Before you start

Before you begin, ensure all your ingredients are prepped and ready to go. Slice your avocado thinly, create uniform cucumber ribbons using a peeler, and break your teriyaki salmon into bite-sized pieces.

Having everything organized in bowls nearby makes the assembly phase much faster, which is crucial since the nori can soften if it sits out for too long after being cut. Ensure your air fryer is clean and ready, and if your model requires preheating, start that process now so it is at the correct temperature when you are ready to cook.

Ingredients at a glance (9)
  • 4 sheets nori seaweed sheets
  • 100 g cooked sushi rice
  • 80 g teriyaki salmon chunks
  • 1 whole avocado, sliced
  • 1 medium cucumber, cut into ribbons
  • 20 g cream cheese
  • 1 tbsp avocado oil spray
  • eel sauce, for serving
  • spicy mayo, for serving

Instructions

Prep and Cut

  1. Prepare the nori
Place each nori sheet on a clean cutting board. Using a sharp knife, make a single straight cut from the center of the bottom edge halfway up the sheet to allow for folding into quadrants.
Look for The cut should be perfectly centered and reach exactly to the middle of the sheet.
Tip Keep the nori dry until you are ready to assemble to ensure the crispest final texture.

At the end of this phase, you should have your nori sheets prepared with a clean, centered slit that allows for easy folding. The sheets should be laid flat on your workspace, ready for the filling. Check that your knife is sharp to avoid ragged edges on the seaweed, as clean lines ensure the final triangle shape remains intact and secure during the cooking process.

Fill and Fold

  1. Assemble the quadrants
Divide the sushi rice, teriyaki salmon chunks, sliced avocado, cucumber ribbons, and cream cheese among the four quadrants of each nori sheet. Ensure ingredients are spread thinly to allow for easy folding.
Look for Ingredients should be layered neatly so the wrap stays compact and secure during the folding process.
Tip Avoid overfilling the quadrants, as this makes the sheets difficult to fold and may cause them to tear.

The quadrants should be filled with a thin, even layer of rice, salmon, avocado, cucumber, and cream cheese. When you finish folding, you should have a compact, neat triangle that feels sturdy. Ensure that none of the filling is leaking out from the edges; if it is, simply adjust the portion size of your ingredients before proceeding to the air fryer.

Air Fry to Crisp

  1. Fold and air fry
Fold the nori into a triangle by overlapping the quadrants. Lightly spray the exterior with avocado oil. Air fry at 390°F (199°C) for 5 minutes until crispy. Ensure the salmon is heated through to 145°F (63°C). Drizzle with eel sauce and spicy mayo before serving.
Look for The seaweed should look dark and crisp, and the edges should feel firm to the touch.
Safe temperature 145°F (63°C) internal temperature (fish)
Tip Check the wraps halfway through to ensure they do not open while air frying.

The wraps should come out of the air fryer with a deep, crisp texture on the outside and a warm, cohesive interior. The seaweed should be slightly darker than when it went in, and the internal salmon should reach 145°F (63°C).

If the wraps are still soft, give them another minute of frying. Once they are perfectly crispy, finish with the sauces and serve immediately.

Common mistakes

A common mistake is overstuffing the quadrants, which makes the wrap impossible to fold and can lead to it falling apart in the air fryer basket. Another error is leaving the nori out too long before frying; the seaweed is hygroscopic and will absorb moisture from the filling, losing its crispness.

Always work efficiently and move the wraps directly to the air fryer once folded. Finally, avoid using too much sauce inside the wrap, as excess moisture will steam the seaweed from the inside out, preventing it from getting that signature crunch.

How to tell it’s done

The sushi wraps are done when the nori is visibly crispy and golden-brown on all edges. When you gently press the side, it should feel firm and hold its shape. The salmon must be heated through to an internal temperature of 145°F (63°C).

Because the filling includes delicate items like avocado and cream cheese, you do not want to cook them for too long, or the texture will become overly mushy. The goal is a hot, crunchy exterior with a warm, creamy interior that holds together perfectly.

  • Fish: 145°F (63°C) in the thickest part
