Tips for success
For the best texture, use a high-powered blender to ensure the figs are completely pureed. If you don't have an immersion blender, a regular blender works fine, but you may need to blend in batches.
Be careful when blending hot liquids: vent the lid and hold a towel over the top to avoid splatters.
The resting time is flexible. If you prefer a firmer pudding, let it rest for an additional 30 minutes.
If you are short on time, you can reduce the resting time to 90 minutes, but the pudding will be softer. For a warm dessert, serve immediately after resting; for a cold one, chill for at least 1 hour.
Variations
- With Pistachios: Replace the toasted walnuts with crushed green pistachios for a vibrant color and a slightly different nutty flavor. The video uses pistachios in the hero shot, so this is a great alternative.
- Spiced Version: Add a pinch of ground cardamom or a small piece of cinnamon stick to the milk while warming. This infuses the pudding with extra warmth and complexity.
- Vegan Option: Use a plant-based milk such as oat or almond milk instead of whole milk. The pudding will be slightly less thick, but still delicious. Ensure the milk is unsweetened to control the sweetness.
- Honeyed Finish: Drizzle each serving with a teaspoon of honey before adding the cinnamon and walnuts. This adds extra sweetness and a floral note that pairs well with the figs.
Storage and make-ahead
- Fridge
- Keep leftover pudding in an airtight container in the refrigerator for up to 3 days. The texture may thicken; stir in a little milk before serving if desired.
- Reheat
- To serve warm, gently heat the pudding in a saucepan over low heat, stirring constantly, until just warmed through. Do not boil.
Store any leftover pudding in an airtight container in the refrigerator for up to 3 days. The texture may become slightly firmer after chilling, which is normal.
To serve, let it sit at room temperature for 10 minutes or enjoy it cold. The pudding can also be gently warmed in a saucepan over low heat, but do not boil.
This pudding is perfect for making ahead. Prepare the recipe through the resting step, then cover and refrigerate without the garnish. It will keep for up to 3 days. Add the cinnamon and walnuts just before serving to maintain their crunch.
Serving ideas

Warm Fig Milk Pudding: İncir Uyutması Made Easy

Ingredients
- 15 dried Turkish figs (kuru incir), stemmed and chopped
- 2 cups warm water, for soaking
- 4 cups whole milk
- 1/2 tsp ground cinnamon, for dusting
- 1/4 cup toasted walnuts, chopped
Instructions
- Place the stemmed and chopped dried Turkish figs in a large bowl. Pour the warm water over them and let them soak for 15 minutes until they are plump and jammy. Drain the figs, reserving a little soaking water if needed. Transfer the figs to a cutting board and chop them finely into small pieces.
- Pour the whole milk into a medium saucepan. Warm over medium heat, stirring occasionally, until it reaches finger-warm temperature, about 45°C (113°F). Do not let it boil. The milk should feel comfortably warm when you dip a clean finger in it.
- Transfer the chopped figs to a blender or use an immersion blender directly in the pot. Pour the warm milk over the figs. Blend on low speed, then increase to high, until the mixture is completely smooth and creamy. This should take about 1 minute. The pudding base will be thin but will thicken as it sets.
- Pour the blended fig and milk mixture evenly into individual serving bowls or glasses. Tap each bowl gently on the counter to release any air bubbles. The mixture will look thin and milky at this point.
- Cover each bowl with a clean kitchen towel. Then wrap the bowls in a thick blanket or additional cloth to keep them warm. Let the pudding 'sleep' undisturbed for 2 hours at room temperature. During this time, the natural enzymes in the figs will thicken the milk into a soft, silky pudding.
- After the pudding has set at room temperature, transfer the bowls to the refrigerator. Chill for at least 30 minutes, or up to 2 hours, until the pudding is cold and slightly firmer. This step is optional but recommended for a more refreshing dessert.
- Just before serving, dust the top of each pudding with ground cinnamon. Sprinkle with toasted walnuts. Scoop a spoonful of the pudding to show its silky, thick texture. Serve immediately.
