Tips for success

For an even more intense flavor, try adding a pinch of smoked paprika to the brown sugar and cayenne mixture. This enhances the smoky notes already present in the bacon and barbecue sauce. If you prefer a sharper heat, you can increase the amount of cayenne pepper or add a dash of your favorite hot sauce to the barbecue glaze before brushing it onto the bacon-wrapped tots.

Presentation is key for these appetizers. Arrange them on a slate platter or a dark wooden board for a rustic, gastropub-style look. Serving them with a side of cool ranch dressing provides a necessary temperature and flavor contrast to the hot, spicy bombs.

A garnish of freshly chopped chives adds a pop of color and a mild onion flavor that cuts through the richness of the cheese and bacon.

Variations

  • Sweet Heat Glaze: Replace the barbecue sauce with a mixture of honey and sriracha for a different kind of sweet and spicy finish that pairs perfectly with the melted cheese.
  • Garlic Herb Variation: Add a teaspoon of garlic powder to the brown sugar mix and garnish with chopped parsley instead of chives for a more savory, aromatic flavor profile.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure they are fully cooled before refrigerating.
Freezer
Freezing is not recommended as it will ruin the texture of the tater tots and the crispness of the bacon.
Reheat
Reheat in an oven or toaster oven at 350°F (175°C) for 8-10 minutes until heated through and the bacon is crisp again.

Store any leftover tater tot bombs in an airtight container in the refrigerator for up to 3 days. Ensure they are cooled to room temperature within 2 hours of cooking before placing them in the fridge to maintain food safety. While they are best enjoyed fresh, they can be kept for a short period, although the bacon will lose some of its signature crispness over time.

You can assemble the tater tot bombs up to 24 hours in advance. Keep them on a tray covered with plastic wrap in the refrigerator until you are ready to bake.

Do not apply the brown sugar and cayenne coating or the barbecue glaze until just before you put them in the oven. This prevents the sugar from drawing out moisture and making the bacon soggy before it even hits the heat.

Serving ideas

These bombs are designed to be served hot, directly from the oven. Arrange them on a platter with a small bowl of ranch dressing in the center for dipping.

Provide extra toothpicks or small napkins, as they are a finger food that can be slightly messy due to the molten cheese and sticky barbecue glaze. They pair excellently with a variety of game-day beverages, from cold sodas to craft beers.

For a larger crowd, consider doubling the batch size and baking on two separate sheets to avoid overcrowding. Overcrowding can lead to steaming rather than roasting, which will prevent the bacon from achieving that essential crispy texture.

If serving at a party, keep them warm in a chafing dish or a low-temperature oven, but be aware that the bacon may soften slightly if held for too long.

Frequently asked questions

Can the tater tot bombs be made without the toothpicks?
It is not recommended to omit the toothpicks as they are essential for keeping the bacon wrapped tightly around the potato. Without them, the bacon will likely unroll during the baking process, causing the cheese to leak out and the bombs to lose their shape.
Why is it important to use thawed tater tots?
Thawed tater tots are significantly more pliable than frozen ones. This flexibility allows you to easily mold them around the cheese cube without the potato breaking apart. If you try to use frozen tots, they will be brittle and difficult to shape into a tight ball.
Can a different type of cheese be used?
Yes, you can substitute the Monterey Pepper Jack with other melting cheeses like sharp cheddar, mozzarella, or even a smoked gouda. Choose a cheese that melts well to ensure that satisfying cheese pull when you take a bite.

Ingredients

  • 12 thawed tater tots
  • 4 oz monterey pepper jack cheese, cut into 1.5cm cubes
  • 6 strips thin-cut smoky bacon, halved
  • 2 tbsp brown sugar
  • 1 tsp cayenne pepper
  • 3 tbsp bourbon barbecue sauce
  • cool ranch dressing for serving
  • fresh chives for serving

Instructions

  1. Press three thawed tater tots around each 1.5cm cube of Monterey Pepper Jack cheese to form a tight, uniform ball. Wrap each potato ball securely with a half-strip of smoky bacon, fastening the end with a toothpick to ensure it stays in place during the baking process.
  2. Roll each assembled bacon-wrapped ball in a mixture of brown sugar and cayenne pepper until evenly coated. Arrange the balls on a wire rack set over a baking sheet and bake at 400°F (200°C) for 22 minutes. This initial bake renders the fat from the bacon and begins the crisping process.
  3. Remove the baking sheet from the oven and brush each bomb thoroughly with the bourbon barbecue sauce. Return to the oven for an additional 4 minutes, or until the bacon reaches a crispy texture and the sugar has fully caramelized into a sticky, glossy coating. Ensure the bacon reaches a safe internal temperature of 160°F (71°C). Let rest for 5 minutes before serving with ranch and chives.
