Tips for success

For the best texture, choose vegetables that are similar in size so they cook at the same rate. If your zucchini or eggplant is very large, cut it in half lengthwise — the video shows whole vegetables, but a halved one will cook more evenly.

The key is to let the vegetables blister and soften thoroughly before mashing; patience here pays off. Use a heavy skillet that holds heat well, and don't overcrowd the pan.

The pasta water is your best friend — it's salted and starchy, which helps the sauce cling and season the dish. Reserve more than you think you need; you can always add a splash if the sauce seems dry.

When tossing, use tongs and a gentle lifting motion to coat the pasta without breaking the ribbons. If you want a smoother sauce, mash the vegetables a little more, but a bit of texture is nice.

Variations

  • Spicy Arrabbiata Twist: Add 1/2 teaspoon of red pepper flakes along with the olive oil for a gentle heat. The chili infuses the oil as the vegetables cook, giving the sauce a subtle kick that pairs beautifully with the sweet tomatoes.
  • Herb Garden Version: Swap the parsley for a mix of fresh basil, oregano, and thyme. Stir the herbs in just before serving to keep their bright flavor. A few torn basil leaves on top add a fragrant finish.
  • Creamy Cashew Sauce: For a dairy-free version, blend 1/4 cup of raw cashews with 1/2 cup of water until smooth, then stir into the sauce instead of Parmesan. This adds a rich, nutty creaminess without any dairy.
  • Baked Pasta Casserole: After tossing the pasta with the sauce, transfer it to a baking dish, top with extra Parmesan and breadcrumbs, and bake at 375°F (190°C) for 15 minutes until golden and bubbly. This turns the dish into a comforting casserole.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. The sauce will thicken; add a splash of water when reheating.
Freezer
Freeze the vegetable puree (without the pasta) in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat the pasta in a skillet over medium heat with a splash of water or broth, stirring until hot.

Store leftover pasta in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools, so add a splash of water or broth when reheating to bring back the silky texture. Reheat gently on the stovetop or in the microwave, stirring occasionally, until heated through. The pasta may soften slightly, but the flavor will still be delicious.

You can make the vegetable puree up to 2 days ahead and keep it refrigerated. When ready to serve, reheat the puree in a skillet, add a splash of water, and toss with freshly cooked pasta.

The Parmesan and parsley should be added fresh just before serving. This makes the recipe perfect for a quick weeknight dinner — the sauce is the hard part, and it's done in advance.

Serving ideas

Serve the pasta immediately after tossing, while it's still steaming and the cheese is melted. Twirl a generous portion into a shallow bowl, then top with extra Parmesan and a sprinkle of parsley.

A few cracks of black pepper or a drizzle of good olive oil would be lovely, but the video keeps it simple. This dish is substantial enough to stand alone, though a green salad with a light vinaigrette would round out the meal.

For a more indulgent presentation, add a pat of butter when tossing the pasta — it makes the sauce even glossier. If you have leftover sauce, it's wonderful spread on toast or stirred into scrambled eggs. The recipe serves four as a main course, or six as a starter. Pair it with a crisp white wine, like a Pinot Grigio, to complement the fresh vegetable flavors.

Frequently asked questions

Can this pasta be made ahead of time?
Yes, the vegetable puree can be made up to 2 days ahead and refrigerated. Cook the pasta fresh when ready to serve, then reheat the puree in a skillet, add a splash of water, and toss with the pasta. The Parmesan and parsley are best added just before serving.
Why does the sauce turn out watery?
A watery sauce usually means the vegetables weren't cooked long enough to release their excess moisture, or too much pasta water was added. Let the puree bubble and reduce for a few minutes before adding the pasta, and add the pasta water gradually — you may not need all of it.
Can the vegetables be roasted instead of pan-cooked?
Roasting is a great alternative. Toss the whole vegetables with olive oil and roast at 400°F (200°C) for 30 to 40 minutes until very soft. Then peel the skins and mash as directed. This method gives a deeper, slightly caramelized flavor.
What if the tagliatelle is not available?
Any long, ribbon-style pasta works well — fettuccine, pappardelle, or even linguine. Adjust the cooking time according to the package. The key is to cook the pasta al dente so it can finish cooking in the sauce without becoming mushy.
Is this recipe suitable for vegans?
As written, it contains Parmesan, which is dairy. To make it vegan, use a plant-based Parmesan alternative or omit the cheese and add a splash of nutritional yeast for a savory, cheesy flavor. The rest of the ingredients are naturally vegan.

Viral Whole Vegetable Pasta with Golden Tagliatelle

Prep 15 minCook 30 minTotal 45 minServes 4
Golden tagliatelle twirled high on a plate, coated in a glossy vegetable sauce with fresh parsley and melted Parmesan.

Ingredients

  • 2 ripe whole tomatoes
  • 1 whole zucchini
  • 1 whole eggplant
  • 3 tbsp olive oil
  • 10 oz dried tagliatelle
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup starchy pasta water
  • 1/4 cup fresh parsley, chopped
  • kosher salt to taste

Instructions

  1. Heat the olive oil in a large deep non-stick skillet over medium-high heat until shimmering. Place the 2 whole ripe tomatoes, 1 whole zucchini, and 1 whole eggplant into the skillet, nestling them in the hot oil. Cook, turning occasionally, until the skins blister and char in spots, about 5 minutes. Use kitchen tweezers to peel away the blistered tomato skins, letting the flesh fall back into the skillet.
  2. Reduce the heat to medium. Using a stainless steel potato masher, press down on the softened vegetables and mash them until they form a thick, chunky puree. Continue mashing and stirring for 3 to 4 minutes, letting the mixture bubble gently and thicken. Season with a pinch of kosher salt. The sauce should be glossy and deeply colored, with small pieces of vegetable still visible.
  3. Bring a large pot of salted water to a rolling boil. Add the 10 oz dried tagliatelle and cook according to package directions until al dente. Reserve 1/2 cup of the starchy pasta water before draining. Drain the pasta in a colander, but do not rinse — the starch on the surface helps the sauce cling.
  4. Add the drained tagliatelle to the skillet with the vegetable puree. Pour in the reserved pasta water and sprinkle with the 1/2 cup freshly grated Parmesan cheese. Using tongs, toss everything together over medium heat for 1 to 2 minutes, swirling the ribbons through the sauce until every strand is evenly coated and the sauce clings to the pasta. The mixture should be glossy and slightly creamy.
  5. Remove the skillet from the heat. Sprinkle the chopped fresh parsley over the pasta and toss once more to distribute. Twirl a generous portion of the pasta into a tall nest on a serving plate or in a shallow bowl. Finish with extra grated Parmesan and a few more parsley leaves. Serve immediately while hot and steaming.
