Tips for success
To take this casserole to the next level, consider adding a touch of freshly squeezed lime juice or a handful of chopped fresh cilantro right before serving.
The bright acidity of the lime and the fresh herbal notes of the cilantro cut through the richness of the cream cheese and mozzarella, balancing the deep savory flavors beautifully.
If you prefer a spicier kick, you can swap the mild diced tomatoes with green chilies for the hot variety, or stir in a pinch of cayenne pepper or sliced jalapeños to the sauce. Adjusting the tomatoes allows you to customize the heat level to suit your family's personal preferences perfectly.
Variations
- Smoky Bacon Rotel Spaghetti: Stir in crispy crumbled bacon pieces along with the chicken for a delicious, smoky depth of flavor.
- Vegetarian Black Bean Spaghetti: Replace the chicken with rinsed black beans and corn to create a hearty, vegetarian-friendly pasta bake.

This casserole is an excellent candidate for meal prep or making ahead of time. Assemble the entire dish through the step of topping it with shredded mozzarella, but do not broil it. Cover the casserole dish tightly with plastic wrap or aluminum foil and store it in the refrigerator for up to twenty-four hours before cooking.
Serving ideas
Serve this comforting, cheesy pasta bake piping hot straight from the baking dish to showcase the impressive, gooey cheese pull.
It pairs wonderfully with a crisp, refreshing green salad dressed with a simple vinaigrette to contrast the rich, creamy textures of the casserole. Warm garlic bread or soft dinner rolls are also fantastic sides for scooping up any extra delicious sauce.
For a beautiful dinner presentation, consider serving the spaghetti alongside roasted vegetables such as broccoli, zucchini, or asparagus.
The charred, earthy notes of the roasted greens complement the tomato-cream sauce beautifully. Garnish the individual plates with a sprinkle of sliced green onions or fresh parsley for a lovely pop of color.

Creamy Cheesy Rotel Chicken Spaghetti Casserole

Ingredients
- 12 oz spaghetti
- 1 1/2 lb boneless skinless chicken breasts
- 1 cup chicken broth
- 8 oz cream cheese, softened
- 10 oz canned diced tomatoes with green chilies
- 2 cups shredded mozzarella cheese
Instructions
- Bring a large pot of water to a rolling boil. Add the spaghetti and cook for eight to nine minutes, or until just al dente. Drain the pasta thoroughly in a colander, but do not rinse it, then set it aside.
- In a medium pot, combine the raw chicken breasts and chicken broth. Bring to a simmer over medium heat and cook for fifteen to twenty minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the cooked chicken from the pot and place it on a clean cutting board, reserving the broth in the pot. Use two forks to shred the chicken into bite-sized pieces, then set the shredded meat aside.
- Turn the heat to low under the pot with the reserved broth. Add the softened cream cheese and whisk continuously until completely melted and smooth. Stir in the canned diced tomatoes with green chilies, including their juices, until fully combined.
- Add the cooked spaghetti and shredded chicken directly into the pot with the warm creamy Rotel sauce. Use tongs or a large spoon to gently toss the ingredients together until every strand of pasta is thoroughly coated.
- Transfer the pasta mixture into a lightly greased ceramic casserole dish. Spread it into an even layer, then sprinkle the shredded mozzarella cheese uniformly over the top. Place under the oven broiler for three to five minutes until the cheese is melted and bubbling.
