Tips for success

For the most flavorful banana bread, use bananas that are heavily speckled with brown spots or even completely black. The riper the bananas, the more natural sweetness and intense banana flavor they'll impart.

If you only have yellow bananas, you can quickly ripen them by placing them in a paper bag with an apple or by roasting them in their skins in a 300°F (150°C) oven for 15-20 minutes until they soften and darken.

To ensure even baking, always place the loaf pan on the center rack of the oven and avoid opening the oven door during the first 40 minutes of baking. If the top is browning too quickly, tent it loosely with aluminum foil.

For perfectly clean slices, chill the cooled loaf in the refrigerator for 30 minutes before slicing with a serrated knife. This makes it easier to cut without crumbling, and the chocolate chips will be more set.

Variations

  • Nutty Banana Bread: Fold in 1/2 cup of chopped walnuts or pecans along with the chocolate chips for added crunch and a toasty flavor. Toast the nuts first in a dry skillet over medium heat for 3-5 minutes until fragrant, then let them cool before folding into the batter.
  • Spiced Banana Bread: Add 1 teaspoon of ground cinnamon and 1/4 teaspoon of ground nutmeg to the dry ingredients. This adds a warm, aromatic spice that pairs beautifully with the bananas and chocolate. You can also add a pinch of ground cloves for extra depth.
  • Double Chocolate Banana Bread: Replace 1/4 cup of the all-purpose flour with 1/4 cup of unsweetened cocoa powder. This creates a rich chocolate base that complements the bananas and chocolate chips. You may need to add 1-2 tablespoons of milk to keep the batter moist, as cocoa powder absorbs liquid.
  • Muffin Version: Instead of a loaf, divide the batter among a 12-cup muffin tin lined with paper liners. Bake at 350°F (175°C) for 20-25 minutes, or until a toothpick inserted into the center comes out clean. This is perfect for grab-and-go breakfasts or snacks.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature or toast before serving for best texture.
Freezer
Freeze the fully cooled loaf, wrapped tightly in plastic wrap and foil, for up to 3 months. Thaw overnight in the refrigerator before slicing.
Reheat
Reheat individual slices in a toaster or in a 350°F (175°C) oven for 5-7 minutes until warm and the chocolate is melty again.

Store the banana bread in an airtight container or wrapped in plastic wrap at room temperature for up to 4 days. The bread stays moist thanks to the sour cream and brown sugar. If you prefer a firmer texture, you can refrigerate it, but be sure to let it come to room temperature before serving to soften the crumb and melt the chocolate slightly. For longer storage, see the freezing instructions.

This banana bread can be made a day ahead and stored tightly wrapped at room temperature. The flavors actually develop and deepen overnight, making it even more delicious the next day.

You can also freeze the baked loaf for up to 3 months; wrap it tightly in plastic wrap and then foil, or place in a freezer-safe bag. Thaw overnight in the refrigerator or at room temperature for a few hours before serving.

Serving ideas

Serve the banana bread warm or at room temperature. For an extra indulgent treat, toast a slice and spread with butter or a dollop of whipped cream. The warmth will re-melt the chocolate chips, creating a gooey, luscious texture. Pair it with a cup of coffee or tea for a comforting afternoon snack, or serve it as a dessert with a scoop of vanilla ice cream.

This bread is also wonderful for breakfast or brunch. Slice it thick and serve alongside fresh fruit and yogurt for a satisfying morning meal. If you're hosting, arrange slices on a platter and let guests help themselves.

The loaf is sturdy enough to be transported, making it a great contribution to a potluck or bake sale. However you serve it, this banana bread is sure to be a crowd-pleaser.

Frequently asked questions

Can this banana bread be made gluten-free?
Yes, you can substitute a 1:1 gluten-free all-purpose flour blend for the regular flour. Make sure the blend contains xanthan gum or add 1/2 teaspoon if not. The texture may be slightly more crumbly, but it will still be moist and delicious. Also check that your chocolate chips are gluten-free, as some brands may contain wheat.
Why is the center of the banana bread still raw?
If the center is raw, the loaf may not have been baked long enough, or the oven temperature could be too high, causing the outside to brown before the inside cooks through. Always test with a skewer inserted into the center; it should come out with moist crumbs, not wet batter. An instant-read thermometer should read 200°F (93°C) in the center. If the top is browning too fast, tent with foil.
Can this recipe be made without eggs?
To make this banana bread egg-free, you can replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes) or 1/4 cup of unsweetened applesauce. The texture may be slightly denser, but it will still be moist. Note that the egg contributes to structure, so the loaf may not rise as high.
How do you know when the bananas are ripe enough?
Bananas are ripe enough when they are heavily speckled with brown spots or even completely black. The skins should feel soft to the touch and the bananas should be very fragrant. The riper the bananas, the sweeter and more intense the banana flavor in the bread. If your bananas are still yellow, you can speed up ripening by placing them in a paper bag with an apple overnight.
Can this banana bread be frozen for later?
Absolutely. Wrap the fully cooled loaf tightly in plastic wrap and then in aluminum foil, or place it in a freezer-safe bag. It can be frozen for up to 3 months. To thaw, leave it in the refrigerator overnight or at room temperature for a few hours. You can also freeze individual slices for quick grab-and-go treats.

Sliced ultra-moist chocolate chip banana bread showing tender crumb and melted chocolate

Ingredients

  • 3 large ripe spotted bananas, mashed (about 330g)
  • 8 tbsp unsalted butter, melted (113g)
  • 1 large egg
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 1 tbsp vanilla bean paste
  • 1/3 cup sour cream (80g)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 cup semi-sweet chocolate chips
  • 1 banana, halved lengthwise, for topping
  • Extra chocolate chips, for topping, to taste

Instructions

  1. Heat the oven to 350°F (175°C). Line a 9-inch loaf pan with parchment paper, leaving overhang on two sides. In a large bowl, mash the 3 ripe bananas with a fork until mostly smooth. Add the melted butter, egg, brown sugar, white sugar, and vanilla bean paste. Whisk until well combined and the sugar is mostly dissolved.
  2. Stir in the sour cream until fully incorporated. The batter will look smooth and slightly tangy.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Add the dry ingredients to the wet mixture and fold gently with a rubber spatula until just incorporated. Do not overmix; a few streaks of flour are okay.
  4. Add the semi-sweet chocolate chips to the batter and fold with the spatula until evenly distributed. The batter will be thick and studded with chocolate.
  5. Pour the batter into the prepared loaf pan and smooth the top with the spatula. Press the halved banana lengthwise into the top of the batter, cut side up. Sprinkle with extra chocolate chips if using.
  6. Bake the loaf in the preheated oven for 55 minutes, or until the top is deeply caramelized and a skewer inserted into the center comes out with moist crumbs (no wet batter). The internal temperature should read 200°F (93°C) in the center for a fully baked loaf.
  7. Remove the loaf from the oven and let it cool in the pan on a wire rack for 10 minutes. Then lift the bread out using the parchment overhang and transfer to the rack to cool completely before slicing.
