Tips for success
For the best results, use a sharp serrated knife to slice the crust of the khachapuri. This allows you to easily tear off pieces for dipping into the cheese mixture without crushing the delicate, airy structure of the bread. Tearing the bread by hand is also a traditional way to enjoy this dish, as it helps you scoop up more of the molten cheese and egg mixture in every single bite.
Experiment with the timing of adding the egg yolk. If you prefer a more cooked egg, you can add it during the last two minutes of the baking time, though this will result in a firmer yolk.
For the traditional runny experience, adding it immediately upon removing the dish from the oven is ideal. Always ensure you have a sturdy spatula to transfer the hot khachapuri safely from the baking surface to the serving plate.
Variations
- Spicy Khachapuri: Add a teaspoon of red pepper flakes or finely diced jalapeño to the cheese filling before baking for a gentle kick of heat that complements the rich, savory cheese and butter.
- Herb-Infused: Sprinkle chopped fresh parsley, dill, or scallions over the top of the cheese boat immediately before serving. The fresh herbs add a bright, aromatic element that balances the density of the cheese.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- Freezer
- Freezing is not recommended as the texture of the cheese and crust will degrade significantly upon thawing and reheating.
- Reheat
- Reheat in a preheated oven at 350°F (175°C) for 5-8 minutes until the cheese is hot and the crust is crisp.
If you have leftovers, allow them to cool to room temperature for no more than two hours before placing them in an airtight container. Keep the khachapuri in the refrigerator for up to two days.
Note that the texture of the crust will change over time, becoming softer due to the moisture from the cheese, so it is best enjoyed immediately after baking to experience the ideal contrast between the crispy bread and the molten center.
You can prepare the dough in advance and keep it in the refrigerator for up to 24 hours. When you are ready to bake, bring the dough to room temperature for about 30 minutes before shaping it into the boat. While the cheese can be grated ahead of time, it is best to assemble the khachapuri just before baking to prevent the dough from becoming too soft or losing its shape during the resting period.
Serving ideas
Serve the khachapuri immediately while it is piping hot. The contrast between the hot, molten cheese and the crisp crust is the defining characteristic of this dish.
Place the khachapuri on a large plate or a wooden board, which provides a rustic presentation that matches the traditional origins of the recipe. Encourage guests to tear the crust edges by hand to use as a vessel for the rich, buttery cheese and egg mixture.
Consider pairing the khachapuri with a simple, fresh salad of tomatoes and cucumbers dressed with a little vinegar or oil. The acidity of the vegetables helps to cut through the richness of the cheese and butter, creating a satisfying meal.
The khachapuri is a substantial dish on its own, but a light side dish provides a refreshing contrast that makes the overall eating experience more enjoyable and complete for everyone at the table.

Classic Adjarian Khachapuri Cheese Boat

Ingredients
- 350 grams bread dough, store-bought or made ahead
- 8 oz sulguni cheese, grated or torn into pieces
- 2 large eggs
- 2 tbsp unsalted butter, cubed
Instructions
- Dust a clean work surface with a small amount of flour. Roll the dough into an oval shape, then roll up the long edges toward the center to form a canoe-like structure. Pinch the ends firmly to seal the boat shape, ensuring the center is hollow and ready to receive the cheese filling.
- Generously pack the hollow center of the dough boat with the prepared sulguni cheese. Transfer the boats carefully onto a parchment-lined baking stone or a preheated cast-iron skillet. Bake in an oven preheated to 475°F (246°C) for 12 minutes, or until the crust is deeply golden brown and the cheese is bubbling and slightly blistered.
- Remove the khachapuri from the oven. Carefully create a small well in the center of the molten cheese and drop in a raw egg yolk along with a cube of butter. Serve immediately, instructing guests to stir the hot yolk and butter into the cheese until it reaches a creamy, velvety consistency, ensuring the egg is heated to 160°F (71°C) through the residual heat of the cheese.
