Tips for success
For an extra-caramelized crust, you can place the bowls under a preheated broiler for the last 1 to 2 minutes of baking. Watch them closely, as they can go from golden to burnt quickly.
The water bath should be filled with cold water to keep the baking gentle; if the water evaporates, add more hot water to maintain the level. Use a kitchen torch if you want to spot-caramelize any pale areas after baking, but be careful not to overdo it.
When cracking the top, use a dessert spoon and tap gently in the center. The crust should break with a satisfying crackle, revealing the creamy pudding beneath. If the pudding seems too loose after chilling, it may need more cornstarch or a longer simmer next time.
For a cleaner look, wipe any drips from the rims before baking. The hazelnuts should be added just before serving to keep them crunchy; if added earlier, they may soften.
Variations
- Orange Blossom Sütlaç: Add 1 tablespoon of orange blossom water along with the vanilla extract. The floral aroma pairs beautifully with the caramelized top. Reduce the vanilla to 1/2 teaspoon to let the orange blossom shine.
- Cinnamon-Spiced Version: Stir in 1/2 teaspoon of ground cinnamon with the sugar, and sprinkle a little extra cinnamon over the top before baking. The warm spice adds a cozy note that complements the creamy rice.
- Pistachio Crunch: Replace the hazelnuts with finely chopped pistachios for a vibrant green contrast. Toast the pistachios lightly to enhance their flavor. The pistachios add a different nutty profile and a beautiful color.
- Coconut Milk Sütlaç: For a dairy-free version, substitute the whole milk with full-fat coconut milk. The pudding will have a subtle coconut flavor and a slightly different texture. Use a plant-based egg substitute if needed, but note that the caramelization may vary.
Storage and make-ahead
- Fridge
- Store in the refrigerator, covered, for up to 3 days. The crust may soften slightly, but the pudding remains creamy and safe to eat.
- Freezer
- Freezing is not recommended, as the texture of the pudding and the caramelized top will suffer.
- Reheat
- This dessert is meant to be served cold; do not reheat, as it will lose its texture and the crust will become soggy.
Store leftover puddings in the refrigerator, covered, for up to 3 days. The caramelized tops may lose some crispness over time, but the pudding will remain creamy and delicious. Keep the bowls covered with plastic wrap or a lid to prevent them from absorbing other odors. If you want to refresh the crust, you can briefly broil them for 1 to 2 minutes, but this may warm the pudding, which is best served cold.
This dessert is perfect for making ahead. Prepare and bake the puddings a day in advance, then chill them overnight. They will hold their texture beautifully.
The hazelnuts should be crushed and stored separately in an airtight container to maintain their crunch. Sprinkle them on just before serving. The puddings can also be made up to 2 days ahead, but the crust may lose some of its crackle after the first day.
Serving ideas
Serve the puddings cold, straight from the refrigerator. The contrast between the crackly, caramelized top and the cold, creamy interior is the highlight of this dessert. Place each bowl on a small plate and offer a spoon for cracking the top.
The crushed hazelnuts add a nutty crunch that complements the sweet, creamy pudding. For a special presentation, you can add a small scoop of vanilla ice cream on the side, but the pudding is rich enough to stand alone.
This dessert is traditionally eaten with a spoon, cracking through the top and scooping up a bit of the crust with each bite. The pudding is not too sweet, so the caramelized top provides a pleasant bitterness that balances the creamy base. It is perfect after a hearty meal, as it is light yet satisfying. For a Turkish-style experience, serve with a cup of strong Turkish coffee or tea.

Caramelized Oven-Baked Rice Pudding with a Crackly Crust

Ingredients
- 1/2 cup Baldo rice (or other short-grain rice)
- 1 cup water
- 4 cups whole milk
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1/2 cup cold whole milk
- 1 large egg yolk
- 1 tsp vanilla extract
- 1/4 cup roasted hazelnuts, finely crushed
Instructions
- In a medium saucepan, combine the rice and 1 cup of water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook, stirring occasionally, until the rice is tender and most of the water is absorbed, about 10 to 12 minutes.
- Pour in the 4 cups of whole milk and add the sugar. Increase the heat to medium and bring to a gentle simmer, stirring frequently. Let it simmer for 10 minutes, allowing the rice to absorb the milk and the mixture to become fragrant.
- In a small bowl, whisk together the cornstarch, cold milk, and egg yolk until smooth. While stirring the simmering pudding constantly, slowly stream in the slurry. Continue whisking for another 2 to 3 minutes, until the pudding thickens and becomes glossy.
- Remove the pot from the heat and stir in the vanilla extract. The pudding should be thick but pourable. Let it cool for 5 minutes, stirring occasionally to prevent a skin from forming.
- Place the terracotta bowls in a deep roasting pan. Ladle the warm pudding evenly into the bowls, filling each almost to the top. The pudding should be about 1/2 inch below the rim to allow for the caramelized skin.
- Pour cold water into the roasting pan to reach about 1 inch up the sides of the bowls. Carefully transfer the pan to the oven and bake at 450°F (230°C) on the top rack for 12 minutes, until the tops are deeply caramelized and blistered.
- Remove the roasting pan from the oven and carefully lift the bowls out. Let them cool on a wire rack for 30 minutes, then transfer to the refrigerator. Chill for at least 4 hours, or until fully cold and set.
- Just before serving, sprinkle the crushed hazelnuts over the top of each pudding. Use a spoon to crack through the caramelized skin and scoop out the creamy pudding underneath.
