Tips for success
For an even crunchier texture, ensure that your sushi rice is cooled to room temperature before assembling. Using hot rice will cause the nori to soften immediately, making the folding process difficult.
If you are in a rush, spread the cooked rice on a flat tray to let the steam escape quickly before using it in your wraps.
Experiment with the placement of your ingredients to see what works best for your folding style. Some cooks prefer placing the protein in the center of the quadrant, while others prefer a more layered approach.
Regardless of the layout, the most important rule is to keep the ingredient amounts balanced so the final triangle remains flat and cooks evenly on both sides.
Variations
- Spicy Tuna Version: Replace the teriyaki salmon with canned tuna mixed with a little sriracha and sesame oil. Add thinly sliced jalapeños to the filling for an extra kick of heat that pairs perfectly with the creamy avocado.
- Vegetarian Crunch: Omit the salmon and use marinated tofu or extra avocado to fill the quadrants. Add shredded carrots and pickled ginger for a bright, acidic flavor profile that keeps the dish light and refreshing.
Storage and make-ahead
- Fridge
- Store any leftover components in airtight containers in the refrigerator for up to 24 hours. Do not store assembled wraps.
- Reheat
- Reheat in the air fryer at 350°F (175°C) for 2-3 minutes until warm and crisp, though fresh is always best.
These wraps are best enjoyed immediately after cooking to maintain the crisp texture of the nori. If you must store them, place them in an airtight container, but be aware that the seaweed will inevitably soften due to the moisture from the fillings.
They can be kept in the refrigerator for up to one day, but they will not retain their original crunch.
You can prepare the filling components, such as the teriyaki salmon, cucumber ribbons, and sushi rice, up to one day in advance and store them in the refrigerator.
However, do not assemble the wraps until you are ready to fry them. Storing assembled wraps leads to soggy nori and a less-than-ideal texture, so keep the components separate until the last possible moment.
Serving ideas
Serve these crispy wraps immediately after drizzling with eel sauce and spicy mayo. They are best eaten with your hands, allowing you to experience the contrast between the crunchy exterior and the flavorful filling. Providing small napkins is recommended, as the sauces can be a bit messy during the first few bites.
For a more complete meal, consider serving these alongside a simple side salad with a light ginger dressing or a cup of miso soup. The freshness of the salad complements the richness of the cream cheese and salmon, providing a balanced dining experience that highlights the unique textures of the air-fried nori.
