Tips for success

For the most flavorful mushrooms, sear them in a single layer over high heat and resist the urge to stir too often. Let them develop a deep golden-brown crust before turning. This caramelization adds a nutty, savory depth that carries through the whole dish.

If your pan is small, cook the mushrooms in batches to avoid steaming them. Reserve some of the best-looking mushrooms for the garnish—they will be the star of the final presentation.

The mantecatura is the most important step for achieving a creamy texture. Use cold butter and cheese, and stir them into the hot risotto off the heat. The residual warmth melts them slowly, creating an emulsion that coats every grain.

Do not rush this step; stir for a full minute or two until the risotto is glossy and thick. If the risotto becomes too thick, loosen it with a splash of hot broth. Taste and adjust seasoning just before serving.

Variations

  • Chicken and Mushroom: Add 1 cup of shredded cooked chicken along with the mushrooms for a heartier version. Stir it in during the last few minutes of cooking so it warms through without drying out.
  • Pea and Mint: Fold in 1 cup of frozen peas and 2 tablespoons of chopped fresh mint during the mantecatura for a fresh, spring-like twist. The sweetness of the peas pairs beautifully with the creamy rice.
  • Truffle and Porcini: Soak 15 g of dried porcini mushrooms in hot water, then chop and add them with the fresh mushrooms. Use the strained soaking liquid as part of the broth for an intense, earthy flavor.
  • Butternut Squash: Add 1 cup of roasted butternut squash cubes in place of half the mushrooms. Mash some of the squash into the risotto during the mantecatura for added creaminess and a hint of sweetness.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 2 days. Reheat with a splash of broth or water to restore creaminess.
Freezer
Freezing is not recommended as the texture will become grainy upon thawing.
Reheat
Reheat gently on the stovetop over medium-low heat, stirring in a splash of broth or water until hot and creamy.

Store leftover risotto in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop with a splash of broth or water to restore the creamy texture.

The risotto will thicken as it cools; adding liquid when reheating helps bring it back to a silky consistency. For best results, reheat only the amount you plan to eat, as repeatedly reheating can affect the texture.

Risotto is best served immediately after cooking, but the mushrooms can be seared a few hours ahead and kept at room temperature, then reheated briefly before serving. The broth can also be prepared in advance and kept warm.

However, cooking the rice fully ahead is not recommended, as the texture will suffer. If needed, you can par-cook the risotto for about 10 minutes, then finish it just before serving, but the final result will be less creamy.

Serving ideas

Serve the risotto as a main course for four, or as a luxurious side dish for a special dinner. Spoon it onto warm plates, tap the bottom to spread it into a silky layer, and top with the reserved seared mushrooms, a crack of black pepper, and a drizzle of truffle oil. The dish is rich and satisfying, so pair it with a light green salad or steamed asparagus to balance the creaminess.

For a complete Italian meal, serve this risotto as a primo, followed by a simple main of roasted chicken or fish. A crisp white wine, such as a Gavi or Pinot Grigio, complements the earthy mushrooms and creamy cheese. The risotto is best enjoyed immediately, while it is still hot and flowing. If you have leftovers, they can be formed into arancini or pan-fried patties the next day.

Frequently asked questions

Can this risotto be made without wine?
Yes, the wine adds acidity and depth, but it can be omitted. Replace it with an equal amount of hot broth and add a teaspoon of lemon juice or white wine vinegar at the end to brighten the flavors.
Why does the risotto turn out gummy?
Gummy risotto is usually the result of stirring too vigorously or cooking at too high a heat. Use a gentle stirring motion and keep the liquid at a steady simmer. Also, avoid overworking the rice after it is cooked; the mantecatura should be brief and gentle.
Can this recipe be doubled?
Yes, but it is best to cook it in two batches to ensure even cooking and proper texture. If using a very large pan, you can double the ingredients, but be prepared to stir more often and possibly add extra broth.
What is the best rice for risotto?
Carnaroli rice is ideal because of its high starch content and firm grains. Arborio is a common substitute and works well, though the texture may be slightly softer. Vialone Nano is another good option that cooks faster.
How can this be made dairy-free?
Use olive oil instead of butter, and replace the Parmesan and Taleggio with dairy-free cheese alternatives. Nutritional yeast can add a cheesy flavor. The texture will be slightly different, but it will still be creamy if you stir well.

Creamy Truffle Wild Mushroom & Taleggio Risotto

Creamy wild mushroom and Taleggio risotto topped with seared chanterelles and truffle oil in a skillet

Ingredients

  • 300 g mixed wild mushrooms (such as chanterelles, cremini, shiitake), sliced
  • 1 tbsp unsalted butter
  • Kosher salt, to taste
  • 2 sprigs fresh thyme
  • 2 tbsp extra-virgin olive oil
  • 1 shallot, minced
  • 300 g Carnaroli rice
  • 1/2 cup dry white wine
  • 5-6 cups hot vegetable or chicken broth
  • 2 tbsp cold unsalted butter, cubed
  • 1/2 cup freshly grated Parmesan cheese
  • 150 g Taleggio cheese, rind removed, cubed
  • 1-2 tsp truffle oil, for drizzling
  • Cracked black pepper, for serving

Instructions

  1. Heat a large heavy-bottomed skillet over high heat. Add 1 tablespoon of butter and let it melt until foaming. Add the sliced wild mushrooms in a single layer, season with a pinch of kosher salt, and add the thyme sprigs. Cook without stirring too often, allowing the mushrooms to develop a deep golden-brown crust. After about 5–7 minutes, when the mushrooms are caramelized and fragrant, transfer half of them to a plate to use as garnish later. Keep the remaining mushrooms in the skillet for the risotto base.
  2. Reduce the heat to medium. Add the olive oil to the skillet with the remaining mushrooms. Add the minced shallot and cook, stirring frequently, until the shallot is softened and translucent, about 2–3 minutes. Scrape any browned bits from the bottom of the pan.
  3. Add the Carnaroli rice to the skillet and stir to coat every grain with the oil and butter. Toast the rice, stirring constantly, for about 2 minutes until the grains become translucent at the edges and make a faint clicking sound against the pan. Do not let the rice brown.
  4. Pour in the white wine. It will sizzle immediately and release a dramatic burst of steam. Stir constantly, scraping the bottom of the pan, until the wine is mostly absorbed by the rice, about 1–2 minutes.
  5. Begin adding the hot broth one ladle at a time, about 1/2 cup (120 ml) per addition. Stir gently and continuously, allowing each ladle of broth to be absorbed before adding the next. Maintain a steady simmer, not a boil. Continue this process for about 18 minutes, until the rice is creamy and al dente. You may not use all the broth; stop when the rice is tender but still has a slight bite.
  6. Remove the skillet from the heat. Stir in the cold cubed butter, freshly grated Parmesan, and cubed Taleggio cheese. Stir vigorously with a wooden spoon until the cheeses melt and the risotto becomes glossy and extra creamy. The texture should be loose and flowing, not stiff.
  7. Let the risotto rest off the heat for 1–2 minutes. Taste and adjust seasoning with salt if needed. The texture should be soft and flowing, but not soupy. If it seems too thick, stir in a splash of hot broth to loosen it.
  8. Spoon the risotto onto warm plates or a large serving platter. Tap the bottom of the plate gently to help the risotto spread into a silky, even layer. Top with the reserved seared mushrooms, a generous crack of black pepper, and a drizzle of truffle oil. Serve immediately while hot and creamy.
