Before you start
Before starting, gather all the ingredients and equipment. Pit the dates if they are not already pitted, and have the pistachio cream at room temperature for easier piping. Line a baking sheet with parchment paper. Melt the milk chocolate and white chocolate separately, either in a double boiler or in the microwave, and keep them warm but not hot.
Set up a small piping bag for the pistachio cream and another for the white chocolate, and have the toothpick and skewers ready. The entire process moves quickly once the chocolate is melted, so having everything within reach makes it smooth.
Ingredients at a glance (4)
- 12 large Medjool dates, pitted
- 1 tbsp pistachio cream or creamy peanut butter
- 1 1/2 cups melted milk chocolate
- Melted white chocolate, for piping, to taste
Instructions
Prepare and Fill the Dates
- Prepare the datesUsing a paring knife, slit each Medjool date lengthwise on one side. Remove the pit, then gently open the date like a butterfly, keeping the two halves attached at the bottom. Place the pitted dates on a cutting board.Look for Each date lies flat, opened like a book, with the sticky interior exposed.Tip Choose soft, plump Medjool dates; they are easier to open and hold their shape when filled.
- Fill the datesSpoon the pistachio cream into a piping bag fitted with a small round tip, or use a zip-top bag with a corner snipped off. Pipe about 1 tablespoon of the cream into the cavity of each date, filling it generously but not overflowing.Look for Each date holds a neat swirl of pistachio cream, level with the edges.Tip If the pistachio cream is too stiff to pipe, warm it for a few seconds in the microwave until it flows smoothly.
At the end of this phase, the dates are slit open, pitted, and lying flat on the cutting board. Each one has a neat swirl of pistachio cream piped into the cavity, filling it to the edges. The dates look like little open books with a green filling. The pistachio cream should be smooth and level, not overflowing. If any cream has spilled onto the board, wipe it away so it does not transfer to the chocolate later. The dates are now ready to be dipped.
Dip and Decorate
- Melt the chocolateMelt the milk chocolate in a heatproof bowl set over a pan of simmering water, or in the microwave in 20-second bursts, stirring between each burst, until smooth and glossy. Do the same with the white chocolate in a separate bowl.Look for Both chocolates are completely melted, smooth, and pourable.Tip Avoid getting any water into the chocolate, as it will seize and become grainy.
- Dip the datesInsert a wooden skewer into one filled date. Dip it completely into the melted milk chocolate, turning to coat all sides. Lift it out, allowing the excess chocolate to drip back into the bowl. Place the dipped date on a parchment-lined baking sheet. Repeat with the remaining dates.Look for Each date is fully coated in a shiny layer of milk chocolate.Tip Tap the skewer gently against the bowl to remove excess chocolate and avoid pooling at the base.
- Pipe white chocolate linesSpoon the melted white chocolate into a small piping bag or zip-top bag with a tiny corner snipped off. Pipe thin, straight lines of white chocolate across the top of each chocolate-covered date, spacing them about 1/4 inch apart.Look for Parallel white lines run across the dark chocolate surface.Tip Work quickly while the milk chocolate is still wet so the lines can be feathered.
The dates are now fully coated in milk chocolate and sitting on the parchment-lined baking sheet. The chocolate is smooth and glossy, with no bare spots. Across the top of each date, thin lines of white chocolate run parallel to each other.
The lines are still wet, and the toothpick has been dragged through them in the opposite direction to create a feathered heart pattern. The marbling is distinct, with the white chocolate forming delicate veins against the dark milk chocolate. The baking sheet is ready to go into the fridge.
Chill and Serve
- Marble the heartsWorking with one date at a time, drag a toothpick through the white chocolate lines in the opposite direction, first one way and then the other, to create a feathered marbled heart pattern. Repeat for each date, cleaning the toothpick between dates.Look for A delicate heart shape emerges from the feathered lines.Tip Use a light hand; too much dragging will muddy the pattern.
- Chill to setPlace the baking sheet in the refrigerator and chill for 15 minutes, or until the chocolate is completely firm and crisp. Once set, remove the dates from the fridge and serve immediately.Look for The chocolate shell is firm to the touch and snaps when bitten.Tip Chilling is essential for a clean bite; do not skip it.
After 15 minutes in the refrigerator, the chocolate shells are fully set and firm to the touch. The white chocolate hearts are hardened, and the surface is smooth and shiny. When you pick up a date, it feels solid, and the chocolate does not give under gentle pressure. The dates are ready to be served immediately. They should be stored in the fridge until serving to maintain the crisp shell. The contrast between the hard chocolate and the soft, creamy center is the hallmark of this dessert.
Common mistakes
A common mistake is overfilling the dates, which causes the pistachio cream to ooze out during dipping and makes the chocolate coating uneven. Use about 1 tablespoon per date and pipe it neatly. Another issue is dipping the dates when the chocolate is too hot, which can melt the pistachio cream and cause it to leak.
Let the melted chocolate cool slightly until it is warm but not hot. When feathering the white chocolate, dragging the toothpick too many times can muddy the pattern; a single pass in each direction is enough. Finally, be sure to chill the dates thoroughly; skipping the chill results in a soft, messy shell.
How to tell it’s done
The dates are done when the chocolate shell is completely set and firm to the touch. After 15 minutes in the refrigerator, the chocolate should no longer be tacky and should snap cleanly when bitten. The white chocolate heart pattern should be fully hardened, and the date inside should be soft and chewy.
If the chocolate is still soft, return the dates to the fridge for a few more minutes. There is no internal temperature to check, as this recipe does not involve cooking raw proteins. The visual and tactile cues—a firm, glossy shell—are the best indicators of doneness.
