Tips for success
For the juiciest meatballs, use a light hand when mixing and shaping. Overworking the meat compacts the proteins and results in a dense texture.
Gently knead just until the ingredients are incorporated, then roll the mixture into balls without pressing too firmly. The sparkling water adds airiness, but the same effect can be achieved with a little cold water if needed.
To get the best browning on the cheese, make sure the oven is fully preheated and the broiler is hot before you put the dish in. Position the rack about 6 inches from the heat source and watch closely, as broilers can vary in intensity.
If the cheese starts to burn in spots, rotate the dish or lower the rack. Let the dish rest for a few minutes so the cheese sets slightly, making it easier to serve.
Variations
- Spicy Sausage Twist: Swap half the ground beef for fresh spicy sausage (casings removed) for an extra kick. Reduce the salt in the meatball mixture, as sausage is often well-seasoned. Proceed with the recipe as written.
- Chicken Meatballs: Use ground chicken or turkey instead of beef. Add 1 tablespoon of olive oil to the meatball mixture to keep it moist, as poultry is leaner. Cook to an internal temperature of 165°F (74°C).
- Veggie-Packed Version: Add 1 cup of sliced mushrooms or zucchini to the vegetable bed. Toss with the other vegetables and bake as directed. The extra vegetables will soak up the meat juices and become tender and flavorful.
- Herb-Infused: Add 1 teaspoon of dried mint or a handful of fresh chopped dill to the meatball mixture. The herbs complement the lamb or beef and add a fresh note that pairs well with the peppers and cheese.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until piping hot.
- Freezer
- The baked dish can be frozen for up to 2 months. Cool completely, then wrap tightly or transfer to a freezer-safe container.
- Reheat
- Reheat in a 350°F (175°C) oven for 15-20 minutes, or until hot and bubbly. The microwave works for individual portions, but the vegetables may become softer.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave until warmed through. The cheese may lose some of its crispness on reheating, but the flavors will still be delicious.
The meatballs can be shaped up to a day in advance and kept covered in the refrigerator. The vegetables can also be sliced and stored in a sealed container.
When ready to cook, assemble the dish as directed and bake. You may need to add a few minutes to the baking time if the ingredients are cold from the fridge.
Serving ideas
Serve this dish hot from the oven, scooping the meatballs and vegetables with a spoon to capture the juices. It pairs well with crusty bread, rice, quinoa, or mashed potatoes to soak up the flavorful sauce. A simple green salad with a lemon vinaigrette adds brightness and cuts through the richness.
For a complete meal, offer a bowl of plain yogurt or a cucumber salad on the side. The cool, tangy yogurt complements the spicy, savory flavors of the dish.
If you like extra heat, pass additional chili flakes at the table. This dish is also delicious the next day, cold or reheated, as a sandwich filling or over grains.

Cheesy Meatball and Pepper Bake with Crispy Breadcrumb Topping

Ingredients
- 1.1 lb ground beef (80% lean)
- 1 grated onion
- 1 clove garlic, minced
- 4 tbsp plain breadcrumbs
- 50 ml sparkling water
- 2 tbsp fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili flakes
- 1 tsp salt
- 2 onions, sliced
- 3 green peppers, sliced
- 2 red capia peppers, sliced
- 4 cloves garlic, sliced
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp chili flakes
- 1/2 tsp salt
- 1 1/2 cups grated kashar cheese
Instructions
- In a large bowl, combine the ground beef, grated onion, minced garlic, breadcrumbs, sparkling water, chopped parsley, cumin, paprika, chili flakes, and salt. Use your hands to gently knead the mixture until everything is evenly distributed, but avoid overworking the meat. Shape the mixture into plump, round meatballs about 1 1/2 inches in diameter. Set them aside while you prepare the vegetables.
- In a large baking dish, combine the sliced onions, green peppers, red capia peppers, and sliced garlic cloves. Drizzle with olive oil and sprinkle with oregano, chili flakes, and salt. Toss everything together with your hands or a large spoon until the vegetables are evenly coated and spread across the bottom of the dish in an even layer.
- Nestle the meatballs evenly among the vegetables in the baking dish. Tear a piece of parchment paper large enough to cover the dish, crumple it under running water, then shake off the excess water. Lay the damp parchment directly over the meatballs and vegetables, tucking the edges around the inside of the dish. This creates a moist environment that steams the meatballs and softens the vegetables.
- Place the dish in an oven preheated to 350°F (175°C). Bake for 30 minutes, until the vegetables are caramelized and tender and the meatballs are cooked through. The meatballs should reach an internal temperature of 160°F (71°C) when checked with an instant-read thermometer. The parchment will keep the top moist, so the dish will look steamy and juicy when you uncover it.
- Carefully remove the parchment paper and discard it. Sprinkle the grated kashar cheese evenly over the meatballs and vegetables. The cheese should cover the top generously, creating a blanket that will melt and bubble under the broiler.
- Switch the oven to broil and place the dish on a rack about 6 inches from the heat source. Broil for 5 minutes, watching closely, until the cheese is browned and bubbly with dark spots in places. The cheese should be melted and gooey, and the edges of the peppers may char slightly. Remove the dish from the oven and let it rest for 3 minutes before serving.
