Tips for success
For the best cheese pull, use a high-quality melting cheese like kashar or low-moisture mozzarella. Shred it fresh from the block for the smoothest melt.
Let the skillet sit for a minute or two after cooking before serving—this allows the cheese to set slightly, making it easier to scoop out portions without everything sliding apart.
If you prefer a bit of heat, add a pinch of red pepper flakes to the meatball mixture or sprinkle some over the top before serving.
You can also add a handful of fresh herbs like parsley or oregano for a burst of color and freshness. Serve with crusty bread to mop up any cheesy sauce left in the skillet.
Variations
- Spicy sausage twist: Swap the ground beef for spicy Italian sausage, removed from casings, and add a pinch of red pepper flakes to the meatball mixture. The sausage adds a punch of flavor that pairs well with the melted cheese.
- Vegetarian version: Replace the meatballs with large chunks of roasted cauliflower or store-bought vegetarian meatballs. Keep the rest of the dish the same, and the cheese will still make it satisfying and rich.
- Add mushrooms: Slice 8 ounces of cremini mushrooms and sauté them with the onions and peppers. They add an earthy depth that complements the eggplant and cheese beautifully.
- Herb and lemon finish: After melting the cheese, sprinkle with fresh chopped parsley and a squeeze of lemon juice. The brightness cuts through the richness and adds a fresh note.

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a skillet over medium heat with a splash of water or broth, cover, and warm until heated through.
The cheese will re-melt and become stretchy again. Avoid microwaving, as it can make the eggplant rubbery.
The meatballs can be prepared a day ahead and kept in the refrigerator. The eggplant can be sliced and soaked in salted water up to a few hours in advance.
Assemble the dish just before cooking. If making the entire dish ahead, let it cool completely, then refrigerate and reheat gently in a skillet or oven.

Cheesy Meatball and Eggplant Skillet

Ingredients
- 2 eggplants, sliced into thick cylinders
- Salt, for soaking, to taste
- 3 tbsp olive oil
- 2 onions, sliced
- 2 tomatoes, sliced
- 2 green peppers, sliced
- 400 g ground beef
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 cup breadcrumbs
- 1 tsp salt
- 1 1/2 cups shredded Turkish kashar mozzarella cheese
Instructions
- Slice the eggplants into thick cylinders, about 1 inch thick. Soak them in salted water for 10 minutes, then drain and pat dry with paper towels. In a large bowl, combine the ground beef, finely chopped onion, minced garlic, ground cumin, breadcrumbs, and salt. Mix until just combined, then form into 1 1/2-inch meatballs.
- Heat the olive oil in a large skillet over medium-high heat. Add the eggplant slices and cook for 2-3 minutes per side until golden brown. Remove and set aside. In the same skillet, add the sliced onions, tomatoes, and green peppers. Cook for 3-4 minutes until slightly softened and fragrant.
- Push the vegetables to the sides of the skillet and add the meatballs in a single layer. Cook for 5 minutes, turning occasionally, until browned on all sides. The meatballs should be browned but not cooked through completely.
- Sprinkle the shredded kashar cheese evenly over the entire skillet. Cover with a lid and cook for 3 minutes, until the cheese is completely melted and bubbly. The cheese should be fully melted and starting to bubble around the edges.
- Use a spatula to stir the skillet, pulling up the meatballs and eggplant so they are coated in the melted cheese. The cheese will stretch into long, stringy ribbons. Serve hot directly from the skillet, scooping out the meatballs and eggplant with plenty of cheese.
