Tips for success
The single best upgrade is grating the parmesan fresh from a wedge: it melts into the sauce silkily instead of leaving the faint graininess that pre-grated cheese can bring.
Keep the sauce at a lazy simmer rather than a rolling boil, and whisk the cream in gradually so the roux emulsifies it evenly. If the dish browns too fast in a hot oven, a loose foil tent for the final minutes protects the crust without steaming it.
Reserve the pasta water every time, even if the sauce looks right — a few tablespoons rescue a bake that tightened while the cheese layer was being spread.
For the most dramatic cheese pull at the table, serve straight from the baking dish within ten minutes of leaving the oven, when the mozzarella is still elastic. A thin metal spatula, rather than a spoon, cuts clean portions and lifts them without dragging the crust.
Variations
- Bacon and pea: Crisp 4 slices of bacon, chop them, and fold in with 1 cup of thawed frozen peas at the assembly stage. The bacon's smoke and the peas' sweetness play well against the garlic cream.
- Spicy arrabbiata style: Add 1 tsp red pepper flakes with the garlic and stir 1/2 cup of marinara into the sauce before folding. The bake takes on a rosy color and a gentle, building heat.
- Mushroom version: Sear 8 oz of sliced cremini mushrooms in the skillet before the chicken and set aside, then fold them back in at assembly for an earthy, deeper-flavored sauce.
- Lighter bake: Swap half the heavy cream for whole milk thickened with an extra tablespoon of flour, and reduce the mozzarella to 1 1/2 cups. The crust browns a little less but the flavor holds.
Storage and make-ahead
- Fridge
- Cover and refrigerate within 2 hours of baking; keeps up to 3 days.
- Freezer
- Freeze baked portions up to 2 months, well wrapped; the cream sauce may loosen slightly on thawing.
- Reheat
- Reheat covered at 350°F (175°C) for 15-20 minutes with a splash of milk, or microwave individual portions in 60-second bursts.
Cool leftovers at room temperature for no more than 2 hours, then cover the dish tightly or transfer portions to airtight containers. Refrigerate for up to 3 days. The sauce will thicken as the pasta continues to absorb it, which is normal; a splash of milk or broth loosens it when reheating.
Assemble the full dish — pasta, sauce, chicken and cheese layer — up to the point of baking, cover, and refrigerate for up to 24 hours.
Bake straight from the refrigerator, adding 10 to 15 minutes to the covered bake time, then uncover for the final minutes to brown the crust. Do not freeze the assembled dish with the cream sauce; it can separate.
Serving ideas
Serve the bake straight from the ceramic dish at the table, letting each person see the cheese pull as a portion is lifted. A crisp green salad with a sharp vinaigrette balances the richness, and garlicky bread or breadsticks are natural companions for the sauce left on the plate.
For a fuller spread, pair it with roasted broccoli or blistered green beans, both of which stand up to the creamy sauce.
Portion with a thin metal spatula so each serving carries crust, sauce and chicken together. This dish comfortably feeds six as a main; with a salad and bread, it stretches to eight without anyone noticing.

Creamy Garlic Parmesan Chicken Pasta Bake with Golden Cheese Crust

Ingredients
- 1 1/2 lb boneless skinless chicken breasts, cut into bite-size pieces
- 1 1/2 tsp kosher salt, divided
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 lb penne pasta
- 3 tbsp unsalted butter
- 5 garlic cloves, minced
- 3 tbsp all-purpose flour
- 2 cups heavy cream
- 1 cup chicken broth
- 1 cup grated parmesan cheese, divided
- 2 cups shredded mozzarella cheese
- 2 tbsp chopped fresh parsley
Instructions
- Pat the chicken pieces dry with paper towels, then season all over with 1 tsp of the kosher salt and the black pepper. Drying the surface first is what allows a real sear rather than a steam. Toss the pieces with your hands so every piece is coated evenly.
- Heat the olive oil in a large skillet over medium-high heat until it shimmers. Add the chicken in a single layer and sear, turning once, until golden on both sides and cooked through, 6 to 8 minutes. Check the center of the largest piece with an instant-read thermometer: it must read 165°F (74°C). Transfer the chicken to a plate.
- Bring a large pot of salted water to a boil and cook the penne for one minute less than the package directs. Reserve 1/2 cup of the pasta water, then drain. The pasta finishes in the oven, so firm now means perfectly tender later, never mushy.
- Return the skillet to medium heat and melt the butter. Add the minced garlic and cook, stirring, until fragrant, about 1 minute — it should smell sweet and nutty, never sharp. Sprinkle in the flour and stir for another minute to coat and cook out the raw taste.
- Whisk in the chicken broth, then the heavy cream, scraping the browned bits from the bottom of the skillet. Simmer gently for 3 to 4 minutes until it coats the back of a spoon, then whisk in 3/4 cup of the parmesan until smooth. Season with the remaining salt.
- Add the drained penne, the seared chicken and any resting juices back to the skillet and fold gently until every piece is coated. If the sauce looks tight, loosen it with a splash of the reserved pasta water — it should move slowly, like thick velvet.
- Heat the oven to 400°F (200°C). Transfer the pasta to a 9x13-inch ceramic baking dish and level the surface. Scatter the mozzarella over the top in an even layer, then finish with the remaining 1/4 cup of parmesan so the crust browns deeply.
- Bake uncovered for 20 to 25 minutes, until the crust is deep golden in spots and bubbling at the edges. Rest the dish for 5 minutes before serving — the sauce settles and every portion holds together. Shower with the parsley, cut with the spatula and serve hot.
