Tips for success
For the smoothest mousse, blend the ingredients for at least 2 minutes, stopping to scrape down the sides. If the mixture is too thick, add almond milk a tablespoon at a time until it reaches the desired consistency.
The mousse should be thick enough to hold its shape but still creamy. Use a piping bag to fill the molds for a clean, even fill.
When glazing, ensure the mousse is thoroughly chilled; this helps the glaze set instantly and evenly. If the glaze becomes too thick, reheat it gently.
For a more intense chocolate flavor, use a higher percentage dark chocolate. The flaky sea salt is essential to cut through the richness, so don't skip it.
Variations
- Spicy Chocolate: Add 1/4 teaspoon of cayenne pepper or a pinch of chili powder to the blender with the other ingredients for a subtle heat that complements the dark chocolate.
- Mint Chocolate: Add 1/2 teaspoon of peppermint extract to the mousse mixture for a refreshing twist. Garnish with fresh mint leaves instead of sea salt.
- Orange Zest: Add 1 tablespoon of orange zest to the blender. The citrus brightens the chocolate and pairs beautifully with the avocado.
- Nutty Crunch: Fold in 1/4 cup of chopped toasted hazelnuts or almonds before pouring into the molds. The nuts add a crunchy texture and a nutty flavor.
Storage and make-ahead
- Fridge
- Keep the mousse in the refrigerator for up to 3 days. Cover with plastic wrap to prevent it from absorbing odors.
- Freezer
- Freeze the unglazed mousse domes for up to 1 month. Thaw in the refrigerator before glazing and serving.
- Reheat
- This dessert is served cold; do not reheat.
Store the finished mousse domes in an airtight container in the refrigerator for up to 3 days. The glaze may lose some of its shine, but the flavor remains. Keep them chilled until ready to serve.
The mousse can be made and chilled up to 2 days in advance. Prepare the glaze and toppings just before serving for the best appearance. The mousse domes can also be frozen, but the glaze is best added after thawing.
Serving ideas
Serve the mousse domes chilled, straight from the refrigerator. Let them sit at room temperature for 5 minutes to soften slightly, making them easier to cut.
Use a warm spoon to scoop through the mousse for a clean, dramatic presentation. The combination of the glossy glaze, creamy interior, and crunchy topping is a showstopper.
Pair the mousse with a cup of espresso or a glass of dessert wine for an elegant finish. For a more casual serving, break the domes into chunks and serve in bowls with fresh berries.
The mousse is rich, so a small serving is satisfying. Garnish with additional cacao nibs or a dusting of cocoa powder if desired.

Avocado Dark Chocolate Mousse with Mirror Glaze

Ingredients
- 2 ripe Hass avocados
- 1/2 cup 70% dark chocolate, melted
- 1/2 cup unsweetened cocoa powder
- 1/2 cup maple syrup
- 1/4 cup unsweetened almond milk
- 1/2 cup dark cocoa mirror glaze
- flaky sea salt, for topping, to taste
- cacao nibs, for topping, to taste
Instructions
- In a blender, combine the ripe avocados, melted dark chocolate, cocoa powder, maple syrup, and almond milk. Blend on high until the mixture is completely smooth and velvet-like, scraping down the sides as needed. The mousse should be thick, creamy, and lump-free.
- Spoon or pipe the mousse into silicone dome molds, filling each cavity to the top. Tap the molds gently on the counter to release any air bubbles and ensure an even surface.
- Place the filled molds in the refrigerator and chill for at least 1 hour, or until the mousse is firm and holds its shape when touched. The mousse should be set but still creamy and smooth.
- Once fully chilled, carefully unmold the mousse domes onto a wire rack set over a baking sheet. Press gently on the bottom of the molds to release. If they stick, dip the molds in warm water for a few seconds.
- Warm the dark cocoa mirror glaze in a small saucepan over low heat, stirring constantly, until it is fluid and pourable but not hot. The glaze should be smooth and glossy.
- Pour the warm glaze over each chilled mousse dome, covering the top and sides completely. Let the excess drip off. The glaze will set quickly on the cold mousse, creating a shiny, mirror-like finish.
- While the glaze is still slightly tacky, sprinkle the tops of the mousse domes with flaky sea salt and cacao nibs. Press lightly so they adhere.
- Transfer the finished mousse domes to serving plates. Let them sit at room temperature for 5 minutes before serving to soften slightly. Use a warm spoon to cut through for a clean, dramatic scoop.
