Tips for success
For the crispiest chicken, use a thermometer to monitor the oil temperature and keep it around 350°F (175°C).
If the oil is too hot, the coating will burn before the chicken cooks; if too cool, the chicken will absorb oil and become greasy. Let the chicken rest for at least 5 minutes after frying to allow the juices to redistribute.
To make the salad ahead, keep the components separate: cooked pasta, chopped romaine, dressing, and fried chicken.
Toss everything together just before serving to keep the romaine crisp and the chicken crunchy. You can also warm the chicken briefly in a skillet or oven before adding it to the salad.
Variations
- Grilled Chicken Caesar Pasta Salad: Skip the breading and frying. Season chicken breasts with salt, pepper, and lemon zest, then grill or pan-sear until cooked through. Slice and serve over the salad.
- Shrimp Caesar Pasta Salad: Replace the chicken with large shrimp, seasoned and sautéed in a hot skillet with olive oil and garlic. Cook until pink and opaque, about 2-3 minutes per side.
- Vegetarian Caesar Pasta Salad: Omit the chicken entirely and add crispy chickpeas or roasted tofu for protein. Toss with the Caesar dressing and top with extra Parmesan.
- Spicy Chicken Caesar Pasta Salad: Add 1/2 teaspoon of cayenne pepper or red pepper flakes to the panko mixture for a kick of heat. You can also drizzle with hot sauce before serving.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 2 days. Keep dressing separate if possible.
- Freezer
- Freeze the cooked chicken strips in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- To reheat, place the chicken strips on a baking sheet and warm in a 400°F (200°C) oven for 5-7 minutes, or until heated through and crispy.
Store leftover salad in an airtight container in the refrigerator for up to 2 days. The chicken may lose its crunch, but the flavors will still be good. Keep the dressing separate if you plan to store leftovers, and toss again before serving.
You can bread the chicken up to a day ahead and keep it covered in the refrigerator. Cook the pasta and chop the romaine a few hours in advance. Fry the chicken just before serving for the best texture.
Serving ideas
Serve this salad as a main course for lunch or dinner. It pairs well with garlic bread or a simple side of roasted vegetables.
For a lighter meal, you can reduce the pasta and add more romaine. The dish is also great for potlucks—just keep the dressing and chicken separate until serving.
For a more substantial meal, add cherry tomatoes, cucumber, or red onion. You can also swap the Caesar dressing for a creamy ranch or a balsamic vinaigrette.
The crispy chicken strips are versatile enough to be used in wraps or sandwiches the next day.

Crispy Chicken Caesar Pasta Salad

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups panko breadcrumbs
- 1 tbsp lemon zest
- 1 tsp dried Italian herbs
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup vegetable oil, for frying
- 6 cups chopped romaine lettuce
- 8 oz short pasta (such as penne or rotini)
- 3/4 cup Caesar dressing
- 1/4 cup shaved Parmesan cheese
Instructions
- Place the chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness. Set up three shallow dishes: one with flour, salt, and pepper; one with beaten eggs; and one with panko mixed with lemon zest and dried herbs. Working one piece at a time, dredge the chicken in flour, shaking off excess, dip in egg, then press into the panko mixture until evenly coated.
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse briefly with cool water to stop cooking. Set aside to cool completely.
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Carefully place the breaded chicken in the hot oil and cook until deep golden brown and cooked through, about 3-4 minutes per side. Use a meat thermometer to check that the thickest part reaches 165°F (74°C). Transfer to a wire rack and let rest for 5 minutes before slicing.
- Once the chicken has rested, slice it into strips against the grain. The crust should crunch as the knife cuts through, revealing juicy, tender meat inside.
- In a large salad bowl, combine the cooled pasta and chopped romaine lettuce. Pour the Caesar dressing over the top and toss with tongs until every piece is evenly coated.
- Top the salad with the hot sliced crispy chicken and shaved Parmesan. Serve immediately while the chicken is still warm and crunchy.
