Before you start

Before beginning, ensure all ingredients are measured and ready. If the tater tots are frozen, allow them to sit at room temperature for about 30 minutes to thaw until they are pliable enough to press.

Preheat the oven to 400°F (200°C) and prepare a baking sheet by placing a wire rack on top. Have your toothpicks, brown sugar, cayenne, and barbecue sauce accessible on the counter to streamline the assembly and glazing process.

Ingredients at a glance (8)
  • 12 thawed tater tots
  • 4 oz monterey pepper jack cheese, cut into 1.5cm cubes
  • 6 strips thin-cut smoky bacon, halved
  • 2 tbsp brown sugar
  • 1 tsp cayenne pepper
  • 3 tbsp bourbon barbecue sauce
  • cool ranch dressing for serving
  • fresh chives for serving

Instructions

Assembly of the Potato Bombs

  1. Assemble the bombs
Press three thawed tater tots around each 1.5cm cube of Monterey Pepper Jack cheese to form a tight, uniform ball. Wrap each potato ball securely with a half-strip of smoky bacon, fastening the end with a toothpick to ensure it stays in place during the baking process.
Look for The tater tots should be fully enclosed around the cheese cube and the bacon should be wrapped tightly.
Tip Ensure the tater tots are fully thawed so they are pliable enough to mold without crumbling.

At the end of this phase, you should have uniform, tightly wrapped balls. Each bomb should be securely held together by the bacon and a toothpick.

Check that the cheese is fully enclosed by the potato mixture so it does not leak out during the baking phase, which is crucial for maintaining the structural integrity of the final product.

Initial Oven Baking

  1. Season and bake
Roll each assembled bacon-wrapped ball in a mixture of brown sugar and cayenne pepper until evenly coated. Arrange the balls on a wire rack set over a baking sheet and bake at 400°F (200°C) for 22 minutes. This initial bake renders the fat from the bacon and begins the crisping process.
Look for The bacon should begin to shrink and the sugar should start to look slightly melted.
Tip Use a wire rack to allow heat to circulate under the bacon for maximum crispiness.

The bombs should look slightly shrunken and the bacon should have started to render its fat. The sugar and cayenne coating should be slightly darkened and aromatic. This phase prepares the bacon for the final glaze. Ensure the bacon is not yet completely crispy, as it needs to remain receptive to the barbecue sauce finish.

Glazing and Final Crisping

  1. Glaze and finish
Remove the baking sheet from the oven and brush each bomb thoroughly with the bourbon barbecue sauce. Return to the oven for an additional 4 minutes, or until the bacon reaches a crispy texture and the sugar has fully caramelized into a sticky, glossy coating. Ensure the bacon reaches a safe internal temperature of 160°F (71°C). Let rest for 5 minutes before serving with ranch and chives.
Look for The glaze should be bubbling and sticky, and the bacon should be deep golden brown.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Watch carefully during the final 4 minutes to prevent the sugar in the barbecue sauce from burning.

The bombs should now be coated in a glossy, sticky layer of barbecue sauce. The bacon should be dark golden brown and crispy to the touch. When pulled apart, the center should reveal a stretch of melted Pepper Jack cheese. Check that the glaze is caramelized and not burnt before removing from the oven.

Common mistakes

Avoid overstuffing the tater tots with too much cheese, as this can cause them to burst during baking. Another common mistake is using bacon that is too thick, which may not crisp up sufficiently in the allotted time.

Ensure the bacon is wrapped tightly and secured with toothpicks so it does not unroll. Finally, do not skip the wire rack, as baking directly on a flat sheet will cause the bottoms to become soggy from the rendered bacon fat.

How to tell it’s done

The tater tot bombs are done when the bacon is deeply browned, crispy, and the glaze is sticky and caramelized. The internal temperature of the bacon-wrapped exterior, which acts as a ground meat product due to the bacon fat and potato mixture, should reach 160°F (71°C).

The cheese inside should be completely molten and gooey when pulled apart. Let the dish rest for at least 5 minutes before serving to ensure the cheese sets slightly and does not burn anyone.

  • Ground meat: 160°F (71°C) in the thickest part
