One pan, four ingredients and a hot oven: this roasted sausage and potato dinner builds crisp, golden edges without a single extra dish. The potatoes roast cut side down until deeply browned, the sausages render their fat right over them, and the tomatoes collapse into sweet, jammy pockets. Fresh rosemary goes on at the end, so its perfume stays bright instead of burning into bitterness.

This is the kind of dinner that answers the question of what to cook when the fridge looks bare and the energy to cook is short. Everything goes on one sheet pan in stages: potatoes first, so they get a head start on crisping, then the sausages, then the cherry tomatoes for the final stretch. The order matters.

Potatoes need the longest time and the hottest contact to brown properly, sausages need enough time to cook through while basting the pan with their rendered fat, and tomatoes only need a few minutes to blister. The result is a rustic roasting pan of golden sausages, crackly-edged potatoes and glossy burst tomatoes, ready in about 40 minutes with barely any hands-on work.

Ingredients

Serves 4
  • 1 1/2 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 lb fresh Italian sausages
  • 1 cup cherry tomatoes
  • 2 fresh rosemary sprigs

Why this recipe works

The staged roasting method is what makes this work. Potatoes are the slowest element here, so they go in first, cut side down on the bare pan. That flat face against hot metal browns by direct contact while the oven heat cooks the centers through, giving crisp edges and tender middles.

Tossing everything in at once would leave the potatoes pale and the tomatoes burnt, because each ingredient needs a different amount of time at that temperature.

The sausages do more than cook in their own slot: as they roast, they release fat that runs across the pan and bastes the potatoes, adding savor and helping them crisp.

The tomatoes arrive last, when the pan is at its hottest and most flavorful, so they blister quickly without drying out, and their juices deglaze the caramelized bits into a light pan sauce. Rosemary goes on at the very end so its oils perfume the dish rather than scorching.

Notes and substitutions

Baby potatoes are the easiest choice because halving them is the only knife work, but Yukon Gold chunks work just as well — aim for even, 1-inch pieces. Any fresh raw sausage works: Italian links, bratwurst or chicken sausage.

Choose links rather than loose sausage meat so they hold their shape and render slowly. Fresh sausages are raw sausage meat in a casing, so they must be cooked through to 160°F (71°C) at the center.

A heavy sheet pan or a shallow roasting pan gives the best browning; overcrowding is the one real risk, so use two pans rather than stacking the ingredients. No parchment is needed — direct contact with the metal browns the potatoes better. An instant-read thermometer takes the guesswork out of the sausages. If the pan looks dry at any point, a teaspoon of olive oil drizzled over the potatoes fixes it.

  • baby potatoes: Yukon Gold potatoes cut into 1-inch chunks work just as well; keep the pieces even so they roast at the same rate.
  • Italian sausages: Any fresh raw sausage works — bratwurst, chicken sausage or chorizo-style links. Cook to 160°F (71°C) whatever the variety.
  • fresh rosemary: Fresh thyme or 1 tsp dried Italian seasoning can stand in; add dried herbs with the oil so they toast in the fat.

Equipment

  • Large sheet pan or roasting pan
  • Sharp chef's knife
