Before you start

Before starting, cut the chicken breast into chunks and gather all ingredients. Set up a deep skillet or Dutch oven with oil and a thermometer. Have a wire rack over a baking sheet ready for the fried nuggets.

Prepare the sauce by whisking together the mayonnaise, ketchup, Worcestershire, garlic powder, and cracked pepper. Keep the club soda in the fridge until the last minute to ensure it's ice-cold.

Ingredients at a glance (16)
  • 2 lb boneless skinless chicken breast, cut into chunks
  • 1 large egg
  • 1 tbsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 cups ice-cold club soda
  • 1 cup cornstarch, for dredging
  • Vegetable oil, for frying, to taste
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp cracked black pepper

Instructions

Prepare the Nugget Mixture

  1. Make the Nugget Mixture
Place the chicken breast chunks, egg, garlic powder, smoked paprika, black pepper, and salt in a food processor. Pulse until the chicken is finely ground and the mixture comes together into a cohesive paste. Be careful not to overprocess; it should hold together when pressed.
Look for The mixture should be smooth and slightly sticky, but not pasty.
Tip If the mixture is too wet, add a tablespoon of flour.
  2. Shape and Chill
Transfer the chicken mixture to a plate or baking sheet. Shape into small nugget patties, about 2 inches in diameter and 1/2 inch thick. Refrigerate the patties for 20 minutes to firm them up; this helps them hold together during frying.
Look for The patties should be firm and hold their shape when picked up.
Tip Chilling is essential for the coating to adhere properly.
  3. Prepare the Batter
In a large bowl, whisk together the all-purpose flour and baking soda. Whisk in the ice-cold club soda until the batter is smooth and lump-free. The batter should be thin enough to coat the back of a spoon but thick enough to cling to the nuggets.
Look for The batter should be smooth and slightly bubbly.
Tip Keep the club soda ice-cold for a lighter, crispier coating.

At the end of this phase, the chicken mixture should be smooth and slightly sticky, but not pasty. The patties should hold their shape when handled.

The batter should be smooth and lump-free, with a consistency similar to thin pancake batter. The nuggets are now ready for frying.

Fry the Nuggets

  1. Heat the Oil
Pour about 2 inches of vegetable oil into a deep skillet or Dutch oven. Heat over medium-high heat until a deep-fry thermometer registers 375°F (190°C). Adjust the heat as needed to maintain the temperature.
Look for The oil should shimmer and a small piece of batter should sizzle immediately.
Tip Use a thermometer for accuracy; too hot and the coating burns, too cool and it absorbs oil.
  2. Dredge and Batter
Place the cornstarch in a shallow dish. Working in batches, dredge each chilled nugget in the cornstarch, shaking off excess. Then dip the nugget into the batter, letting any excess drip off, and carefully place it into the hot oil.
Look for The nuggets should be evenly coated with batter.
Tip Keep the nuggets cold until just before frying to ensure a crispy crust.
  3. Fry the Nuggets
Fry the nuggets in batches, without crowding the pan, for 3 to 4 minutes per side, until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C). Use a slotted spoon to transfer the nuggets to a wire rack set over a baking sheet. Let the oil return to 375°F (190°C) between batches.
Look for The nuggets should be deep golden brown and crispy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcrowd; fry in small batches for even cooking.

The nuggets should be golden brown and crispy, with no raw spots. The oil temperature should remain steady at 375°F (190°C). The nuggets should feel firm to the touch and the coating should be crunchy. Work in batches to avoid lowering the oil temperature.

Make the Sauce and Serve

  1. Make the Sauce
In a small bowl, whisk together the mayonnaise, ketchup, Worcestershire sauce, garlic powder, and cracked black pepper until smooth and pink. Cover and refrigerate until ready to serve.
Look for The sauce should be smooth and a light pink color.
Tip For a spicier sauce, add a pinch of cayenne pepper.
  2. Serve the Nuggets
Pile the hot nuggets on a plate lined with checkered paper or a clean kitchen towel. Serve immediately with the creamy pepper sauce on the side for dipping. Add crinkle-cut fries and Texas toast for a complete meal.
Look for The nuggets should be hot and crunchy.
Tip Serve with extra sauce on the side for dipping.

The sauce should be smooth and pink, with a balance of tangy, creamy, and peppery flavors. The nuggets should be piled high on a serving plate, hot and crispy. Serve immediately with the sauce on the side for dipping.

Common mistakes

A common mistake is overprocessing the chicken, which can make the mixture gummy. Pulse just until combined.

Another pitfall is frying at the wrong temperature: if the oil is too hot, the coating burns before the chicken cooks; if too cool, the nuggets absorb oil and become greasy. Always use a thermometer and adjust the heat to maintain 375°F (190°C).

How to tell it’s done

The nuggets are done when they are deep golden brown and crispy on the outside, and the internal temperature of the chicken reaches 165°F (74°C) on an instant-read thermometer.

If you don't have a thermometer, cut one nugget open to ensure the meat is opaque and no longer pink. The coating should be crunchy and the meat juicy and tender.

  • Egg dishes: 160°F (71°C) in the thickest part
