Tips for success

To elevate the flavor profile of this dish, consider adding a splash of dry white wine to the skillet after sautéing the garlic. Let the wine reduce by half before pouring in the heavy cream. This adds a sophisticated acidity that cuts through the richness of the dairy. You can also sprinkle a pinch of red pepper flakes into the cream sauce if a subtle hint of heat is desired to balance the savory notes.

If the cheese is fully melted but not as golden as preferred, turn on the oven's broiler for the last two minutes of baking. Watch the casserole closely during this time, as the broiler can quickly burn the cheese. A perfect golden-brown crust adds a delightful texture and a toasted cheese flavor that pairs wonderfully with the creamy sauce below. Always let the dish stand briefly before serving to prevent the sauce from running.

Variations

  • Spinach and Mushroom: Sauté sliced cremini mushrooms and fresh baby spinach in the skillet before adding the garlic and cream for an earthy, veggie-packed twist.
  • Bacon and Cheddar: Top the chicken with crispy crumbled bacon along with the mozzarella cheese, or swap the mozzarella for sharp cheddar cheese for a bolder flavor.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freezing is not recommended as the dairy-based cream sauce may separate and become grainy upon thawing.
Reheat
Reheat gently in the oven at 350°F (175°C) covered with foil, or in the microwave on medium power until hot.

Allow any leftover cooked chicken and cream sauce to cool down at room temperature for no more than two hours to ensure food safety. Transfer the leftovers into an airtight glass or plastic container, making sure to scrape in all the remaining garlic cream sauce.

Store the container in the refrigerator. Properly stored, the chicken will remain fresh and delicious for up to three to four days, making it an excellent option for easy weekday lunches.

This dish can be partially prepared ahead of time to save precious minutes on busy evenings. You can sear the chicken breasts and prepare the garlic cream sauce up to one day in advance.

Store the seared chicken and the cooled cream sauce in separate airtight containers in the refrigerator. When ready to serve, assemble the chicken, sauce, and shredded mozzarella in the baking dish, and bake as directed, adding five extra minutes to the baking time.

Serving ideas

This rich and creamy chicken dish pairs exceptionally well with starches that can capture the luxurious garlic sauce. Serve it over a bed of al dente fettuccine, penne, or buttered egg noodles for a classic pasta pairing.

Alternatively, present the chicken alongside steamed white rice, garlic herb rice, or a creamy parmesan risotto to soak up every drop of the flavorful cream. A side of crusty Italian bread is also perfect for dipping.

To balance the richness of the cheese and heavy cream, serve a bright, fresh vegetable alongside the main course. A crisp green salad tossed in a light lemon vinaigrette provides a refreshing contrast.

Steamed broccoli florets, roasted asparagus spears, or sautéed green beans also make excellent sides, adding vibrant color and a clean, earthy flavor that cuts through the decadence of the creamy casserole beautifully and completes the meal.

Frequently asked questions

Can milk be used instead of heavy cream?
Using milk is not recommended because it lacks the necessary fat content to prevent curdling under high heat. This will result in a thin, watery, and separated sauce rather than a smooth cream.
How is a rubbery texture in the chicken avoided?
Avoid overcooking the chicken by using a digital thermometer to check the temperature. Remove the chicken from the oven as soon as it reaches 165°F (74°C) and let it rest.
Can frozen chicken breasts be used?
Yes, but they must be completely thawed in the refrigerator before starting. Pat them dry thoroughly with paper towels to ensure they get a proper golden sear in the skillet.

Ingredients

  • 4 boneless skinless chicken breasts
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat a large skillet over medium-high heat. Add the chicken breasts to the hot skillet and sear for 3 to 4 minutes per side, or until a golden-brown crust forms. The chicken will not be fully cooked through at this stage. Transfer the seared chicken breasts to a 9x13-inch baking dish.
  2. Reduce the heat of the skillet to medium. Add the minced garlic to the pan, sautéing for about 1 minute until fragrant. Pour in the heavy cream, using a wooden spoon to scrape up any flavorful browned bits stuck to the bottom of the skillet. Simmer the mixture gently for 2 to 3 minutes until the cream is hot, smooth, and slightly thickened.
  3. Pour the warm garlic cream sauce evenly over the seared chicken breasts in the baking dish. Sprinkle the shredded mozzarella cheese over the top of the chicken and sauce. Bake at 375°F (190°C) for 15 to 20 minutes, or until the cheese is completely melted, golden-brown in spots, and bubbling vigorously. Verify that the thickest part of the chicken registers an internal temperature of 165°F (74°C).
  4. Remove the baking dish carefully from the oven. Garnish the hot casserole immediately with the chopped fresh parsley. Allow the chicken to rest in the baking dish for 5 minutes before slicing or serving. This resting period lets the meat juices redistribute and allows the rich cheese sauce to cool slightly and set.
