Tips for success

For the cleanest marbled hearts, work with one date at a time. Pipe the white chocolate lines and immediately drag the toothpick through them before the chocolate begins to set. If the white chocolate thickens as it sits, rewarm it briefly.

Use a light, steady hand when dragging the toothpick; the goal is to create a feathered pattern, not to stir the chocolates together. If you prefer a more defined heart, you can pipe the white chocolate in the shape of a heart and then drag the toothpick through the center to create the feather effect.

To keep the chocolate from pooling at the base of the date, hold the skewer vertically for a few seconds after dipping and let the excess drip off. You can also gently scrape the bottom of the date against the rim of the bowl to remove excess chocolate.

If you want to serve the dates on a platter, you can place a small piece of parchment paper under each one to catch any stray chocolate. The dates are best served within a day or two, but they can be stored in an airtight container in the refrigerator for up to a week.

Variations

  • Dark Chocolate Version: Swap the milk chocolate for dark chocolate (70% cacao) for a richer, less sweet shell. Use the same white chocolate for marbling. The bitterness of the dark chocolate pairs beautifully with the sweet dates and pistachio cream.
  • Peanut Butter Filling: Replace the pistachio cream with creamy peanut butter for a classic peanut butter and chocolate combination. The peanut butter should be at room temperature for easy piping. You can also use crunchy peanut butter for added texture.
  • Almond Butter and Almond Chocolate: Use almond butter in place of pistachio cream and top the dates with sliced almonds before the chocolate sets. For the marbling, use a mix of melted white chocolate and a few drops of almond extract for a subtle nutty flavor.
  • White Chocolate Shell: Reverse the chocolates: dip the dates in white chocolate and pipe lines of melted dark chocolate for the marbled heart. The white chocolate shell is sweeter, so consider using a slightly less sweet filling, such as a salted pistachio cream.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 1 week. Keep chilled until serving to maintain the crisp chocolate shell.
Freezer
Freeze the dates in a single layer on a parchment-lined baking sheet until solid, then transfer to an airtight container or zip-top bag.
Reheat
No reheating needed. If frozen, let the dates thaw in the refrigerator for about 30 minutes before serving.

Store the chocolate-dipped dates in an airtight container in the refrigerator. They will keep for up to 1 week. The chocolate shell may soften slightly at room temperature, so keep them chilled until serving.

If you need to stack them, place a sheet of parchment paper between layers to prevent the chocolate from sticking together. Bring them to room temperature for about 5 minutes before serving to allow the chocolate to soften just a bit, but keep them cool enough to maintain the crisp shell.

These dates can be made up to 3 days in advance. Prepare and decorate them as directed, then store them in an airtight container in the refrigerator. The chocolate will remain crisp for several days. If you are making them for a party, you can also assemble the dates (fill them with pistachio cream) a day ahead, but do not dip them in chocolate until the day of serving to ensure the freshest appearance and texture.

Serving ideas

Serve the chocolate-dipped dates chilled, straight from the refrigerator, so the chocolate shell is crisp and the filling is firm. Arrange them on a small platter or in paper candy cups. They make an elegant addition to a dessert board or a simple after-dinner treat. The marbled hearts are a lovely touch for Valentine's Day, anniversaries, or any celebration. Because they are bite-sized, they are perfect for passing around at a party or enjoying with a cup of coffee.

For a more indulgent presentation, you can dust the dates with a little cocoa powder or flaky sea salt before serving, though the recipe is delicious as is. The combination of sweet dates, rich chocolate, and nutty pistachio cream is satisfying on its own.

If you are serving them after a meal, consider pairing them with a small glass of dessert wine or a strong espresso. The dates are also a great make-ahead treat for gifting; place them in a decorative box lined with parchment paper.

Frequently asked questions

Can this recipe be made vegan?
Yes, to make these dates vegan, use dairy-free chocolate chips or bars for both the milk chocolate and white chocolate. Look for products labeled vegan, as they do not contain milk solids. Also ensure the pistachio cream is made without honey or other non-vegan ingredients. The rest of the ingredients are naturally vegan.
What if the white chocolate seizes or becomes grainy?
White chocolate can seize if it comes into contact with water or gets overheated. To rescue it, stir in a small amount of vegetable oil or coconut oil (about 1 teaspoon per 1/2 cup of chocolate) and mix gently until smooth. If it is too thick to pipe, add a little more oil. Avoid using water to thin it.
Can you use regular dates instead of Medjool?
Medjool dates are recommended because they are large, soft, and have a caramel-like flavor. Regular dates, such as Deglet Noor, are smaller and firmer, which makes them harder to pit and fill. If you use smaller dates, reduce the amount of pistachio cream to about 1 teaspoon per date and adjust the dipping time.
How should you store leftover dates?
Store the chocolate-dipped dates in an airtight container in the refrigerator for up to 1 week. Place parchment paper between layers to prevent sticking. For longer storage, freeze them for up to 3 months. Thaw in the refrigerator before serving.
Why does the chocolate shell sometimes crack?
Cracking can happen if the chocolate is too cold when you bite into it, or if the filling expands. To minimize cracking, let the dates sit at room temperature for a few minutes before serving. Also, ensure the pistachio cream is not too warm when you dip the dates, as warm filling can cause the chocolate to crack as it sets.

Chocolate-Dipped Pistachio Cream Dates with Marbled Hearts

Chocolate-dipped dates with marbled white chocolate hearts on parchment paper

Ingredients

  • 12 large Medjool dates, pitted
  • 1 tbsp pistachio cream or creamy peanut butter
  • 1 1/2 cups melted milk chocolate
  • Melted white chocolate, for piping, to taste

Instructions

  1. Using a paring knife, slit each Medjool date lengthwise on one side. Remove the pit, then gently open the date like a butterfly, keeping the two halves attached at the bottom. Place the pitted dates on a cutting board.
  2. Spoon the pistachio cream into a piping bag fitted with a small round tip, or use a zip-top bag with a corner snipped off. Pipe about 1 tablespoon of the cream into the cavity of each date, filling it generously but not overflowing.
  3. Melt the milk chocolate in a heatproof bowl set over a pan of simmering water, or in the microwave in 20-second bursts, stirring between each burst, until smooth and glossy. Do the same with the white chocolate in a separate bowl.
  4. Insert a wooden skewer into one filled date. Dip it completely into the melted milk chocolate, turning to coat all sides. Lift it out, allowing the excess chocolate to drip back into the bowl. Place the dipped date on a parchment-lined baking sheet. Repeat with the remaining dates.
  5. Spoon the melted white chocolate into a small piping bag or zip-top bag with a tiny corner snipped off. Pipe thin, straight lines of white chocolate across the top of each chocolate-covered date, spacing them about 1/4 inch apart.
  6. Working with one date at a time, drag a toothpick through the white chocolate lines in the opposite direction, first one way and then the other, to create a feathered marbled heart pattern. Repeat for each date, cleaning the toothpick between dates.
  7. Place the baking sheet in the refrigerator and chill for 15 minutes, or until the chocolate is completely firm and crisp. Once set, remove the dates from the fridge and serve immediately.
