Tips for success
For the crispiest nuggets, make sure the oil is at the correct temperature before adding the nuggets. If the oil is not hot enough, the coating will absorb oil and become soggy.
Use a deep-fry thermometer for accuracy. Also, don't overcrowd the pan; fry in small batches to maintain the oil temperature.
The batter is best used immediately after mixing. If it sits too long, the club soda will lose its fizz, resulting in a denser coating.
If the batter becomes too thick, add a splash more cold club soda to thin it out. The sauce can be made ahead and stored in the refrigerator for up to a week.
Variations
- Spicy Nuggets: Add 1/2 teaspoon of cayenne pepper or a chopped chipotle pepper in adobo sauce to the chicken mixture. Increase the black pepper in the sauce to 1 teaspoon for an extra kick.
- Herb Nuggets: Add 1 tablespoon of chopped fresh parsley or chives to the chicken mixture. You can also add a teaspoon of dried oregano or thyme to the batter for extra flavor.
- Gluten-Free Nuggets: Use gluten-free all-purpose flour and cornstarch instead of regular flour. Ensure the Worcestershire sauce is gluten-free. The club soda is naturally gluten-free.
- Air-Fryer Nuggets: After dredging in cornstarch and batter, place the nuggets in a single layer in the air fryer basket. Spray lightly with oil and cook at 400°F (200°C) for 10-12 minutes, flipping halfway, until golden and cooked through.
Storage and make-ahead
- Fridge
- Store leftover nuggets in an airtight container in the refrigerator for up to 3 days. Keep the sauce in a separate container.
- Freezer
- Freeze cooked nuggets in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- To reheat, place frozen nuggets on a baking sheet in a 400°F (200°C) oven for 10-12 minutes, or until hot and crispy.
Leftover nuggets can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a 400°F (200°C) oven for 5-7 minutes, or until hot and crispy. Avoid microwaving, as it will make the coating soggy.
The nugget mixture and sauce can be prepared a day in advance. Shape the patties and refrigerate them covered. The sauce can be made and stored in the refrigerator.
When ready to cook, bring the patties to room temperature for about 15 minutes, then dredge, batter, and fry as directed.
Serving ideas
Serve these nuggets hot with the creamy pepper sauce for dipping. They are perfect on their own as a snack or appetizer, or as a main dish with sides like crinkle-cut fries, coleslaw, or a simple green salad. The sauce is also great on burgers or as a sandwich spread.
For a fun presentation, pile the nuggets in a basket lined with checkered paper and serve with extra sauce on the side.
They are great for parties, game days, or family dinners. The nuggets are best enjoyed fresh, but any leftovers can be reheated in an oven or air fryer.

Crispy Homemade Chicken Nuggets with Creamy Pepper Sauce

Ingredients
- 2 lb boneless skinless chicken breast, cut into chunks
- 1 large egg
- 1 tbsp garlic powder
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp salt
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 1/2 cups ice-cold club soda
- 1 cup cornstarch, for dredging
- Vegetable oil, for frying, to taste
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 1 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1/2 tsp cracked black pepper
Instructions
- Place the chicken breast chunks, egg, garlic powder, smoked paprika, black pepper, and salt in a food processor. Pulse until the chicken is finely ground and the mixture comes together into a cohesive paste. Be careful not to overprocess; it should hold together when pressed.
- Transfer the chicken mixture to a plate or baking sheet. Shape into small nugget patties, about 2 inches in diameter and 1/2 inch thick. Refrigerate the patties for 20 minutes to firm them up; this helps them hold together during frying.
- In a large bowl, whisk together the all-purpose flour and baking soda. Whisk in the ice-cold club soda until the batter is smooth and lump-free. The batter should be thin enough to coat the back of a spoon but thick enough to cling to the nuggets.
- Pour about 2 inches of vegetable oil into a deep skillet or Dutch oven. Heat over medium-high heat until a deep-fry thermometer registers 375°F (190°C). Adjust the heat as needed to maintain the temperature.
- Place the cornstarch in a shallow dish. Working in batches, dredge each chilled nugget in the cornstarch, shaking off excess. Then dip the nugget into the batter, letting any excess drip off, and carefully place it into the hot oil.
- Fry the nuggets in batches, without crowding the pan, for 3 to 4 minutes per side, until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C). Use a slotted spoon to transfer the nuggets to a wire rack set over a baking sheet. Let the oil return to 375°F (190°C) between batches.
- In a small bowl, whisk together the mayonnaise, ketchup, Worcestershire sauce, garlic powder, and cracked black pepper until smooth and pink. Cover and refrigerate until ready to serve.
- Pile the hot nuggets on a plate lined with checkered paper or a clean kitchen towel. Serve immediately with the creamy pepper sauce on the side for dipping. Add crinkle-cut fries and Texas toast for a complete meal.
