Tips for success
To achieve the ultimate crispy skin, consider salting the chicken and leaving it uncovered in the refrigerator overnight.
This process, known as dry brining, draws out excess moisture from the skin while allowing the salt to penetrate deep into the meat, yielding incredibly flavorful and tender results. When ready to roast, simply rub the spiced herb butter over the prepped bird.
Keep a close eye on the lemon slices during the final stages of roasting. If the pan juices begin to dry out or the lemons look like they are burning, pour a splash of chicken broth or water into the bottom of the pan.
This keeps the lemons from scorching and helps create a rich, pourable jus to serve alongside the carved meat.
Variations
- Garlic Herb Variation: Add six smashed cloves of garlic directly to the roasting pan with the lemons and rosemary to infuse the chicken and pan juices with a rich, roasted garlic flavor.
- Spiced Citrus Variation: Incorporate a teaspoon of orange zest into the spiced herb butter to add a warm, complex citrus aroma to the roast.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze shredded meat in a freezer-safe bag for up to 3 months.
- Reheat
- Reheat in a 350°F (175°C) oven covered with foil for 15 minutes to retain moisture.
Cool any leftover roasted chicken to room temperature within two hours of cooking before transferring it to an airtight container. The chicken can be stored in the refrigerator for up to three to four days. For longer storage, shred the meat off the bones and freeze it in a freezer-safe bag for up to three months.
While roasting is best done fresh for the crispiest skin, the spiced herb butter can easily be prepared up to three days in advance and stored in the refrigerator.
Simply let the butter soften slightly before rubbing it onto the chicken. The chicken can also be buttered and prepped on the roasting pan a few hours ahead of time, kept covered in the refrigerator until ready to roast.
Serving ideas
Present the whole roasted chicken directly in the roasting pan or on a large, warm serving platter, surrounded by the caramelized lemon slices and fresh rosemary sprigs. Spoon the warm, bubbling pan juices generously over the carved meat just before serving to add an extra layer of rich flavor and moisture to every bite.
This festive main course pairs beautifully with classic holiday side dishes such as garlic mashed potatoes, roasted root vegetables, or a crisp green salad.
The bright, citrusy notes of the caramelized lemons cut through the richness of the butter and chicken fat, providing a perfectly balanced flavor profile that complements almost any side.

Christmas Herb-Roasted Lemon Chicken with Crispy Skin

Ingredients
- 1 whole chicken, approximately 4 to 5 pounds
- 1/2 cup spiced herb butter, store-bought or made ahead
- 2 lemons, sliced into thick rounds
- 4 fresh rosemary sprigs
Instructions
- Gently loosen the skin over the breast of the whole chicken. Rub half of the spiced herb butter directly under the skin onto the breast meat. Rub the remaining spiced herb butter over the entire exterior skin of the chicken. Arrange the sliced lemons and fresh rosemary sprigs in the bottom of a roasting pan, and place the buttered chicken directly on top of the lemon bed.
- Preheat the oven to 400°F (200°C). Slide the roasting pan with the chicken onto the middle rack. Roast uncovered for about one hour, allowing the skin to brown and the lemon slices beneath the bird to caramelize and release their juices.
- Carefully spoon the bubbling pan juices over the top of the chicken to baste it. Continue roasting for another twenty to thirty minutes, or until the skin is deeply golden and crispy, and a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
- Remove the roasting pan from the oven and transfer the chicken to a warm carving board. Let the chicken rest uncovered for fifteen minutes to allow the juices to redistribute throughout the meat. Carve into pieces and serve warm alongside the caramelized lemons.
