Tips for success
To get the crispiest bottom crust, make sure your pizza stone or baking sheet is thoroughly preheated in the oven for at least 15 minutes before baking.
If you don't have a stone, use an inverted heavy-duty baking sheet. Also, brush the flatbread with a light coating of olive oil before adding toppings—this helps create a barrier that prevents sogginess and adds flavor.
When sautéing mushrooms, give them space in the pan and let them sear without moving for a few minutes. This allows them to develop a deep caramelization. Resist the urge to stir constantly.
Adding the garlic and thyme at the end prevents them from burning. If your mushrooms release a lot of liquid, continue cooking until the liquid evaporates and the mushrooms brown again.
Variations
- Add Caramelized Onions: Thinly slice one small onion and sauté it with the mushrooms until golden and sweet. This adds a deep, savory sweetness that pairs beautifully with the truffle and balsamic.
- Spicy Kick: Add a pinch of red pepper flakes to the mushrooms while they cook, or drizzle with a bit of hot honey before serving for a sweet-heat contrast.
- Herb Swap: Replace fresh thyme with fresh rosemary or sage. Chop finely and add with the garlic. These herbs also complement the earthy mushrooms and rich cheese.
- Veggie Boost: Add a handful of baby spinach or arugula to the flatbread during the last 2 minutes of baking. The greens will wilt slightly and add a fresh, peppery note.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven to restore crispness.
- Freezer
- The baked flatbread can be frozen for up to 1 month. Wrap tightly in foil and freeze. Reheat from frozen in a 375°F (190°C) oven for 10-12 minutes.
- Reheat
- Reheat in a 350°F (175°C) oven for 5-7 minutes until hot and crispy.
Leftover flatbread can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, place it on a baking sheet and warm in a 350°F (175°C) oven for 5-7 minutes, until the cheese is melted and the crust is crisp again. Avoid microwaving, as it will make the bread soggy.
You can prepare the sautéed mushrooms up to 2 days ahead and store them in the refrigerator. When ready to assemble, reheat them briefly in a skillet or microwave before topping the flatbread.
The flatbread itself can be assembled (without baking) a few hours ahead, but it's best baked right before serving to maintain crispness.
Serving ideas
Serve this flatbread hot from the oven, cut into wedges or squares, as a main course with a crisp green salad on the side.
It also makes an excellent appetizer for a party—cut into smaller pieces and serve on a platter. The combination of truffle and balsamic is rich, so a light salad with lemon vinaigrette balances it well.
For a more substantial meal, pair it with a bowl of tomato soup or a simple arugula salad dressed with olive oil and lemon. The flatbread is also delicious alongside roasted vegetables or grilled chicken. Leftovers can be enjoyed cold or reheated, but the texture is best when fresh out of the oven.

15-Minute Cheesy Truffle Wild Mushroom Sourdough Flatbread

Ingredients
- 1 large artisan sourdough flatbread
- 200 g mixed wild mushrooms, sliced
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 1/2 tsp sea salt
- 1 cup shredded fontina cheese
- 1/2 cup ricotta cheese
- 1 tsp truffle oil
- 2 tbsp balsamic glaze
Instructions
- Heat a large skillet over high heat. Add the butter and let it foam. Add the sliced wild mushrooms in a single layer. Cook without stirring for 2 minutes to get a deep sear. Add the minced garlic, fresh thyme leaves, and sea salt. Toss and continue cooking for 3 to 4 minutes until the mushrooms are tender and deeply caramelized. Remove from heat.
- Preheat the oven to 425°F (220°C) with a pizza stone or baking sheet inside. Place the sourdough flatbread on a cutting board. Brush the top lightly with olive oil. Sprinkle the shredded fontina cheese evenly over the surface, leaving a small border at the edges.
- Mound the sautéed mushrooms over the fontina cheese, spreading them evenly. Dollop the ricotta cheese in small spoonfuls across the top, tucking some between the mushrooms. The flatbread should look generously topped but not overloaded.
- Carefully transfer the assembled flatbread to the hot pizza stone or baking sheet. Bake for 10 minutes, until the edges are crackling crisp and the cheese is melted and bubbling with golden blisters. The crust should be deeply browned and the mushrooms fragrant.
- Remove the flatbread from the oven. Drizzle the truffle oil and balsamic glaze over the top. Let it rest for 2 minutes. Cut with a rocker knife or large chef's knife, using a gentle sawing motion to get clean slices. Lift a slice and serve warm.
