Tips for success

To elevate the flavor, consider deglazing the slow cooker insert with a splash of white wine before adding the rice and water. This adds a subtle acidity that cuts through the richness of the parmesan and chestnuts. If you prefer a more intense chestnut flavor, you can toast the chopped chestnuts in a dry pan for a few minutes before adding them to the slow cooker to enhance their natural nuttiness.

For a beautiful presentation, reserve a small portion of the chopped chestnuts and a few shavings of parmesan to garnish each plate before serving. This provides a pleasant textural contrast and an inviting look.

Serving the risotto in wide, shallow bowls helps to keep the heat distributed evenly while allowing the aroma of the chestnuts and cheese to be fully appreciated by the diner with every bite taken.

Variations

  • Herbed Chestnut Risotto: Stir in two tablespoons of fresh chopped parsley or sage along with the parmesan cheese at the end of the cooking process to add a bright, herbaceous note to the dish.
  • Mushroom Chestnut Risotto: Add one cup of finely chopped cremini mushrooms at the beginning of the cooking process along with the shallots for an even deeper, earthier flavor profile that complements the chestnuts.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Reheat
Reheat in a saucepan over low heat, adding a splash of water or broth to restore creaminess, stirring frequently until heated through.

Allow any leftover risotto to cool to room temperature for no more than two hours before transferring it to an airtight container. Keep the container in the refrigerator to maintain freshness.

Because rice can dry out, add a tablespoon of water or broth when reheating to restore the creamy texture that is characteristic of a freshly prepared risotto. Consume within three days for the best quality and flavor.

While risotto is best served immediately, it can be prepared ahead of time if necessary. If you choose to do this, slightly undercook the rice by about 15 minutes.

When you are ready to serve, reheat the risotto on the stovetop with a little extra broth or water, stirring continuously until the rice is fully cooked and the desired creamy consistency is achieved. This ensures that the texture remains pleasant and not overly soft.

Serving ideas

Serve this chestnut and parmesan risotto as a comforting main course, perhaps accompanied by a crisp green salad with a light vinaigrette to balance the richness.

The earthy notes of the chestnuts pair beautifully with roasted vegetables or a simple side of steamed greens. Ensure each serving is plated while the risotto is still hot, as the starches will continue to set as it cools, changing the texture.

If desired, a drizzle of high-quality extra virgin olive oil or a pinch of freshly cracked black pepper can be added at the table to enhance the flavors further. The dish is hearty enough to stand alone, but it also works well as part of a larger Italian-inspired spread. Warm the serving plates beforehand to keep the risotto at the perfect temperature throughout the meal, enhancing the dining experience.

Frequently asked questions

Can arborio rice be replaced with another type of rice?
Arborio rice is highly recommended due to its unique ability to release starch, creating the signature creamy texture of risotto. Using long-grain or jasmine rice will result in a different, less cohesive dish that lacks the desired velvety consistency.
Why is it important to use hot water?
Using hot water allows the slow cooker to maintain a consistent temperature from the start. Cold water would require a significant amount of time to heat up, which could lead to uneven cooking and a longer wait time for the dish to be ready.
Is it possible to overcook the risotto in the slow cooker?
Yes, overcooking can cause the rice grains to become overly soft and lose their structure. It is important to monitor the cooking time and check the texture of the rice toward the end to ensure it remains al dente.
