Tips for success
For the best cheese pull, use a combination of mozzarella and kaşar or a high-moisture mozzarella.
Shred the cheese yourself rather than buying pre-shredded, as pre-shredded varieties often contain anti-caking agents that prevent smooth melting. Also, make sure the cheese is at room temperature before baking so it melts evenly.
If you want extra flavor, you can add a sprinkle of red pepper flakes or dried oregano to the filling before baking.
For a more indulgent version, add a few slices of cooked sausage or bacon. However, the original recipe keeps it simple to let the cheese and egg shine.
Variations
- Vegetable Medley: Add sautéed mushrooms, spinach, or zucchini along with the bell pepper for extra vegetables. Cook them briefly to remove excess moisture before adding to the boat.
- Spicy Sausage: Cook 2 ounces of ground sausage and sprinkle it over the cheese before adding the egg. This adds a savory, spicy element that pairs well with the melted cheese.
- Herb-Infused: Mix chopped fresh herbs like dill, chives, or mint into the cheese before filling. This brightens the flavor and adds a fresh aroma.
- Smoked Salmon: After baking, top the pide with smoked salmon and a dollop of crème fraîche. This turns it into a more indulgent brunch dish.
Storage and make-ahead
- Fridge
- Store leftover pide in an airtight container in the fridge for up to 2 days.

Reheat in a toaster oven or regular oven at 350°F (175°C) for 5-7 minutes until warmed through and the cheese is melty again. Avoid microwaving, as it will make the bread soggy.
You can assemble the pide boat up to 2 hours ahead, cover it with plastic wrap, and refrigerate. When ready to bake, brush the edges with the egg wash just before putting it in the oven. This is great for brunch parties.
Serving ideas
Serve the pide boat hot out of the oven, sliced in half to reveal the gooey cheese and runny yolk.
It's a complete breakfast on its own, but you can also serve it with a side of fresh fruit or a simple green salad. For a heartier meal, add a bowl of soup or a yogurt-based dip.
Pair it with a cup of Turkish tea or a strong coffee to balance the richness. The crispy edges and molten center make it a fun dish to share, though it's also satisfying as a solo breakfast. Enjoy it while it's warm for the best texture.

Viral Triangular Lavaş Breakfast Pide Boat

Ingredients
- 1 large round lavaş flatbread (about 12 inches)
- 1 1/2 cups shredded melting cheese (such as kaşar, mozzarella, or Monterey Jack)
- 2 tbsp finely diced red bell pepper
- 2 cherry tomatoes, halved
- 1 large egg
- 1 egg yolk
- 1 tbsp unsalted butter, melted
- 1 tsp toasted sesame seeds
- Fresh parsley, for garnish, to taste
Instructions
- Heat the oven to 400°F (200°C). Lay a large round lavaş flatbread on a sheet of parchment paper. Fold three outer edges inward so they meet in the center, forming a triangle. Pin each corner with a wooden toothpick to secure the shape. The center will form a shallow cavity.
- Fill the center cavity with 1 1/2 cups shredded melting cheese. Scatter 2 tablespoons finely diced red bell pepper evenly over the cheese. Place the two cherry tomato halves at the corners, pressing them gently into the cheese.
- Crack one large egg directly into the center of the seasoned cheese. Be careful not to break the yolk.
- In a small bowl, whisk 1 egg yolk with 1 tablespoon melted butter. Brush this mixture over the folded lavaş rims. Sprinkle toasted sesame seeds around the border.
- Bake the pide boat at 400°F (200°C) for 12 minutes, until the lavaş is puffed and golden and the cheese is bubbly. The egg white should be set but the yolk still soft.
- Remove the toothpicks. Garnish with fresh parsley. Slice the pide boat in half with both hands, pulling the halves apart to show the cheese stretch. Serve immediately while hot.
