Before you start
Before starting, heat the oven to 350°F (175°C) and position a rack in the center. Line a 9x5-inch loaf pan with parchment paper, leaving a couple of inches of overhang on the long sides to use as handles later. Gather all the ingredients and measure them out.
Mash the bananas in a large mixing bowl with a fork until mostly smooth, with a few small lumps remaining. Melt the butter and let it cool slightly so it doesn't cook the egg when combined. Have the egg, sugars, vanilla, sour cream, flour, baking soda, salt, and chocolate chips ready to go. This prep ensures the batter comes together quickly and evenly.

Instructions
Mix the Wet Ingredients
- Mash and Mix Wet IngredientsHeat the oven to 350°F (175°C). Line a 9-inch loaf pan with parchment paper, leaving overhang on two sides. In a large bowl, mash the 3 ripe bananas with a fork until mostly smooth. Add the melted butter, egg, brown sugar, white sugar, and vanilla bean paste. Whisk until well combined and the sugar is mostly dissolved.Look for The mixture should be glossy and well blended, with no streaks of egg or butter.Tip Use bananas with plenty of brown spots for the most flavor and sweetness.
- Add Sour CreamStir in the sour cream until fully incorporated. The batter will look smooth and slightly tangy.Look for The mixture should be uniform and creamy.Tip Sour cream adds moisture and tenderness to the crumb.
After mashing the bananas and whisking in the butter, egg, sugars, and vanilla, the mixture should be glossy, smooth, and well combined. The sugar should be mostly dissolved, and there should be no visible streaks of egg or butter. The sour cream will make the mixture creamy and slightly tangy. This wet base is the foundation for the bread's moist texture, so take a moment to ensure it's uniform before moving on.
Combine the Batter
- Combine Dry IngredientsIn a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Add the dry ingredients to the wet mixture and fold gently with a rubber spatula until just incorporated. Do not overmix; a few streaks of flour are okay.Look for The batter should be thick and slightly lumpy, with no dry pockets of flour.Tip Overmixing develops gluten, which can make the bread tough.
- Fold in Chocolate ChipsAdd the semi-sweet chocolate chips to the batter and fold with the spatula until evenly distributed. The batter will be thick and studded with chocolate.Look for Chocolate chips should be evenly dispersed throughout the batter.Tip Reserve a few chips to sprinkle on top if desired.
- Fill the Loaf PanPour the batter into the prepared loaf pan and smooth the top with the spatula. Press the halved banana lengthwise into the top of the batter, cut side up. Sprinkle with extra chocolate chips if using.Look for The batter should reach about 3/4 up the sides of the pan.Tip The banana on top will caramelize and add extra banana flavor.
Once the dry ingredients are folded in, the batter should be thick, slightly lumpy, and just combined, with no dry pockets of flour. The chocolate chips should be evenly distributed throughout. The batter will be stiff enough to hold its shape when poured into the pan. Pressing the halved banana on top creates a beautiful pattern, and the extra chocolate chips will melt into puddles on the surface. At this point, the batter should look glossy and inviting.
Bake and Cool
- Bake Until Golden and SetBake the loaf in the preheated oven for 55 minutes, or until the top is deeply caramelized and a skewer inserted into the center comes out with moist crumbs (no wet batter). The internal temperature should read 200°F (93°C) in the center for a fully baked loaf.Look for The bread should be tall, golden brown, and fragrant. The skewer test should show moist crumbs, not raw batter.Safe temperature 160°F (71°C) internal temperature (egg dishes)Tip If the top browns too quickly, tent loosely with foil after 40 minutes.
- Cool in the PanRemove the loaf from the oven and let it cool in the pan on a wire rack for 10 minutes. Then lift the bread out using the parchment overhang and transfer to the rack to cool completely before slicing.Look for The bread should pull away from the sides slightly and feel firm to the touch.Tip Cooling in the pan allows the crumb to set, making slicing easier.
During baking, the loaf will rise and turn a deep golden brown. The kitchen will fill with the aroma of bananas and chocolate. When done, the top will be caramelized and slightly cracked, and a skewer will come out with moist crumbs.
After cooling in the pan for 10 minutes, the bread should lift out easily using the parchment handles. It should feel firm but spring back when pressed. Let it cool completely on a wire rack before slicing to reveal the tender, chocolate-studded crumb.
Common mistakes
One common mistake is overmixing the batter after adding the flour, which develops gluten and makes the bread dense and tough. Mix until no dry streaks remain, and don't worry about a few lumps. Another issue is using bananas that aren't ripe enough; they won't provide enough sweetness or moisture.
If the loaf is underbaked, the center will be gummy and raw—always test with a skewer and check the temperature. Overbaking can dry out the bread, so start checking at the 50-minute mark. Finally, slicing the bread while it's still hot will cause it to crumble; let it cool completely for clean slices.
How to tell it’s done
The banana bread is done when the top is deeply caramelized, golden brown, and a skewer inserted into the center comes out with only moist crumbs clinging to it—no wet batter. The internal temperature in the center should read 200°F (93°C) on an instant-read thermometer. The bread will also pull away from the sides of the pan slightly and feel firm when gently pressed on top.
If the top is browning too quickly before the center is set, tent the loaf loosely with foil for the last 15 minutes of baking. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely, as this helps the crumb set and makes slicing cleaner.
