Tips for success
For an extra layer of flavor, consider adding a dash of hot sauce to the beef mixture if you prefer a bit of heat. If the tortillas are too stiff to fold easily, you can quickly warm them in a microwave for 10 seconds to make them more pliable. This simple trick makes the assembly process much faster and prevents the tortillas from cracking when you press them against the sides of the pan.
To achieve an even more vibrant color on the top, you can turn on the broiler for the last 60 seconds of the baking time. Keep a very close eye on it, as the cheese can go from golden to burnt in a matter of seconds. This quick flash of high heat creates a beautiful, toasted finish that looks professional and adds an extra bit of crunch to the final dish.
Variations
- Spicy Jalapeno Twist: Add two finely diced fresh jalapeños to the beef mixture while sautéing the vegetables. This adds a nice kick of heat that complements the savory beef and cheese perfectly, making it an ideal choice for those who enjoy a bit of spice in their dinner.
- Vegetarian Black Bean: Substitute the ground beef with two cans of drained black beans. Cook them briefly with the aromatics and spices until thickened. This version provides a hearty, fiber-rich alternative that works wonderfully with the same cheesy, tortilla-based method.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days.
- Freezer
- Freeze individual slices wrapped in foil for up to 1 month.
- Reheat
- Reheat in a 350°F oven until warmed through or microwave for 1-2 minutes.
If you have leftovers, allow the pie to cool completely at room temperature for no more than two hours before covering it tightly with plastic wrap or transferring it to an airtight container.
Properly stored, it will maintain its quality in the refrigerator for up to three days. When you are ready to enjoy it again, individual portions are best reheated to ensure they warm through evenly without drying out the tortilla crust.
You can prepare the beef filling up to 24 hours in advance and keep it in the refrigerator until you are ready to assemble the pie. This is a great way to save time on a busy weeknight.
Simply assemble the pie, brush with the butter, and bake when you are ready to eat. Do not assemble the pie with the tortillas too far in advance, as they may become soggy if they sit in the refrigerator for too long.
Serving ideas
Serve this pie warm, straight from the pan, for the best experience. It pairs perfectly with a side of fresh salad, such as a crisp green salad or a simple tomato and cucumber mix, to add a refreshing contrast to the richness of the beef and cheese.
You can also offer a dollop of sour cream or a spoonful of fresh salsa on the side to allow guests to customize their portions to their liking.
Because this is a hearty dish, it stands well on its own as a main course. When slicing, use a sharp knife and press firmly to cut through the crisp tortilla layers.
A wide spatula is the best tool for lifting the slices out of the pan, as it provides the necessary support to keep the layers intact. Present the pie directly in the pan for a rustic, inviting look that makes the dinner feel special.

Cheesy Beef Tortilla Casserole Pie

Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 bell peppers, diced
- 2 tsp minced garlic
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp smoked paprika
- 3/4 tsp salt
- 1/2 tsp black pepper
- 8 flour tortillas
- 3 cups shredded mozzarella cheese
- 3 tbsp melted butter
- 1 tbsp fresh parsley, chopped
- 1 cup shredded cheddar cheese
Instructions
- Heat a skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula. Add the diced onion and bell peppers, cooking until the vegetables are soft. Stir in the minced garlic, tomato paste, cumin, smoked paprika, salt, and black pepper. Continue to cook until the mixture is rich, thick, and fully browned, ensuring it reaches an internal temperature of 160°F (71°C). Remove from heat.
- Preheat your oven to 380°F (193°C). Take a round cast iron pan and overlap the flour tortillas around the base and up the sides to create a crust. Spread the seasoned beef mixture evenly over the bottom layer of tortillas. Add a generous layer of shredded mozzarella cheese on top of the beef. Fold the overhanging edges of the tortillas toward the center to seal the pie.
- In a small bowl, mix the melted butter with the chopped fresh parsley. Brush the top of the folded tortillas with the garlic parsley butter. Sprinkle the remaining mozzarella and the cheddar cheese over the top. Place the pan in the preheated oven and bake at 380°F (193°C) for 20 minutes until the cheese is bubbling and the top is golden brown. Let the pie rest for 5 minutes before slicing and serving.
