Tips for success
For the most accurate measurement of flour, spoon it into the measuring cup and level off with a knife — don’t scoop directly from the bag, which compacts the flour and can make the bread dry. Similarly, pack brown sugar firmly into the cup.
When mashing the bananas, leave a few small lumps for texture; over-mashing can make the batter too thin. If you want extra chocolate flavor, use a combination of chocolate chips and chopped chocolate chunks. The bread is best served warm, but if you prefer cleaner slices, let it cool completely and use a serrated knife.
To get a perfectly domed top, make sure your baking soda is fresh — it loses potency over time. If your loaf sinks in the middle, it could be due to opening the oven too early or under-baking. Always test with a skewer at the minimum baking time.
For a more intense banana flavor, you can add a teaspoon of banana extract, but it’s not necessary. If you’re using a glass loaf pan, reduce the oven temperature by 25°F (15°C) and increase the baking time slightly, as glass conducts heat differently than metal.
Variations
- Nutty Banana Bread: Fold in 1/2 cup of chopped walnuts or pecans along with the chocolate chips. Toast the nuts first for extra flavor. Reduce the chocolate chips to 1/2 cup if you prefer a less sweet loaf.
- Gluten-Free Option: Substitute the all-purpose flour with a 1:1 gluten-free baking flour blend. Ensure the blend contains xanthan gum for structure. The texture will be slightly more crumbly but still moist and delicious.
- Muffin Version: Divide the batter among a 12-cup muffin tin lined with paper liners. Bake at 350°F (175°C) for 18-22 minutes, or until a toothpick comes out clean. Skip the banana half topping, or place a small piece on each muffin.
- Extra Chocolate Swirl: Before baking, melt 1/4 cup of chocolate chips and drizzle over the top of the batter. Use a knife to gently swirl it into the top for a marbled effect. This adds a rich chocolate ribbon throughout the loaf.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature or warm briefly before serving to soften.
- Freezer
- Wrap the cooled loaf tightly in plastic wrap and then foil. Freeze for up to 3 months. Thaw overnight in the refrigerator before serving.
- Reheat
- To reheat, microwave a slice for 10-15 seconds, or warm in a 350°F (175°C) oven for 5-10 minutes. This revives the moist texture and melts the chocolate.
Store the banana bread in an airtight container at room temperature for up to 3 days. The moisture from the bananas and sour cream keeps it tender, but make sure the container is sealed to prevent it from drying out. If you slice the bread, place a piece of parchment paper between slices to prevent them from sticking together. For longer storage, you can refrigerate the bread for up to a week, but bring it to room temperature before serving to restore its soft texture.
This banana bread can be made a day or two ahead and stored in an airtight container. It actually tastes even better the next day as the flavors meld together. You can also prepare the batter the night before, cover the pan, and refrigerate it.
Bake it directly from the fridge, adding 10-15 minutes to the baking time. Alternatively, you can freeze the unbaked batter in the loaf pan (without the banana topping) for up to 3 months. Thaw overnight in the refrigerator, add the banana and chocolate chips, and bake as directed.
Serving ideas
Serve this banana bread warm or at room temperature. For an extra indulgent treat, toast a slice and spread it with a little butter or nut butter. The warm chocolate chips become gooey and irresistible. It’s perfect for breakfast, brunch, or an afternoon snack with a cup of coffee or tea.
You can also serve it as a dessert with a scoop of vanilla ice cream or a drizzle of caramel sauce. The bread is sweet enough on its own, but a dollop of whipped cream or a dusting of powdered sugar adds a nice touch.
When serving, cut thick slices with a serrated knife to avoid squishing the tender crumb. For the best presentation, show the melted chocolate pools in each slice. If you’re serving a crowd, you can cut the loaf into smaller pieces and arrange them on a platter. The banana halves on top make a beautiful garnish, but they may be soft — handle them gently. This bread is best enjoyed fresh, but if you have leftovers, they make excellent French toast or bread pudding.

Ultra-Moist Chocolate Chip Banana Bread

Ingredients
- 3 ripe bananas, mashed (about 330g)
- 1/2 cup unsalted butter, melted (113g)
- 1 large egg
- 1/2 cup brown sugar, packed
- 1/3 cup granulated sugar
- 1 tbsp vanilla bean paste
- 1/3 cup sour cream (80g)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda
- 1 pinch salt
- 1 cup semi-sweet chocolate chips
- 1 banana, halved lengthwise
- 2 tbsp semi-sweet chocolate chips, for topping
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, leaving overhang on the long sides. In a large bowl, mash the ripe bananas with a fork until mostly smooth. Add the melted butter, egg, brown sugar, granulated sugar, and vanilla bean paste. Stir until well combined.
- Stir in the sour cream until fully incorporated. Sprinkle the flour, baking soda, and salt over the wet mixture. Fold gently with a rubber spatula until just combined — a few streaks of flour are fine. Do not overmix or the bread will be tough.
- Fold in the 1 cup of chocolate chips until evenly distributed throughout the batter. The chips should be well dispersed but not crushed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Press the halved banana lengthwise into the top of the batter, cut side up. Sprinkle the extra chocolate chips over the top, gently pressing them in.
- Bake at 350°F (175°C) for 55 minutes, or until the top is deeply golden brown and caramelized, and a skewer inserted into the center comes out with a few moist crumbs (no wet batter). If the top browns too quickly, tent loosely with foil for the last 15 minutes.
- Let the bread cool in the pan on a wire rack for 15 minutes. Then lift it out using the parchment overhang and transfer to a cutting board. Slice while still warm to see the melted chocolate pools, or let cool completely for cleaner slices.
