Before you start

Before starting, slice the eggplants into thick cylinders and let them soak in salted water while you prepare the other ingredients. Finely chop the onion and mince the garlic for the meatballs.

Slice the onions, tomatoes, and green peppers for the skillet. Have the cheese shredded and ready to go. This is a quick-cooking dish, so having everything prepped makes the process smooth and enjoyable.

Ingredients at a glance (13)
  • 2 eggplants, sliced into thick cylinders
  • Salt, for soaking, to taste
  • 3 tbsp olive oil
  • 2 onions, sliced
  • 2 tomatoes, sliced
  • 2 green peppers, sliced
  • 400 g ground beef
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 cup breadcrumbs
  • 1 tsp salt
  • 1 1/2 cups shredded Turkish kashar mozzarella cheese

Instructions

Prep and Sear

  1. Prepare the eggplant and meatballs
Slice the eggplants into thick cylinders, about 1 inch thick. Soak them in salted water for 10 minutes, then drain and pat dry with paper towels. In a large bowl, combine the ground beef, finely chopped onion, minced garlic, ground cumin, breadcrumbs, and salt. Mix until just combined, then form into 1 1/2-inch meatballs.
Look for The eggplant slices are lightly salted and the meatballs hold together without being overworked.
Tip Soaking the eggplant in salted water draws out bitterness and helps it stay silky when cooked.
  2. Sear the eggplant and vegetables
Heat the olive oil in a large skillet over medium-high heat. Add the eggplant slices and cook for 2-3 minutes per side until golden brown. Remove and set aside. In the same skillet, add the sliced onions, tomatoes, and green peppers. Cook for 3-4 minutes until slightly softened and fragrant.
Look for The eggplant is golden and the vegetables are tender but still hold their shape.
Tip Don't overcrowd the skillet; cook the eggplant in batches if needed to get a good sear.

The eggplant slices should be golden brown on both sides and slightly softened. The onions, tomatoes, and peppers should be fragrant and just starting to release their juices. The meatballs should be formed and ready to cook. Everything should look vibrant and inviting.

Brown the Meatballs

  1. Brown the meatballs
Push the vegetables to the sides of the skillet and add the meatballs in a single layer. Cook for 5 minutes, turning occasionally, until browned on all sides. The meatballs should be browned but not cooked through completely.
Look for The meatballs are nicely browned on the outside but still pink in the center.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a spatula to turn the meatballs gently so they stay intact.

The meatballs should be browned on all sides, with a nice crust that adds flavor. The vegetables should be tender and the skillet should be sizzling. The meatballs will not be cooked through yet, but they should be well on their way. The kitchen should smell of cumin and seared beef.

Melt and Serve

  1. Add the cheese and melt
Sprinkle the shredded kashar cheese evenly over the entire skillet. Cover with a lid and cook for 3 minutes, until the cheese is completely melted and bubbly. The cheese should be fully melted and starting to bubble around the edges.
Look for The cheese is fully melted, bubbly, and starting to brown slightly at the edges.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Covering the skillet traps steam and helps the cheese melt evenly without burning.
  2. Stir and serve
Use a spatula to stir the skillet, pulling up the meatballs and eggplant so they are coated in the melted cheese. The cheese will stretch into long, stringy ribbons. Serve hot directly from the skillet, scooping out the meatballs and eggplant with plenty of cheese.
Look for The cheese stretches when lifted, and the meatballs are cooked through.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Serve immediately while the cheese is still hot and stretchy.

The cheese should be completely melted and bubbly, with a glossy, golden surface. When you lift the lid, the aroma of melted cheese and cooked meatballs is irresistible.

The cheese should stretch when you pull it with a spatula, and the meatballs and eggplant should be coated in a rich, creamy sauce.

Common mistakes

One common mistake is overcrowding the skillet when searing the eggplant, which lowers the heat and causes the eggplant to steam instead of brown. Work in batches if necessary.

Another is overworking the meatball mixture, which can make the meatballs tough. Mix just until combined. Finally, don't skip the soaking step for the eggplant—it makes a real difference in texture and flavor.

How to tell it’s done

The dish is done when the meatballs are cooked through and reach an internal temperature of 160°F (71°C). The cheese should be fully melted and bubbly, and the eggplant should be tender when pierced with a fork.

The vegetables should be soft but not mushy. When you stir the skillet, the cheese should stretch and pull away in long ribbons, coating the meatballs and eggplant evenly.

  • Ground meat: 160°F (71°C) in the thickest part
