5 minutes. Remove from heat and let the syrup cool to room temperature. Place the shredded kadayıf in a large bowl, pour the melted clarified butter over it, and toss thoroughly with your hands to coat every strand evenly.
Look for The kadayıf strands are all glossy with butter and no dry spots remain.
Tip Work the butter through the strands gently to avoid breaking them.
  2. Press Half the Pastry into the Pan
Preheat the oven to 375°F (190°C). Press half of the buttered kadayıf evenly into the bottom of a round baking pan, using your palms to compact it firmly. The layer should be about 1/2 inch thick and cover the entire base without gaps.
Look for The bottom layer is compact and even.
Tip Use the bottom of a measuring cup to press it down evenly.

At the end of this phase, the kadayıf is buttered and pressed into the pan, with the pistachio filling in place and the top layer sealed. The syrup is cooling, and the oven is preheated. The kitchen smells of butter and nuts, and the pastry is ready to bake.

Bake to Golden

  1. Add the Pistachio Filling
Scatter the chopped pistachios in a thick, even carpet over the pressed kadayıf, leaving a small border at the edges. Press the nuts gently into the pastry so they stay in place during baking.
Look for The pistachios form a solid, emerald layer.
Tip Do not overfill the edges to prevent burning.
  2. Cover with Remaining Pastry
Top the pistachios with the remaining buttered kadayıf, pressing it down gently to seal the filling. Make sure the top layer covers the nuts completely and is relatively level.
Look for The top layer is smooth and covers the filling.
Tip Tuck the edges with your fingers to enclose the nuts.
  3. Bake Until Golden
Place the pan in the preheated oven and bake for 30 minutes, until the top is deep golden brown and crisp. The pastry should feel firm to the touch and the edges may be slightly darker.
Look for The top is golden brown and crisp; the kitchen smells buttery and nutty.
Tip Rotate the pan halfway through for even browning.

After 30 minutes in the oven, the kadayıf is a deep golden brown, crisp to the touch, and the edges are slightly darker. The kitchen is filled with a toasty, buttery aroma. The pastry should be firm and hold its shape when pressed.

Syrup and Serve

  1. Pour Syrup Over Hot Pastry
Remove the pan from the oven and immediately pour the room-temperature syrup evenly over the hot kadayıf. You will hear a loud sizzle as the syrup hits the hot surface. Let the pastry absorb the syrup for at least 15 minutes before cutting.
Look for The syrup sizzles and soaks into the golden strands.
Tip Pour slowly and evenly to avoid pooling.
  2. Cut into Squares
Using a sharp knife, cut the kadayıf into 6 squares or rectangles while still warm. Work gently to keep the layers intact.
Look for Clean cuts show the pistachio filling.
Tip Use a serrated knife for easier cutting.
  3. Top with Ice Cream and Serve
Place a thick slice of Maraş ice cream on each warm kadayıf square, dust with ground pistachios, and serve immediately with a fork and knife.
Look for The cold, stretchy ice cream contrasts with the warm, crisp pastry.
Tip Serve right away so the ice cream doesn't melt too much.

The hot pastry has absorbed the syrup, turning glossy and fragrant. The squares are cut and topped with thick slices of ice cream, dusted with pistachios. The contrast of warm pastry and cold ice cream is ready to be enjoyed immediately.

Common mistakes

One common mistake is over-baking the kadayıf, which can make it too hard and brittle. Keep an eye on it during the last 5 minutes of baking; the ideal is a golden-brown color, not dark brown. Another issue is pouring syrup that is too hot — it should be at room temperature to avoid making the pastry soggy.

Also, do not skimp on the butter; it's what gives the pastry its rich flavor and crisp texture. When pressing the kadayıf into the pan, make sure it's compact enough to hold together but not so dense that it becomes chewy.

Finally, use a sharp knife to cut the kadayıf while it's warm; cutting when cold can cause it to crumble.

How to tell it’s done

The kadayıf is done when the top is deeply golden brown and crisp to the touch. The pastry should feel firm and slightly shattery, and the edges may be a bit darker. When you press the center, it should not feel soft or doughy. The syrup will be absorbed within 15 minutes, and the pastry will become tender but still retain some crunch.

If you tap the surface, it should sound hollow. The pistachio filling should be visible in the cross-section when you cut, and the layers should hold together without falling apart. The ice cream should be firm but sliceable, and it should stretch slightly when pulled with a fork.
