Before you start

Before you begin, ensure your oven is fully preheated to 475°F (246°C) for at least 30 minutes. If you are using a baking stone, place it in the oven during the preheating phase.

Bring your dough to room temperature if it was refrigerated, as cold dough is difficult to shape and may shrink during baking. Have your cheese grated or prepared and keep your eggs and butter close to the workspace for quick assembly immediately after the baking process ends.

Ingredients at a glance (4)
  • 350 grams bread dough, store-bought or made ahead
  • 8 oz sulguni cheese, grated or torn into pieces
  • 2 large eggs
  • 2 tbsp unsalted butter, cubed

Instructions

Dough shaping

  1. Shape the dough
Dust a clean work surface with a small amount of flour. Roll the dough into an oval shape, then roll up the long edges toward the center to form a canoe-like structure. Pinch the ends firmly to seal the boat shape, ensuring the center is hollow and ready to receive the cheese filling.
Look for The dough should form a distinct canoe shape with raised edges.
Tip Keep the center of the dough slightly thinner so it bakes evenly.

The dough should be shaped into a consistent oval with clearly defined, raised edges that form a deep well. The surface should be lightly floured to prevent sticking, and the canoe shape should be uniform, ensuring that the cheese will be contained securely once added. Check that the base of the dough is not too thick, as this will help it bake evenly.

Baking process

  1. Fill and bake
Generously pack the hollow center of the dough boat with the prepared sulguni cheese. Transfer the boats carefully onto a parchment-lined baking stone or a preheated cast-iron skillet. Bake in an oven preheated to 475°F (246°C) for 12 minutes, or until the crust is deeply golden brown and the cheese is bubbling and slightly blistered.
Look for The crust should be golden brown and the cheese fully melted.
Tip If the cheese is browning too quickly, loosely cover the edges with foil.

The cheese should be evenly distributed within the dough boat, and the surface should appear melted and golden. The crust needs to be puffed and browned, indicating that the high heat has done its job. Listen for the sound of sizzling cheese, which confirms the filling is hot enough to cook the egg yolk once it is added in the final stage.

Final assembly

  1. Add topping and serve
Remove the khachapuri from the oven. Carefully create a small well in the center of the molten cheese and drop in a raw egg yolk along with a cube of butter. Serve immediately, instructing guests to stir the hot yolk and butter into the cheese until it reaches a creamy, velvety consistency, ensuring the egg is heated to 160°F (71°C) through the residual heat of the cheese.
Look for The cheese should be molten and the butter melting upon contact.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Work quickly so the cheese stays hot while mixing the egg.

The final result should feature a perfectly golden, crispy crust and a pool of melted cheese in the center. The egg yolk and butter, once stirred, must create a rich, creamy consistency that coats the cheese.

Ensure the mixture is hot enough to safely cook the egg, creating a luxurious, velvety sauce that is ready to be enjoyed immediately with the torn pieces of the bread.

Common mistakes

A common mistake is failing to pinch the ends of the dough boat tightly enough, which can lead to cheese spilling onto the oven floor. Ensure the seal is secure and the sides are sufficiently raised.

Another error is overloading the boat with cheese; while it should be generous, too much filling can prevent the center of the dough from baking through, leaving it gummy. Follow the recommended amount to ensure the dough cooks perfectly alongside the cheese filling.

How to tell it’s done

The khachapuri is done when the crust is a deep, golden brown and the cheese is bubbling vigorously across the entire center. The dough should feel firm to the touch, and the cheese should have a uniform, melted appearance.

When adding the egg yolk, the residual heat of the cheese should be sufficient to cook the yolk to 160°F (71°C) as it is stirred in, resulting in a thick, velvety sauce that coats the bread.
