Tips for success
To achieve an even crispier skin, let the chicken air-dry uncovered on a wire rack in the refrigerator overnight. This draws out surface moisture from the skin, allowing it to render much faster and get exceptionally crispy during roasting without any extra ingredients.
Do not throw away the chicken carcass after carving. The roasted bones, caramelized lemons, and leftover rosemary sprigs make an incredibly rich, flavorful homemade chicken stock.
Simply place them in a large pot, cover with cold water, add some celery and carrots, and simmer gently for several hours before straining and freezing.
Variations
- Garlic Herb Roasted Chicken: Add four to six minced garlic cloves to the herb butter mixture before rubbing it under and over the chicken skin for a rich, savory garlic kick.
- Spicy Citrus Chicken: Mix half a teaspoon of red pepper flakes or cayenne pepper into the butter, and substitute one of the lemons with a sliced orange for a spicy, sweet citrus twist.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze shredded cooked meat in a freezer-safe bag for up to 3 months. Thaw in the fridge before reheating.
- Reheat
- Reheat portions in a 350°F (177°C) oven covered with foil and a splash of broth for 15 minutes to keep it juicy.
Allow any leftover chicken to cool completely at room temperature for no more than two hours before storing. Shred the meat off the bones or cut it into portions, then place it in an airtight container.
Pour any remaining pan juices over the meat to keep it moist during storage. Store in the refrigerator for up to three to four days.
While roasted chicken is best enjoyed fresh out of the oven when the skin is at its crispiest, you can prepare the herb butter and slice the lemons a day in advance. You can also butter and truss the chicken up to 12 hours ahead of time, keeping it uncovered in the refrigerator to dry out the skin even further before roasting.
Serving ideas
Serve this roasted chicken hot, carved into clean slices of breast meat, drumsticks, and thighs. Arrange the pieces on a warm serving platter surrounded by the caramelized lemon wheels and fresh rosemary sprigs from the roasting pan.
Spoon the rich, buttery pan drippings generously over the meat right before serving to add moisture and a burst of bright, savory flavor.
This versatile main dish pairs wonderfully with roasted root vegetables, garlic mashed potatoes, or a simple crisp green salad dressed with a light lemon vinaigrette.
The caramelized lemons are fully edible and offer a sweet, concentrated citrus burst that cuts through the richness of the butter-basted chicken meat beautifully.

Crispy Lemon Herb Roasted Chicken with Golden Butter Baste

Ingredients
- 1 whole chicken (4 to 5 pounds)
- 1/2 cup unsalted butter, softened
- 4 sprigs fresh rosemary, divided
- 3 medium lemons, sliced into wheels
Instructions
- Preheat the oven to 425°F (218°C). Pat the whole chicken completely dry with paper towels to ensure the skin gets crispy. In a small bowl, mix the softened unsalted butter with chopped fresh rosemary. Gently loosen the skin over the chicken breasts and thighs with your fingers, then spread half of this herb butter directly under the skin. Rub the remaining butter all over the outside of the chicken skin.
- Scatter the lemon wheels and remaining fresh rosemary sprigs across the bottom of a heavy roasting pan to create a fragrant bed. Place the prepared whole chicken on top of the lemon slices, breast side up. If desired, tuck the wing tips behind the back and tie the legs together with kitchen twine to ensure even cooking.
- Place the roasting pan in the preheated oven and roast for 30 minutes. Carefully pull the pan out and use a basting spoon or pastry brush to scoop up the melted herb butter and sizzling pan juices, spooning them generously over the entire bird. Scatter additional lemon wheels around the chicken in the pan juices to caramelize.
- Return the chicken to the oven and roast for another 40 to 45 minutes, basting once more halfway through. The chicken is cooked when a meat thermometer inserted into the thickest part of the thigh, avoiding the bone, registers a safe internal temperature of 165°F (74°C). The skin should be deeply golden and crackling, and the juices must run completely clear.
- Remove the roasting pan from the oven. Transfer the roasted chicken to a cutting board and let it rest for 15 minutes before carving. This resting period allows the steaming juices to redistribute throughout the meat, ensuring every slice remains tender and moist. Carve the chicken and serve alongside the caramelized lemon wheels and pan juices.
