Tips for success
To get the best caramelization, make sure the chickpeas are thoroughly dried before adding the oil and spices—excess water will steam the dish instead of browning it. Also, don't overcrowd the dish; use a wide enough baking dish so the chickpeas are in a single layer.
This allows the heat to reach them evenly and creates those desirable crispy edges. If you prefer a spicier kick, add an extra pinch of Urfa isot or a few red pepper flakes at the end.
For a more intense flavor, let the tava rest for 5 minutes after baking before serving. This allows the sauce to settle and thicken slightly, making it easier to scoop up with bread.
If you have leftover flatbread, warm it briefly in the oven or on a dry skillet to revive its softness. The dish is best served fresh, but leftovers can be stored and reheated gently—see storage notes below.
Variations
- Add Spinach: Fold in 2 cups of fresh spinach during the last 5 minutes of the uncovered bake, just until wilted. The spinach adds a fresh, green note that balances the smoky spices.
- Swap the Vegetables: Use zucchini or eggplant instead of green peppers for a different texture. Cut them into similar-size pieces and add them with the other vegetables; they'll soften and caramelize beautifully.
- Make it Spicier: Increase the Urfa isot to 1 1/2 teaspoons or add a pinch of cayenne pepper with the other spices. For extra heat, serve with a side of pickled peppers.
- Add Meat (Chicken or Lamb): For a heartier version, add 1 pound of boneless chicken thighs or lamb cubes, cut into bite-size pieces, and toss with the chickpeas before baking. Adjust the baking time to ensure the meat is cooked through and reaches a safe temperature.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water or olive oil if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and reheat in a saucepan or oven until hot.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, or in the microwave in 30-second bursts.
Store any leftover tava in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and it might even taste better the next day. Reheat gently in a saucepan over low heat or in the microwave, adding a splash of water or olive oil if it seems dry. The chickpeas will soften further, but the dish remains delicious.
You can assemble the entire dish (without the olive oil and parchment) up to a day ahead and keep it covered in the refrigerator. When ready to bake, drizzle with olive oil, cover with wet parchment, and bake as directed, adding a few extra minutes to the covered baking time since the dish is cold. This makes it a great option for busy weeknights or entertaining.
Serving ideas
Serve the tava straight from the baking dish, family-style, with a stack of warm Turkish flatbread on the side. The bread is meant for pinching up the chickpeas and vegetables, so tear off a piece, fold it around a spoonful, and enjoy.
You can also offer a simple green salad with lemon and herbs to cut through the richness, or a dollop of thick yogurt if you like a cool contrast (though the video doesn't include yogurt).
This dish is substantial enough to stand alone as a main course, but it also pairs beautifully with grilled meats or roasted vegetables. For a vegetarian spread, serve it alongside hummus and a grain salad.
The smoky, savory flavors are versatile enough to fit into many menus, from a casual weeknight dinner to a festive gathering. Just make sure there's plenty of bread to mop up the sauce.

Urfa Baked Chickpea Tava with Warm Flatbread

Ingredients
- 3 cups cooked chickpeas
- 2 medium onions, sliced
- 3 medium ripe tomatoes, chopped
- 2 medium green bell peppers, chopped
- 4 cloves garlic, sliced
- 1 tbsp pepper paste (biber salçası)
- 1 tsp Urfa isot chili flakes
- 1 tsp ground cumin
- 1 tsp paprika (sweet or smoked)
- Salt, to taste
- Black pepper, to taste
- 1/2 cup extra virgin olive oil
- Warm Turkish flatbread, for serving
Instructions
- Preheat the oven to 400°F (200°C). Spread the cooked chickpeas evenly in a round glass baking dish. Scatter the sliced onions, chopped tomatoes, and green bell peppers over the chickpeas. Add the sliced garlic cloves, pepper paste, Urfa isot chili flakes, cumin, paprika, salt, and black pepper. Use your hands or a spoon to toss everything together until the chickpeas are well coated with the spices and the vegetables are distributed throughout.
- Drizzle the extra virgin olive oil evenly over the chickpea mixture. Using two spoons or your hands, toss the mixture thoroughly, making sure every chickpea glistens with oil and the spices are well incorporated. The oil helps the spices bloom and creates a rich, silky sauce as the dish bakes.
- Tear a sheet of parchment paper large enough to cover the dish. Crumple it under running water, then squeeze out the excess water. Unfold the damp parchment and press it directly onto the surface of the chickpea mixture, tucking the edges over the rim. Place the dish in the preheated oven and bake for 30 minutes, until the vegetables are soft and the chickpeas are tender.
- Carefully remove the dish from the oven and lift off the parchment. Stir the chickpea mixture well, scraping up any browned bits from the bottom. Return the dish to the oven, uncovered, and bake for 10 more minutes, until the top is caramelized and the edges are slightly crispy.
- Remove the tava from the oven and let it rest for a couple of minutes. Serve warm, with torn pieces of Turkish flatbread for pinching up the chickpeas, roasted garlic, and peppers. The bread soaks up the savory, smoky sauce perfectly.
