Tips for success
For the crispiest exterior, don’t skip the butter—it promotes even browning and adds richness. If you don’t have a panini press, use a heavy skillet and press the wrap down with a spatula or another pan.
Make sure the pan is hot before adding the wrap so it sears immediately. Let the cooked wraps rest for a couple of minutes before cutting to keep the filling intact.
The garlic toum sauce is key to the flavor—it’s creamy, garlicky, and a little tangy. If you can’t find it, make a quick version by blending garlic, lemon juice, and oil until thick.
You can also use a mixture of mayonnaise and minced garlic for a milder sauce. Adjust the amount of pickles to your taste; they add a nice tangy crunch that cuts through the richness.
Variations
- Spicy Shawarma: Add 1 teaspoon of red pepper flakes or a chopped chili to the marinade for heat. Drizzle with hot sauce before rolling. The spice complements the creamy garlic sauce and pickles.
- Vegetarian Version: Replace the chicken with thick slices of halloumi or grilled portobello mushrooms. Marinate the mushrooms in the same spice mixture and sear until tender. The rest of the assembly stays the same.
- Chicken Shawarma Bowl: Skip the flatbread and serve the chicken, pickles, and mozzarella over rice or salad. Drizzle with garlic sauce and top with fresh herbs. This turns the wrap into a hearty bowl.
- Garlic Herb Wrap: Mix 2 tablespoons of chopped fresh parsley and 1 tablespoon of dill into the garlic toum sauce. The herbs add freshness and color. Use this herbed sauce in place of plain garlic toum.
Storage and make-ahead
- Fridge
- Store leftover wraps in an airtight container in the refrigerator for up to 3 days. Place a paper towel inside to absorb moisture and keep the bread crisp.
- Freezer
- Freeze assembled, untoasted wraps for up to 2 months. Wrap each in plastic wrap and then foil. Thaw overnight in the refrigerator before toasting.
- Reheat
- Reheat leftover wraps in a skillet over medium heat for 2-3 minutes per side, or in a toaster oven at 350°F until crispy and hot.
Store leftover wraps in an airtight container in the refrigerator for up to 3 days. To keep them from getting soggy, place a paper towel in the container to absorb excess moisture. Reheat in a skillet or toaster oven to restore crispness. The filling can also be stored separately and used for salads or rice bowls.
The chicken can be marinated up to 24 hours in advance, which deepens the flavor. The cooked chicken can be made ahead and kept in the refrigerator for up to 3 days; reheat it before assembling the wraps.
You can also assemble the wraps (without toasting) a few hours ahead, then toast just before serving. Store assembled wraps in the refrigerator with plastic wrap to prevent drying.
Serving ideas
Serve the wraps warm, cut in half to show the cross-section. A side of extra garlic toum sauce for dipping is essential. Pair with a simple cucumber salad or roasted vegetables for a complete meal. The wraps are also great for picnics or lunchboxes—just keep the sauce separate to avoid sogginess.
For a fun dinner spread, set out the wraps with bowls of pickles, extra cheese, and hot sauce so everyone can customize their own.
These wraps are hearty enough to be a meal on their own, but they also work well as an appetizer if cut into smaller pieces. The combination of textures and flavors makes them a crowd-pleaser for any occasion.

Crispy Garlic Cheese Chicken Shawarma Wrap

Ingredients
- 2 lb boneless, skinless chicken thighs, sliced
- 1/2 cup Greek yogurt
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp ground cardamom
- 1/2 tsp ground turmeric
- 1 tsp salt
- 2 tbsp lemon juice
- 1/2 cup garlic toum sauce
- 4 large pita or flatbread
- 1 cup pickled cucumbers, sliced
- 1 1/2 cups shredded mozzarella
- 2 tbsp butter, softened
Instructions
- In a large bowl, combine the Greek yogurt, 2 tablespoons of olive oil, minced garlic, cumin, coriander, smoked paprika, cardamom, turmeric, salt, and lemon juice. Add the sliced chicken thighs and toss until every piece is coated. Cover and refrigerate for at least 30 minutes, or up to overnight.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over high heat until shimmering. Add the marinated chicken in a single layer, working in batches if needed. Cook without stirring for 3 to 4 minutes, then flip and cook for another 3 to 4 minutes, until the edges are charred and the chicken is cooked through.
- Lay a pita or flatbread on a clean work surface. Spread a generous layer of garlic toum sauce over the center. Add a portion of the hot cooked chicken, followed by pickled cucumbers and a sprinkle of shredded mozzarella. Fold in the sides and roll tightly, like a burrito.
- Brush the outside of each wrap with softened butter. Heat a panini press or a large grill pan over medium heat. Place the wraps seam-side down and press gently. Cook for 2 to 3 minutes per side, until golden brown and crispy, and the cheese is melted.
- Transfer the toasted wraps to a cutting board and let them rest for 2 minutes. Slice each wrap diagonally in half. Serve immediately with extra garlic toum sauce on the side for dipping.
